meat eggs, huh? forget soy sauce, take some chili powder. or half a spoonful of curry and coriander. now that is Taste. do you eat enough indian food that you would be able to handle that, you whitebread brit? >:)
Sometimes I add paprika!! I don't think I'd like adding curry powder to eggs but coriander might be nice. I eat a fair amount of Indian food but I'm not brave enough to get past a biryani. last time I had chicken jalfrezi I almost choked to death ASFDFGDFV. Plus, for health reasons very spicy food isn't good for me, but I try my best!!

Panner Jalfrezy
Jalfrezi a type of curry which involves frying marinated pieces of meat, fish or vegetables in oil and spices to produce a dry, thick sauce.
This is just a combination of veggies with a base of tomatoes. There are three types of tomatoes added in this, sliced tomatoes, pureed tomatoes and tomato ketchup, all these make them lip smackingly good..The last touch of kasuri methi is must because it gives the lovely aroma to the dish..So dont miss it..
Preparation Time : 10 mins
Cooking Time : 25 to 30 mins
Serves : 4
Ingredients :
Oil – 1 tblspn
Cumin Seeds / Jeerakam – 1 tsp
Onion – 1 medium size
Ginger Garlic Paste – 1 tblspn
Green Chillies – 2 slit
Carrots – 1 medium size
Baby Corn – 4
Bell Pepper / Capsicum – 1/2
Paneer – 200 grams
Tomato – 1
Chilli Powder – 1 tsp
Turmeric Powder / Manjal Podi – 1/2 tsp
Garam Masala Powder – 1 tsp
Tomato puree – 1/2 cup ( 1 large tomato pureed)
Tomato Ketchup – 2 tblspn
Kasuri Methi leaves / Dried Fenugreek leaves- 1 tsp
Salt to taste
Lemon Juice – to taste
Coriander leaves – 2 tblspn finely chopped
Methods :
Prepare the veggies. 
Heat oil in a kadai. Add in cumin seeds and saute for a min.
Add in onions and saute for a min. Add in ginger and garlic and saute for a min.
Now add in green chillies and saute for a min.
Add in tomato puree and cook till oil separates.
Add in spice powders and salt. Mix well.
Add in carrot and baby corn. Cook covered and simmer for 5 to 7 mins till the veggies are done.
Add in ketchup and mix well.
Now add in capsicum, tomatoes, paneer and toss well. Cook this for 5 mins.
Now add in kasur methi and toss well for a min.
Now take it off the heat, squeeze some lemon juice and add chopped coriander leaves.
Serve.

Christmas Pastelles
Addictively good traditional Trini food. Great by itself, with a good pepper sauce or Chow chow, or with a good sweet curry. I usually make Jalfrezi curry sauce with a little sweet red wine, simmered to mellow the heat. The meat is spiced with onions, peppers, olives, capers, and pimentos, a little catsup, salt and garlic powder. The corn masa is mixed with warm water, salt, and oil to a firm consistency, then mashed between banana leaves on a tortilla press. The folded pastelle is wrapped in a banana leaf and boiled to firm it up and saturate the banana’s sweetness into the corn meal. --Steve

For part two of this review, I decided to try some recipes to see if they worked. As mentioned earlier, the book is divided into two parts – recipes for upstairs and for downstairs. Both parts are further subdivided into breakfast, lunch, afternoon tea and dinner. Browsing through the cookbook, there were recipes I immediately thought would be good to try while others were quickly dismissed for reasons I will outline in my conclusion.
As someone who works full time, my main qualifications for a recipe is it should require minimal preparation and it should be quick to cook. Sure I’ll do something more complicated but that’s usually restricted during the days when I’m off and when I have more time.
But I digress. From the recipes I thought would be a good idea to try, I decided on two that I would review for this blog and both of them are versions of dishes that we (me and my husband) cook and eat on a regular basis.
KEDGEREE (P. 34)
Kedgeree is a dish that is Indian in origin; the original is called khichri which is a mix of rice and dhal. This later evolved into a dish that contained smoked fish and became a staple in upper class Victorian and Edwardian breakfast buffets. At present kedgeree makes a good brunch or dinner dish, there’s something comforting about curry flavoured rice with flakes of smoked fish served piping hot.
I’ve been cooking this for years and my go-to recipe is that from Delia Smith’s Complete Cookery Course. What attracted me to try this version is to see if I can make it the same way the Victorians did. My first impression was this was more like fried rice since it called for cooked rice rather than raw. There was also white fish instead of smoked and I was dubious about the cream. Instead of curry powder, the recipe called for cayenne pepper.

Gray mentioned in her blog that the original source of the recipe was from a long forgotten cookbook entitled The Cookery Book of Lady Clark of Tillypronie (1909). Having examined a copy in the British Library, Lady Clark had three versions of kedgeree and I can safely assume that what’s in the Downton Abbey cookbook is a combination of all three.
When I made this dish, I reduced all the quantities by half and much like Delia’s version, it was easy to prepare and cook. The cream I later learned stopped the rice from going dry and helped keep the grains separate while mixing everything together. In addition this is a good recipe with which to use leftover cooked rice. However my husband thought this version was bland and while the method certainly worked, I will definitely use smoked fish and curry powder next time.
  PRAWN CURRY (P. 135)
The first curries were introduced into the UK during the 18th century but it was via post-World War 2 immigration from the Indian subcontinent that familiarised Britons to a wide variety of curry dishes such as Jalfrezi, Rogan Josh and Korma. Curries have become such an integral part of the contemporary British culinary landscape that “having a curry” from a local takeaway has become a regular treat for many households.
Like the Kedgeree above, this Prawn Curry recipe is easy to prepare and it makes use of ingredients that could be found in my cupboard or easy to obtain from the local supermarket – curry powder, coconut milk, spinach, onion, prawns, etc. This recipe is also versatile, as Gray writes in the introduction; other seafood such as fish could be used and I would recommend this good way to get children to eat vegetables as well as introduce them (or anyone who isn’t familiar with the dish) to food that has more complex flavours.

This brings me to my problem with this recipe as like with the kedgeree, it was bland. Perhaps this is not the recipe’s fault as we’ve been accustomed to eating more authentic curry and this one seemed to be more of a poor copy of the real McCoy. However, my husband suggested adding salmon to the recipe and adjusting the quantities of the spices to see if it makes a difference.
  CONCLUSION
Both these recipes are from the upstairs section of the cookbook and I have to say that this tome is not really one that can be used for everyday meals, perhaps more for special occasions or during the weekend when one has more time to shop and prepare for meals in advance. As the Kedgeree and Prawn Curry have shown, many of the dishes have not aged well as either they have fallen out of fashion or in the case of the curries; they have been supplanted by more authentic ones that can be recreated at home due to access to the ingredients that can easily be found in supermarkets.
Other recipes are simply too complicated and labour intensive especially with today’s more time poor lifestyle (and no servants) and the reality that many of us live in flats where the kitchen would barely cover half in a country house. In addition many of the ingredients such as quail are simply expensive or inaccessible if one doesn’t live near a local butcher (or even if they stock it).
On the positive side however, the recipes gives the reader a glimpse into what people ate during the late 19th and early 20th centuries and while French cuisine and influence reigned supreme, there was also the influence of the British Empire. The recipes crucially also work, as Gray writes in a clear and concise style which reminds me of Delia Smith hence making them easy to follow.

Curry Night at Thea’s
Fancy a curry? Here are two recipes to kick off a curry night: PANEER JALFREZI, and SAAG ALOO. 
These two Northern Indian dishes take about the same time to cook, and both sauces benefit from being made well in advance. A day before you plan to eat is ideal, but if 24 hours of flavour melding is not an option for you, they work just fine made on the night. 
When throwing a curry night, I recommend aiming to have a range of textures and flavours: some drier curries, and some saucier, and choosing one or two different spices in each dish. We ate them with my EGG CURRY recipe (minus the prawns) featured here and with a lemony dahl.
PANEER JALFREZI
Serves 4-6
This recipe is very quick once you’ve made the sauce. The key thing is to use a non stick pan when frying your paneer and to not skimp on the fenugreek - a revelation!
Ingredients For the sauce 80g ghee or sunflower oil 4 garlic cloves, crushed  2 tbsp coriander seeds, coarsely pounded 6 red chillies, coarsely pounded in a mortar 2 onions, finely chopped 5cm piece fresh root ginger, finely chopped or crushed 3 green chillies, finely chopped 5 fresh ripe tomatoes, finely chopped 2 tsp salt 1 tsp ground garam masala 2 tbsp dried fenugreek leaves, crumbled
For the stir-fry 1 tbs ghee or corn oil ½ tsp crushed dried chillies 2 red or yellow peppers, deseeded and cut into strips  1 red onion, sliced 1cm thick 600g paneer, cut into 3cm batons A handful of fresh coriander leaves, chopped ½ tsp dried fenugreek leaves, crumbled Juice of 1 lemon
Method First make your sauce. Heat the oil or ghee in a pan, add the garlic and let it cook until it begins to just turn brown on the outside edges. Now add the coriander seeds and red chillies. When they release their aromas, add the onions and the teaspoons of salt, and cook until they start changing to light golden. Stir in the ginger, green chillies and tomatoes. Leave on a low heat and cook until the sauce thickens. When it is ready you should see the fat from the oil start to separate out. Add the garam masala and stir. You can set it aside at this stage for 1-2 days if needed.
When the rest of your curry night dishes are ready, you can start the paneer. Heat the ghee or oil in a wok or smiliar. Add the onion, pepper strips and crushed chillis. Stir and sauté on a high heat for one minute, then add the paneer and stir for another two minutes, until some sides are nicely goldened. Add the sauce and mix well. Once everything is heated through, check the seasoning. Finish with the fresh coriander, crumbled fenugreek leaves and lemon juice.
                                  SAAG ALOO
You can make the sauce smooth by blending it before you add the potatoes, or leave as is. You can take or leave the potatoes, as you like. 
Ingredients 4 potatoes 1 tbsp oil 2 onions, chopped 1 tsp cumin seed 1 tsp salt 2 garlic cloves, crushed 2 bags fresh spinach or 300g frozen spinach 2 medium fresh tomatoes, pureéd in blender 1 tsp chopped ginger ½ tsp turmeric powder ½ tsp red chilli powder 1 tsp salt or to your taste ½ cup yoghurt 2 tbsp of gram or corn flour ½ tomato thinly sliced ¼ cup water 1 tsp amchoor mango powder A handful of fresh coriander, chopped
Method First boil your potatoes in their skins (cut them into smaller chunks if some are larger, so that they are all an even size). Boiling them in their skins means they don’t go fluffy and break apart in the curry. When they are cooked, peel and cut into your preferred size.
Next, heat the oil up in a large pot. Add the cumin seeds and the onions and salt. Fry for a couple of minutes until the onions turn translucent, then add the garlic and ginger followed by the powdered spices. Cook until the raw aroma disappears and all starts to turn golden, and then add the puréed tomatoes. Roughly chop the spinach, and add to the pot, stirring well. Turn the heat down and allow to simmer for 15 minutes. Meanwhile, stir the flour into the yoghurt, so that it is fully incorporated - this stops the yoghurt from curdling in the sauce when it comes into contact with the heat and acidity of the tomatoes. Add the yoghurt mix to the sauce, stirring gently. To finish, add water if the sauce has become dry, followed by the amchoor and garnish with the fresh coriander.

Ingredients – 250 grams Paneer – 60 grams Onion – 70 grams Tomato – 70 grams Green Peppers – 1 Tbsp Butter – 1 Tbsp Olive Oil – 1 Tsp Cumin Seeds – 5 grams Ginger – 5 grams Garlic – 1 Tbsp Vinegar – 1/2 Tsp Tumeric – 1/2 Tsp Red Chilly Powder – 1 Tsp Coriander Powder – 2 Dried Red Chillies – 1 Green Chilly – Salt to Taste – Fresh Coriander Preparation 1. Cut the paneer into bite size pieces and set aside 2. Heat the oil and butter in a pan and fry the cumin and red chillies till fragrant 3. Add in the onion and fry till soft 4. Add in the ginger, garlic and green chilly and fry till they start browning 5. Add in the tomato, tumeric, chilly powder and coriander powder 6. Add the vinegar and a splash of water and cook down 7. Finally add the paneer and season with salt and cook for 2 minutes 8. Finish with fresh coriander and serve.
