So I joined a couple Instant Pot recipe groups like a proper white, middle-aged house mom and one of them has a NO ADVERTISING/NO AFFILIATE LINKS rule.
But I guess that doesn’t apply to the group owner because they sticky their own affiliate linked ads.
Which is sneaky because they’re not disclosing that they are affiliate links, I only know because I’m in the same program. And also kind of jerkish-smart because Amazon will honor whomever’s affiliate cookie was accepted most recently before the purchase was made.
By disallowing affiliate links, or any advertisement at all, the group owner guarantees they get the final click on an item they’re pushing (all of which are relevant to the Instant Pot).

Noodle prices heat up as wheat supply goes to pot (Guardian) Noodles are a staple for millions of people around the world, but especially in Asia. According to the World Instant Noodles Association, there are 290m servings of instant noodles eaten every day, which means 106.4bn servings a year. China is the number one consumer with 44bn servings in 2021, followed in second place by Indonesia on 13bn serves. But the world’s hundreds of millions of noodle eaters face a rise in the price of their favourite meal as producers look set to heap surging wheat, energy and transport costs on to consumers. Factors ranging from the war in Ukraine to droughts and floods in the past year have combined to cause a price squeeze that could see the cost of wheat rise 30% this year in China, while also adding to already rising prices in South Korea and Japan. Andrew Whitelaw, an analyst at Thomas Elders Markets in Australia, said Russia’s invasion of Ukraine took 30% of global wheat exports off the market at a stroke. “There’s your supply shortage,” he said. “A big chunk of the cost of noodles is clearly wheat, so it causes the price of noodles to rise. In bread production the cost of wheat accounts for about 10-15% of the price, but in noodles it’s potentially higher.”
‘Revenge travel’ is surging (NPR) If you feel like everyone is on vacation without you right now, you might be right. The data shows travel is surging—despite high plane-ticket prices—as many countries loosen their COVID-19 restrictions and reopen borders. Analysts say vacation-starved Americans are making up for lost time during the pandemic, and there’s even a new term for it: revenge travel. Industry professionals broadly describe revenge travel as a huge increase in people wanting to make up for time and experiences lost to the pandemic. Eric Hrubant, the owner of CIRE Travel, a luxury travel agency in New York City, said that while the idea of travel as revenge didn’t necessarily resonate with him, he saw it more as an attitude within the customers. Hrubant, who has been in business for nine years, said the past few months have been the busiest he has ever seen, given the mix of limited staff, limited contacts abroad and plenty of new customers.

For two months now, Costa Rica has been reeling from unprecedented ransomware attacks disrupting everyday life in the Central American nation. It’s a situation raising questions about the United States’ role in protecting friendly nations from cyberattacks at a time when Russian-based criminal gangs are targeting less developed countries in ways that could have major global repercussions. “Today it’s Costa Rica. Tomorrow it could be the Panama Canal,” said Belisario Contreras, former manager of the cybersecurity program at the Organization of American States, referring to a major Central American shipping lane that carries a large amount of U.S. import and export traffic.
Europe heat wave makes Tube sweaty in London, kills baby birds in Spain (Washington Post) London was not built for extreme heat. The London Underground, though a marvel of the Victorian era, is only partially air-conditioned. And the soupy, sweaty “Tube” put even the stiffest upper lips to the test on Friday, Britain’s hottest day of the year. The thermometer at London’s Heathrow airport topped 90 degrees Fahrenheit (32 Celsius). “Worcester will be hotter than Hawaii,” one local headline read. Valencia, Spain, hit 102 degrees (39 Celsius) on Friday, a June record high, while the hottest city in France was Villevieille, in the south, at 107 degrees (41.6 Celsius). Market meltdown lays bare Europe’s divisions (Reuters) A markets sell-off has brought back memories of the euro zone debt crisis more than a decade ago, highlighting divisions that have plagued the currency bloc’s efforts to forge a closer bond. While the years since the debt crisis have seen the 19 countries in Europe’s euro area centralise and toughen bank controls, many planned economic reforms in Italy and elsewhere were watered down as vast money printing buoyed the economy. Spurred by fears higher borrowing costs will choke economic growth, the markets rout has exposed cracks in the uneasy alliance which—unlike the United States—is held together largely by the central bank rather than a government with power to tax and spend. French Finance Minister Bruno Le Maire cautioned against a fragmentation of the bloc, the type of public warning once common but that largely disappeared since vast money printing eased the debt crisis.
Ukraine war pushes global displaced to record high, U.N. says (Washington Post) Russia’s war in Ukraine has pushed global displacement figures to record levels, the U.N. refugee agency said Thursday, calling the statistics a “tragic milestone.” Over the past decade, levels of displacement have increased every year, the United Nations noted in its global trends report—with figures currently at the highest level since record keeping began. At the end of 2021, 89.3 million people were displaced, the agency said, citing war, disasters, violence, persecution and human rights abuses as some of the factors. As of today, more than 100 million people have been forced to flee their homes—more than 1 percent of humanity. The invasion of Ukraine triggered the fastest forced-displacement crisis since World War II—which, in conjunction with other emergency situations in Afghanistan, Africa and elsewhere, “pushed the figure over the dramatic milestone,” the agency said. More than 5 million Ukrainian refugees have been recorded across Europe since Russia’s invasion.
Thousands of civilians stuck in Sievierodonetsk (NYT) All of the bridges connecting the twin Ukrainian cities of Lysychansk and Sievierodonetsk are destroyed and street-by-street fighting is raging, leaving thousands of civilians largely trapped inside one of the deadliest battles of the war so far. Russia has targeted the area since its full-scale invasion began in February, but as it has narrowed its offensive to the resource-rich eastern Donbas region, Russian commanders have steadily redirected more forces to the small pocket of land in and around Sievierodonetsk. There are an estimated 10,000 people still in the city of Sievierodonetsk, with several hundred believed to be holed up in bunkers beneath a chemical plant that is under near constant bombardment. The Ukrainian government said this week that any large-scale evacuation of the city is now impossible. Russia has promised to create a humanitarian corridor, but previous claims have failed to materialize and Russian forces have directed their fire in locations where civilians were gathering to flee. The people in the ruined city are now largely on their own. Those who have made it out recently describe harrowing scenes. Serhiy Haidai, the head of the Luhansk military administration, said that the shelling was now so intense that “people can no longer stand it in the shelters—their psychological state is on the edge.”
As European Leaders Visit Kyiv, Putin Cuts Their Gas Supply (NYT) As the leaders of Europe’s three biggest economies appeared in Kyiv on Thursday to send a message of support to Ukraine, President Vladimir V. Putin of Russia had his own message for them: Don’t forget, your industries are at my mercy. With inflation already near a 40-year high, gas prices surged further as Russia cut flows to Europe’s most important natural gas pipeline for the second day in a row on Thursday. Germany, Italy, Austria and the Czech Republic all reported shortfalls. Gazprom, Russia’s state-controlled gas giant, said repairs were to blame for the squeeze. But European officials openly accused Mr. Putin of using energy supplies as a weapon. Gas exports have given Moscow a potent diplomatic tool on the continent, where large swathes of industry depend on Russian energy. As Chancellor Olaf Scholz of Germany, President Emmanuel Macron of France and Prime Minister Mario Draghi of Italy met with President Volodymyr Zelensky in Kyiv, Mr. Putin reminded them he has his finger on the gas tab—and the fate of European economies in his hand. Protests spread in India over new military recruitment system (Reuters) Angry crowds in India set an office of the country’s ruling party on fire, attacked railway infrastructure and blocked roads on Thursday, in widening protests against a new military recruitment system, police officials said. Prime Minister Narendra Modi’s government this week announced an overhaul of recruitment for India’s 1.38 million-strong armed forces, looking to bring down the average age of personnel and reduce pension expenditure. But potential recruits, military veterans, opposition leaders and even some members of Modi’s ruling Bharatiya Janata Party (BJP) have raised reservations over the revamped process.
Myanmar junta vows to execute pro-democracy activists (Washington Post) Myanmar’s military junta has doubled down on threats to carry out its first executions since seizing power, defying repeated appeals from the international community and outraging pro-democracy activists who have spent more than a year under siege. Myanmar’s military has not used the death penalty for more than 30 years, but amid a violent—and so far unsuccessful—campaign to stamp out resistance, officials are turning to new forms of intimidation, experts say. At least 14,000 people have been arrested—and at least 114 of them sentenced to death—in the past year, according to the Assistance Association for Political Prisoners (AAPP), a Myanmar nonprofit that tracks and attempts to verify the status of those detained by the junta. In early June, military officials vowed to follow through on the executions of four individuals on death row, including two high-profile activists. China launches high-tech aircraft carrier in naval milestone (AP) Beijing launched a new-generation aircraft carrier Friday, the first such ship to be both designed and built in China, in a milestone as it seeks to extend the range and power of its navy. The Type 003 carrier christened Fujian left its drydock at a shipyard outside Shanghai in the morning and tied up at a nearby pier, state media reports said. Equipped with the latest weaponry and aircraft-launch technology, the Type 003 ship’s capabilities are thought to rival those of Western carriers, as Beijing seeks to turn its navy, already the world’s largest, into a multi-carrier force. China’s People’s Liberation Army Navy, or PLAN, has been modernizing for more than a decade to become more of a “blue water” force—one capable of operating globally rather than being restricted to remaining closer to the Chinese mainland.

Blackened Shrimp with Cheesy Grits
I originally found this delicious recipe on Kelle Hampton’s blog, and I’ve made it multiple times over the past few years.
  I’ve linked to it a few times in my menu plan, but since I don’t make it quite exactly like the original I always feel the need to add some parenthetical comments.
Also, the order of the instructions and ingredients always feels a little weird to me in the original; for some reason, the ingredients are not in the same order as they are called for in the directions.
So, I wanted to rewrite the recipe for myself, and I figured I could just put the recipe into a post so that I can link to it in future menu plans without having to do parentheticals.
Oh, and another reason I wanted to retype it: I really think the salt amounts in the original recipe are a typo.
I like salty food, but two tablespoons of kosher salt is a lot for a pot of grits that’s going to have cheese added as well.
So.
I don’t have step by step photos or anything, but I do have a printable recipe for you, just the way I make it.
This is kind of a long recipe, I know!
You might feel a little overwhelmed when you scroll through it. There are quite a few ingredients, and a fair number of steps.
But this is largely because you’re sort of making two dishes at once: the grits, and then the shrimp/sauce.
Once you make the dish a few times, it will feel less complicated.
What type of shrimp should you use?
This recipe calls for raw shrimp, so I would not subtitute pre-cooked. The uncooked ones really taste better.
I buy frozen, uncooked shrimp in whatever size is on sale at the moment, usually 31/35 or 36/40.
Usually raw shrimp has the shell on, but if you buy it from Costco, only the tail shell is on, and that makes the peeling job quicker.
So, if you want your life to be easier, get the shrimp from Costco!
Can you make shrimp and grits without dairy?
Yes, if you tweak a few things.
Sonia is sensitive to cheese and milk, but not to butter or cream.
So, nothing in the sauce is problematic for her.
If you can’t do heavy cream, I’d just sub more chicken broth, and you’ll have a clear sauce vs. a creamy sauce. Or you could try a dairy-free milk in place of the cream.
The grits are problematic for her due to the milk and cheese, so I either:
make grits with dairy-free milk and then scoop her serving out before adding the cheese
make a separate, small pan of grits for her with water, butter, salt, and pepper
This is a time when having a broken stovetop with only two burners is extremely problematic. Ha.
Those of you with no allergies will be able to make this dish with only two pans, though (a saucepan for the grits, and one skillet for the bacon, then the shrimp, then the sauce.)
Can you make this a little lighter?
This is not a low-calorie dish by any stretch of the imagination. (!)
Most of the people I’m feeding are not in a position of needing to limit calories, so I make the recipe as-is and I don’t worry about the calories.
If you are watching calories, though, you could leave out the cheese, sub something lighter for the heavy cream, and use less bacon.
How to reheat leftover grits
Grits get awfully firm after a night in the fridge, so I always stir in some milk (or water for Sonia) and then reheat them in the microwave or on the stove top. The additional liquid does wonders to help the grits return to their original creamy state. 
The amount of liquid you need will vary depending on how many leftover grits you have. Start with a little liquid, and keep adding and stirring until the texture is the way you like it.

Blackened Shrimp with Cheesy Grits
Yield: 4 servings
Prep Time: 20 minutes
Cook Time: 45 minutes
Total Time: 1 hour 5 minutes
Creamy, cheesy grits are topped with shrimp and mushrooms in a tomato/cream sauce.

Ingredients
Grits
4 cups of water
2 teaspoons kosher or sea salt
1 cup of quick cooking grits (Quaker brand, not instant)
1 1/4 cups milk
2 tablespoons butter
3/4 cup grated Pepper Jack cheese
3/4 cup grated sharp Cheddar cheese
Freshly ground black pepper to taste
Shrimp and Sauce
1 pound shrimp, peeled and deveined
1/4 teaspoon each paprika, cayenne pepper, black pepper, and sea salt
6 slices of bacon, scissor cut into small pieces
1 cup baby bell or white mushrooms, sliced
1/2 cup green onions
3 cloves garlic, minced
3/4 cups chicken broth
1 cup heavy whipping cream
2 tablespoons tomato paste
1 fresh jalapeño, sliced thin (optional, for garnish)
additional green onions (optional, for garnish)
Instructions
For the grits, in a heavy saucepan, heat 4 cups of water to boiling. Add salt, and then, stirring constantly, gradually add the grits. Reduce the heat to low and let grits simmer about 5 minutes, until thickened.
Stir in milk and butter. Bring to simmer, then cover pot and let cook over low heat for 35-40 minutes, stirring occasionally.
Once grits are done, stir in cheese and ground pepper.
While grits are simmering, pat shrimp dry with paper towel and season with cayenne, paprika, salt, and pepper.
Heat a 12-inch skillet over medium heat and cook chopped bacon until crispy. Remove bacon to a paper-towel lined plate.
Pour off all but 1 tablespoon of bacon grease; add seasoned shrimp to skillet and cook 1-2 minutes on each side, until pink. Remove to a plate.
Add mushrooms and green onions to skillet, adding additional bacon grease if necessary. Saute until soft. Add garlic and cook one minute. Stir in chicken broth, cream, and tomatoes. Cook sauce over low heat for 10 minutes. Taste and season with salt and pepper as needed.
Stir shrimp into the sauce and heat until warm.
To serve, spoon grits into a bowl, spoon shrimp/sauce on top, then sprinkle with bacon, green onions, and jalapenos.
Notes
Cook the shrimp and make the sauce while the grits are simmering for 35 minutes. That way, everything is done at the same time.

   Why build OUR system?
If you are a wise consumer, you have probably investigated other hydroponics grow box closets or bubbler systems available. There are plenty out there. But let me tell you a few things you need to consider before you buy:

Our bubbler system calls for an 18 gallon nutrient bin. Don’t buy a 10 gallon unit. Not only will you be refilling it too often, the roots go a little crazy in there, and need a lot of room. The dimensions of our recommended bin are a roomy 16″ X 24″ X 16 1/2″ tall.  
Our plans call for a powerful little pump which pushes the grow juice up to each pot via spaghetti “feeder” tubes. We also suggest a separate aerator pump and stone to keep the roots and nutrient well-oxygenated.
Some units out there do not provide a feeder, just the aerator stone. Not a good setup; you would have to topfeed the plants several times daily by hand if you don’t have a feeder pump and manifold like our plans do. And you will not get the rapid growth continual feeding promotes.  
Some systems only have 2″ or 3″ net pots. Our system advocates six nice-sized 4″ pots.

Now, about your lamp… We want to give you some straight talk here. Some of the cheaper hydro kits throw in a fluorescent lamp and bulb with their hydro unit,so they can call it a “complete kit”.
Now a fluoro lamp will work fine if all you want to grow are kitchen herbs, lettuces and greens… But, if you want to grow a top-notch garden for flowering or fruiting crops, you will need to buy an HID lamp.
Why buy an expensive lamp for your new garden? You’ll have to provide special supplemental lighting for your hydroponics garden. And you’ll soon find that this component of your system is likely to be the most expensive part. An evil necessity!
One of the bonuses included with this e-book is instructions for setting up CO2 supplementation. This is another good reason to buy an HID lamp.
CO2 supplementation will not work under fluorescent lighting… it takes HID in order to process it.
Not only do we recommend an HID for your project, we recommend two different types of bulbs: MH (metal halide) and HPS (high pressure sodium). (Gulp!)

Pressure Cooker Key Lime Pie

A tart, creamy key lime pie with a graham cracker crust “baked” in the pressure cooker, then served topped with some lightly sweetened whipped cream. This Pressure Cooker Key Lime Pie is a must try!
Recently, a reader ask me if it was possible to make a key lime pie in the pressure cooker. I love pressure cooker cheesecake and since key lime pie is similar, I decided to give it a try.  I’m so glad I did. Pressure Cooker Key Lime Pie is fabulous! 
Making Key Lime Pie in an Instant Pot
An Instant Pot is one of the most popular brands of electric pressure cookers. They are easy to use and your Instant Pot can help you create this delicious Key Lime Pie!
My Key Lime Pie with Mango Sauce recipe is heavenly so I adapted it for the pressure cooker. The addition of sour cream to the filling gives the pie a little more tang and makes it a little more creamy.
The Key Lime Pie with Mango is topped with meringue, but my pressure cooker key lime pie I topped  with whipped cream instead so you don’t have to turn on the oven.
I made the pie in a 7″ inch springform pan that I bought to make pressure cooker cheesecakes. It makes a cute little pie that’s perfect for a weeknight.

I’ve added a short video showing how easy it is to make this Pressure Cooker Key Lime Pie. In the video the crust is pressed up higher than I usually make it. For a crisper crust, you want the filling to be higher than the crust so no moisture gets into the crust.
Pressure Cooker Key Lime Pie

Ingredients:
Graham Cracker Crust
3/4 cup graham-cracker crumbs, about 5 crackers
3 tablespoons unsalted butter, melted
1 tablespoon sugar
Filling
1 can (14 ounces) sweetened condensed milk
4 large egg yolks
1/2 cup fresh key lime juice*
1/3 cup sour cream
2 tablespoons grated key lime zest
Directions:
Graham Cracker Crust
Prepare a 7 inch springform pan by coating it with a non-stick spray.
In a small bowl, combine the graham cracker crumbs, butter, and sugar. Press evenly in the bottom and up the side of the pan. Place in the freezer for 10 minutes.
Filling
In a large mixing bowl, beat the egg yolks until they are light yellow. Gradually beat in sweetened condensed milk until thickened. Gradually add lime juice and beat until smooth. Stir in sour cream and zest. Pour batter into the springform pan on top of the crust. Cover top of springform pan with aluminum foil.
Pour 1 cup of water into the pressure cooking pot, and place the trivet in the bottom. Carefully center the filled pan on a foil sling** and lower it into the pressure cooking pot. Fold the foil sling down so that it doesn’t interfere with closing the lid.
Lock the lid in place. Select High Pressure and set the timer for 15 minutes. When beep sounds, turn off pressure cooker. use a natural pressure release for 10 minutes, and then do a quick pressure release to release any remaining pressure. When valve drops carefully remove lid. Remove pie and check to see if the middle is set. If not, cook an additional 5 minutes.
Remove the springform pan to a wire rack to cool. Remove aluminum foil. When pie is cooled, refrigerate covered with plastic wrap for at least 4 hours. Serve with whipped cream, optional.
*If you can’t find key limes, you can substitute 1/4 cup fresh lemon juice and 1/4 cup lime juice
**Make a sling with a 20 inch piece of aluminum foil, folded three times length wise.

I’m still enjoying sunny Costa Rica but this Instant Pot Low-Carb Zuppa Toscana Soup is a new recipe I had ready to go so I could share it with you while I’m here! Sometimes when a recipe idea pops into my mind I’ll google it to see if there are lots of other bloggers who have already made similar things. But when I had the idea for a low-carb version of Zupppa Toscana Soup, I didn’t need to google it. I knew there would be other bloggers who had made their version of this tasty soup, and I didn’t care. I love the ingredients in Zuppa Toscana soup so much I wanted to make it even if it wasn’t that original or creative.
And wow, was it ever a winner! My version of Zuppa Toscana has bacon, my favorite spicy Italian sausage, onion, garlic, chicken stock, chopped cauliflower, red pepper flakes, chopped kale, heavy cream, and Parmesan cheese to add at the table. How can anything with those ingredients possibly taste bad? I know some people aren’t big on cauliflower or kale, but all these ingredients are a big yes from me!
And because the onion, garlic, and sausage are cooked in the Instant Pot before you lock the lid and cauliflower cooks in a flash in the Instant Pot, this soup is super quick! So when you need a quick dinner that’s easy, tasty, and low-carb, give this Instant Pot Low-Carb Zuppa Toscana Soup a try!

Start by chopping the bacon, onion, cauliflower, and the kale. You could do that ahead and keep those ingredients in containers in the fridge if you want to be ready to cook when you get home from work. Set the Instant Pot to SAUTE and HIGH temperature, add the chopped bacon and cook until it’s nicely crisp. Remove bacon with a slotted spoon. If there’s a huge amount of bacon fat you can remove some (or not) but leave at least a tablespoon of bacon fat to cook the onion. Turn Instant Pot down to SAUTE and NORMAL temperature; add chopped onion and cook 2-3 minutes. Then add the minced garlic and cook another minute.
Squeeze the Italian sausage out of the casings into the Instant Pot and cook the sausage while you break it apart with a plastic or wooden turner (not metal, which might scratch the pot.) If you’re using turkey Italian sausage it may release some water, but keep cooking until that’s evaporated and the turkey is starting to brown. Then add the chopped cauliflower, chicken stock, red pepper flakes, salt, fresh-ground black pepper, and the cooked bacon. Lock the lid and set the Instant Pot to MANUAL and HIGH temperature, TWO MINUTES.
After the cooking time of two minutes is up, use QUICK RELEASE to release the pressure. Set the Instant Pot back to SAUTE and HIGH temperature, add the chopped kale, and simmer the soup 4-5 minutes (or until kale is done to your liking.) Turn heat down to LOW (and let the soup cool down a bit if it’s bubbling). Then stir in the cream and heat it through. (Don’t boil after the heavy cream is added.)

Instant Pot Low-Carb Zuppa Toscana Soup

Cook Time: 2 minutes pressure cook time, plus additional cooking time for individual ingredients
If you’re a fan of Instant Pot soup, you’re going to love this Instant Pot Low-Carb Zuppa Toscana Soup!
Ingredients:
3 thick slices bacon, but into short cross-wise slices (Use more bacon if you prefer.)
1 yellow onion, chopped small
1 T minced garlic (garlic from a jar is fine for this)
5 links (19.5 oz.) hot or mild Italian Sausage (see notes)
4 cups chopped cauliflower (one small head)
6 cups chicken stock or canned chicken broth (4 cans chicken broth is slightly more than 6 cups, but it will be fine)
pinch red pepper flakes
salt and fresh-ground black pepper to taste
4 cups chopped kale
1 cup heavy cream (or use half and half or milk if you prefer)
freshly-grated Parmesan to add at the table
Directions:
Slice the bacon crosswise into short rectangular strips. Chop onion, cauliflower, and the kale. (I would use large pieces of kale, cut the kale away from the ribs, and then chop. But you could use pre-chopped kale or baby kale if you prefer.
Set the Instant Pot to SAUTE and HIGH temperature, add the chopped bacon and cook until crisp. Remove bacon with a slotted spoon. Remove some bacon fat (or not) but leave at least a tablespoon of bacon fat to cook the onion.
Turn Instant Pot down to SAUTE and NORMAL temperature; add chopped onion and cook 2-3 minutes. Then add the minced garlic and cook another minute.
Squeeze the Italian sausage out of the casings into the Instant Pot and cook the sausage while you break it apart with a plastic or wooden turner (not metal, which might scratch the pot.)

Low-Carb Diet / Low-Glycemic Diet / South Beach Diet Suggestions: This Instant Pot Low-Carb Zuppa Toscana Soup is a good soup recipe for any low-glycemic or low-carb diet. Soup with bacon and heavy cream would be outside the approve fat guidelines for the South Beach Diet, but I bet you could make a pretty tasty soup using lower-fat ingredients if you’re a South Beach fan.

I just walked in the door after a very long traveling day coming back from from Costa Rica, and before I unpack and catch up on mail I want to remind you about this favorite low-carb soup from a few years ago! And I’m back to reality now and I promise there will be some new low-carb recipes coming up soon. I can tell a lot of people have been looking for low-carb recipes ideas this week; thanks to everyone who’s been stopping by!
Back in the archives of the blog there’s a popular recipe called Stuffed Pepper Soup. If you’re not watching your carbs, that’s a delicious soup recipe made from all the ingredients you might use in stuffed peppers like green bell pepper, onion, sausage, ground beef, tomatoes, and herbs. There are a few added ingredients to add flavor, and there is also rice. The soup doesn’t have a huge amount of rice in each serving and I use low-glycemic Uncle Ben’s Converted Rice, but it’s still too much rice for it to be considered a low-carb recipe.
I did say in the notes after the Stuffed Pepper Soup Recipe that I thought it would work well with cauliflower rice, so I’m not so sure why it took me so long to try it. But I can happily report that this Low-Carb Stuffed Pepper Soup (with cauliflower rice) is absolutely the bomb! I’ve already eaten some of my leftovers and I have more in the freezer waiting for a cold night.
We used frozen cauliflower rice which also made it easy, and the frozen cauliflower pieces were nice and small and cooked quickly, but you could definitely use chopped cauliflower and just cook it a bit longer. In the low-carb version we used a bit more sausage and left out the mushrooms, but you could add some chopped mushrooms if you’d like. And if you like all those stuffed pepper flavors I described above, I hope you’ll try this soup!

Heat 2 teaspoons olive oil in a non-stick pan, saute the onion until it’s just starting to brown, then add the Italian Herb Blend and cook a few minutes more. Add the onion to the soup pot. Add the chopped green peppers and cook until they are starting to slightly char. Add the peppers to the soup pot. Add a little more oil to the pan and cook the ground beef and turkey Italian sausage, breaking it apart with the turner as it cooks. Then add 2 cups of frozen cauliflower rice (or cauliflower you’ve chopped in the food processor) and cook 20-30 minutes longer. (Use the longer cooking time for fresh cauliflower.) Season to taste with salt and fresh-ground black pepper and serve hot.

Low-Carb Stuffed Pepper Soup
Yield: 8-10 servings
Total Time: 70-90 minutes
Prep Time: 20 minutes
Cook Time: 50-70 minutes
Enjoy stuffed pepper flavors without the carbs with this delicious Low-Carb Stuffed Pepper Soup.
Ingredients:
2 tsp. + 2 tsp. olive oil
1 large onion, chopped small
1 T Italian Herb Blend
2 large green bell peppers, seeds and stems removed and chopped into half-inch pieces
5 links (19.5 oz.) uncooked turkey Italian sausage, squeezed out of the casing (I used hot Italian sausage, but if making for kids I might choose milder sweet Italian sausage.)
1 lb. lean ground beef
2 cans (15 oz.) crushed tomatoes + 2 cans water (rinse out the can with the water)
4 cans (14 oz) beef broth (or use 7 cups homemade beef stock)
1-2 T Worcestershire Sauce
1/2 cup ketchup (I used Heinz Reduced-Sugar Ketchup)
2 cups frozen cauliflower rice (Available at Trader Joes, Target, Kroger, and many other stores.)
salt and fresh-ground pepper to taste
freshly-grated Parmesan for serving (optional)
Directions:
Heat 2 tsp. of olive oil in a large non-stick frying pan. (I used my favorite Green Pan, the largest  size frying pan.)
Add the chopped onion and cook until the onion is just starting to brown; then add the Italian Herb Blend and cook a few minutes more. Put the seasoned onions into a large soup pot.
Add the chopped green peppers to the same frying pan and cook until they start to slightly char. Add peppers to the soup pot.
Add the other 2 tsp. of oil to the frying pan, add the sausage that you squeezed out of the links and the ground beef, and cook over medium-high heat until the sausage and beef is slightly browned.
You might have to cook the beef and sausage separately if you don’t have a big enough frying pan. Use your turner to break the ground beef and sausage apart as it cooks. (Or I sometimes use an old-fashioned potato masher to break the meat apart.) Add the beef and sausage to the soup pot.

Then add the 2 cups of frozen (or fresh chopped) cauliflower rice and let the soup cook 20-30 minutes more, or slightly longer for fresh cauliflower. Season to taste with salt and fresh-ground black pepper.
Serve hot, with fresh Parmesan to add at the table if desired.
