Chopped beans
Slit green chilies - as per preference.
Chopped carrot
Oil - 6 tbsp

Garam Masala - 1.5 tsp
Thinly sliced ginger - 3 inches
Chopped garlic - 9
Chopped Onion - 1½, petals - 1½ 
Baby corn chopped
Peas
Cumin - 3 tsp
Kasuri Methi - 3 tsp
Salt as per taste
Capsicum tricolour - 4 ½
Butter - 3 tbsp
Pepper - as per preference
Turmeric powder - 1.5 tsp
Coriander leaves chopped
Garam masala - 1.5 tsp
Coriander powder - 3 tsp
Chilli powder - 3 tsp
Instructions:
In a pan, heat the butter. Once it melts, add the carrot, tomato, peas, and baby corn, chopped. 
Add salt and sauté it on high heat for a minute. Add the chopped capsicums.
Once added, stir-fry the vegetables until they shrink. Remember, it has to be crunchy, even if it is shredded.
Keep it aside.
In a wok, add 2 tablespoons of oil, turmeric, chilli powder, coriander powder, and salt, and sauté it until it turns aromatic. Do not burn it.
Once aromatic, add in the chopped tomatoes and sauté until mushy. 
Now add the tomato sauce and mix well till it forms a saucy consistency.
Once saucy, add the sauteed vegetables. Add garam masala and pepper powder.
Keep sautéing on a high flame.
Switch off and add in the chopped coriander leaves.
The delicious vegetable jalfrezi is ready to be served with hot naan, chapati, roti, or even noodles.

Ingredients You’ll Need
250 grams of cottage cheese, in cubes 1 large onion, thinly sliced 1 large capsicum (capsicum), cut into strips 1 medium-sized tomato, finely chopped 1 tbsp ginger-garlic paste 2 green chilies, finely chopped 1 tsp cumin 1 tsp turmeric powder 1 tsp red chili powder 1 tsp garam masala 1 tbsp tomato ketchup 2 tbsp cooking oil Fresh coriander leaves for garnishing salt to taste
Cooking method
Heat oil in a pan on medium heat. Add cumin and let it crackle. Add chopped onion to it and fry till it turns golden. Add ginger-garlic paste and chopped green chilies to it and mix. Cook for one minute. Add chopped tomatoes and cook till mushy. Now add turmeric powder, red chili powder, and garam masala to it. Mix well and cook for a minute to incorporate the spices. Add chopped capsicum and cook for a few minutes till they become slightly soft but still retain their crispness. Add shredded paneer to it and mix gently with the vegetables and spices. Keep in mind that the paneer pieces should not be broken. Add tomato ketchup to the pan, which will give the dish a slightly piquant taste. Add salt as per your taste and cook the Paneer Jalfrezi on a low flame for 2-3 minutes, allowing the flavors to meld together. Garnish with fresh coriander and turn off the flame. Serve hot Paneer Jalfrezi with steamed rice, naan, or chapati for a satiating and enjoyable meal.

[日安小廚房]印度番茄辣雞翼Jalfrezi Chicken Wings

上個月做了一道Chicken Jalfrezi,驚豔味蕾的好滋味。
趁著手感,這周再料理一次。微調香料配方,肉品改用雞翼。

步驟一,先調配綜合香料。
<食材準備>
薑黃粉-2 tbsp
卡宴辣椒粉-2 tbsp
胡荽籽-2 tbsp
蒔蘿籽-2 tbsp
黑芥末籽-2 tbsp
小茴香籽-2 tbsp
小豆蔻-1 tbsp
粉紅胡椒-1 tbsp
<作法>
1.將香料全部倒入研磨機,磨成粉,裝罐備用

<食材準備>
雞翼16隻
卡宴辣椒粉-1 tbsp
綜合香料粉-2 tbsp
橄欖油

<作法>
1.將適量橄欖油、卡宴辣椒粉、綜合香料均勻塗抹於雞肉上

將抹上醃料的雞肉裝入保鮮盒,放入冰箱醃隔夜。

隔天,就開始熬煮Jalfrezi Sauce。
<食材準備>
綜合香料-8 tbsp
洋蔥-1顆  切碎
辣椒-4根  切碎
蒜泥-2 tbsp
薑泥-2 tbsp
小番茄-25顆  切碎丁
咖哩葉
開水200cc
印度酥油Ghee
<作法>
1.以酥油熱鍋
2.加入洋蔥、辣椒、綜合香料、蒜泥、薑泥、咖哩葉炒至散發出焦香氣味
3.加入番茄及200cc開水,拌勻,轉大火煮至沸騰
4.轉小火,蓋上鍋蓋,以小火燉煮30分鐘
5.打開鍋蓋,轉中大火收汁

燉煮Jalfrezi Sauce的空檔,著手備好Jalfrezi Chicken Wings的食材。
等Jalfrezi Sauce燉好,就可以接著烹煮Jalfrezi Chicken Wings。

<食材準備-4人份>
以香料醃好的雞翼-16隻
Jalfrezi Sauce-10 tbsp
洋蔥-1顆  切絲
蒜泥-2 tbsp
薑泥-2 tbsp
辣椒-2根  切片
小番茄-25顆  剖切
肉桂-半根
丁香-1 tbsp
肉豆蔻-1顆
頂級布列塔尼海鹽
開水300cc
印度酥油Ghee

<作法>
1.將肉桂、丁香、肉豆蔻放入研磨機磨成粉,裝罐備用
2.以酥油熱鍋,放入醃好的雞翼煎至表面金黃,撈起備用
3.原鍋加入洋蔥、辣椒、蒜泥、薑泥炒至洋蔥焦化
4.加入番茄續炒
5.加入10大匙Jalfrezi Sauce及300cc開水,拌勻,轉大火,煮至沸騰
6.轉小火,加入雞翼
7.加入2匙剛剛磨好的香料粉,拌勻,蓋上鍋蓋,燉煮20分鐘
8.起鍋前,以中大火收汁,加入適量鹽調味
9.盛盤後,刨少許檸檬皮茸增香

Jalfrezi Chicken Wings的在爐上燉煮的空檔,起另一口爐炊煮印度香米。
香米與水以1:1的比例,加入少許澄清奶油一起煮熟即可。

近中午起床,簡單的已幾塊乳酪與一小碗優格果腹,再煮上一杯咖啡,就著手準備料理Jalfrezi Sauce。
這麼煮煮拍拍的,等到餐飯上桌,已過下午4點。
究竟是時光���移的太快,還是我的烹飪過程,總是顯得太過慢條斯理。
這道《印度番茄辣雞翼》,意料中的,還是相當美味。
長時間的燉煮,雞翼風味十足,口感柔軟,是不須費力動著刀叉就能輕易將骨肉分離的狀態。
好吃,好吃。
依舊是發出了"噢!"之後,就再也說不出話的程度。

Panner Jalfrezy
Jalfrezi a type of curry which involves frying marinated pieces of meat, fish or vegetables in oil and spices to produce a dry, thick sauce.
This is just a combination of veggies with a base of tomatoes. There are three types of tomatoes added in this, sliced tomatoes, pureed tomatoes and tomato ketchup, all these make them lip smackingly good..The last touch of kasuri methi is must because it gives the lovely aroma to the dish..So dont miss it..
Preparation Time : 10 mins
Cooking Time : 25 to 30 mins
Serves : 4
Ingredients :
Oil – 1 tblspn
Cumin Seeds / Jeerakam – 1 tsp
Onion – 1 medium size
Ginger Garlic Paste – 1 tblspn
Green Chillies – 2 slit
Carrots – 1 medium size
Baby Corn – 4
Bell Pepper / Capsicum – 1/2
Paneer – 200 grams
Tomato – 1
Chilli Powder – 1 tsp
Turmeric Powder / Manjal Podi – 1/2 tsp
Garam Masala Powder – 1 tsp
Tomato puree – 1/2 cup ( 1 large tomato pureed)
Tomato Ketchup – 2 tblspn
Kasuri Methi leaves / Dried Fenugreek leaves- 1 tsp
Salt to taste
Lemon Juice – to taste
Coriander leaves – 2 tblspn finely chopped
Methods :
Prepare the veggies. 
Heat oil in a kadai. Add in cumin seeds and saute for a min.
Add in onions and saute for a min. Add in ginger and garlic and saute for a min.
Now add in green chillies and saute for a min.
Add in tomato puree and cook till oil separates.
Add in spice powders and salt. Mix well.
Add in carrot and baby corn. Cook covered and simmer for 5 to 7 mins till the veggies are done.
Add in ketchup and mix well.
Now add in capsicum, tomatoes, paneer and toss well. Cook this for 5 mins.
Now add in kasur methi and toss well for a min.
Now take it off the heat, squeeze some lemon juice and add chopped coriander leaves.
Serve.

Curry Night at Thea’s
Fancy a curry? Here are two recipes to kick off a curry night: PANEER JALFREZI, and SAAG ALOO. 
These two Northern Indian dishes take about the same time to cook, and both sauces benefit from being made well in advance. A day before you plan to eat is ideal, but if 24 hours of flavour melding is not an option for you, they work just fine made on the night. 
When throwing a curry night, I recommend aiming to have a range of textures and flavours: some drier curries, and some saucier, and choosing one or two different spices in each dish. We ate them with my EGG CURRY recipe (minus the prawns) featured here and with a lemony dahl.
PANEER JALFREZI
Serves 4-6
This recipe is very quick once you’ve made the sauce. The key thing is to use a non stick pan when frying your paneer and to not skimp on the fenugreek - a revelation!
Ingredients For the sauce 80g ghee or sunflower oil 4 garlic cloves, crushed  2 tbsp coriander seeds, coarsely pounded 6 red chillies, coarsely pounded in a mortar 2 onions, finely chopped 5cm piece fresh root ginger, finely chopped or crushed 3 green chillies, finely chopped 5 fresh ripe tomatoes, finely chopped 2 tsp salt 1 tsp ground garam masala 2 tbsp dried fenugreek leaves, crumbled
For the stir-fry 1 tbs ghee or corn oil ½ tsp crushed dried chillies 2 red or yellow peppers, deseeded and cut into strips  1 red onion, sliced 1cm thick 600g paneer, cut into 3cm batons A handful of fresh coriander leaves, chopped ½ tsp dried fenugreek leaves, crumbled Juice of 1 lemon
Method First make your sauce. Heat the oil or ghee in a pan, add the garlic and let it cook until it begins to just turn brown on the outside edges. Now add the coriander seeds and red chillies. When they release their aromas, add the onions and the teaspoons of salt, and cook until they start changing to light golden. Stir in the ginger, green chillies and tomatoes. Leave on a low heat and cook until the sauce thickens. When it is ready you should see the fat from the oil start to separate out. Add the garam masala and stir. You can set it aside at this stage for 1-2 days if needed.
When the rest of your curry night dishes are ready, you can start the paneer. Heat the ghee or oil in a wok or smiliar. Add the onion, pepper strips and crushed chillis. Stir and sauté on a high heat for one minute, then add the paneer and stir for another two minutes, until some sides are nicely goldened. Add the sauce and mix well. Once everything is heated through, check the seasoning. Finish with the fresh coriander, crumbled fenugreek leaves and lemon juice.
                                  SAAG ALOO
You can make the sauce smooth by blending it before you add the potatoes, or leave as is. You can take or leave the potatoes, as you like. 
Ingredients 4 potatoes 1 tbsp oil 2 onions, chopped 1 tsp cumin seed 1 tsp salt 2 garlic cloves, crushed 2 bags fresh spinach or 300g frozen spinach 2 medium fresh tomatoes, pureéd in blender 1 tsp chopped ginger ½ tsp turmeric powder ½ tsp red chilli powder 1 tsp salt or to your taste ½ cup yoghurt 2 tbsp of gram or corn flour ½ tomato thinly sliced ¼ cup water 1 tsp amchoor mango powder A handful of fresh coriander, chopped
Method First boil your potatoes in their skins (cut them into smaller chunks if some are larger, so that they are all an even size). Boiling them in their skins means they don’t go fluffy and break apart in the curry. When they are cooked, peel and cut into your preferred size.
Next, heat the oil up in a large pot. Add the cumin seeds and the onions and salt. Fry for a couple of minutes until the onions turn translucent, then add the garlic and ginger followed by the powdered spices. Cook until the raw aroma disappears and all starts to turn golden, and then add the puréed tomatoes. Roughly chop the spinach, and add to the pot, stirring well. Turn the heat down and allow to simmer for 15 minutes. Meanwhile, stir the flour into the yoghurt, so that it is fully incorporated - this stops the yoghurt from curdling in the sauce when it comes into contact with the heat and acidity of the tomatoes. Add the yoghurt mix to the sauce, stirring gently. To finish, add water if the sauce has become dry, followed by the amchoor and garnish with the fresh coriander.

another thing that irritates me about Joshua is that he has this… very strange complex about food
look, like, I personally believe that I’m an excellent cook. when you’re trying to manage ED Brain, it’s sort of necessary to be bc the food needs to feel Worth The Trouble to justify eating it. this generally isn’t something I disclose to people irl because they’re liable to get surveillant (albeit jus was pretty respectful about it, but most of the people I know via the edanon sub haven’t been as lucky) but it’s like… I need to be good at cooking or I generally won’t eat lmfao
anyway we know that I’m the mac and cheese queen, surely. my flagship recipe that I generally make for family stuff is toasted béchamel, aged fontina, mascarpone, a tablespoon of cognac, two teaspoons of hot sauce (I prefer the Louisiana brand for this), .5 tsp nutmeg, cinnamon, & smoked paprika, generous salt. what you end up with is something with a velvety texture, and beautiful complexity due to the nuttiness of the toasted béchamel and nutmeg, the slight sweetness from the cinnamon and cognac, the slight spice from the hot sauce, the smokiness from the paprika.
Joshua wanted me to make him Mac and cheese on New Year’s Day and asserted that he didn’t think anything made from scratch could top the quality of restaurant mac. And, like, as someone who is imo a More Than Proficient home cook, and who has worked in restaurants, I personally think this is horseshit
for one thing, this is difficult to batch. for another, stovetop mac and cheese is incredibly finicky – you need to serve it immediately or it’s going to dry out and you won’t get that spellbinding Pillow Cheese texture. and another is that a commercial kitchen isn’t really the environment where you can provide adequate attention to detail
I’m writing this while I sit on the counter and letting the paneer jalfrezi I’m making for lunch simmer. and you can’t just sit on your happy ass and ignore your curry – you need to stir it when you see it start to bubble so it infuses while it doesn’t reduce too much. if you’re working in a kitchen, it’s seriously impractical to be like this
anyway he was so fucking shocked to learn that in spite of his biases, my mac is still a heavy hitter. this should come as no surprise to anyone who knows dogshit about me. but I also don’t like being in a position where I feel like I have to prove myself against commercial kitchens in the eyes of someone I’m dating. jus was enamored with the food I made (so was his fucking dad!!) and I miss being with someone who really, truly believed in my abilities rather than subtly slighting me like that
