1 cup Krusteaz Pancake Mix

Introducing yall to one of the best desserts in the world
Crack Brownies
Make Krusteaz brand gluten free brownie mix according to the recipe on the box (shown above is a double batch) (I'm sure that you can use another brand, this is just the one that we've always used and it just works so well so we don't mess with it)
Bake them until almost done, just 5ish minutes under the recommended time
Pull them out of the oven and start placing as many peppermint patties on top as your heart desires
Pop them back in the oven until they melt and the chocolate "cracks" to reveal the peppermint inside (about 5 minutes)
Pull them out of the oven for real this time and spread out with a spatula
Optional step: add some festive sprinkles Just for decoration
We haven't figured out if it is better to cut them when they are still warm or when they are totally cool and the peppermint patties are set and we do it differently every time, but it ultimately doesn't change how delicious these brownies are

Baking with a mix and no eggs:
I woke up in the late phase of a migraine where I'm not actually in very much pain and I'm frantic to catch up with all the time that I missed curled up in bed.
Time for Inadvisable Kitchen Science!

I started here:

Don't at me. I know we're mad at Target right now. This can of soda has been in my fridge for a while and I might as well use it up.
Anyway, I got down a bag from the megabox of Krusteaz brand pumpkin bread mix. I got this can of strawberry flavored non-cola soda out of the back of the fridge. I got the big mixing bowl and a soup ladle.
Baking mix dumped into bowl; soda poured into bowl; apply ladle for alternate stirring and dredging.
Oh yeah, I ought to preheat the oven.
And get down a couple of muffin pans.
And insert silicone reusable liners.
I understand that the batter improves if I leave it alone for ten minutes after I finish mixing. Is that still true when using carbonated soda instead of milk + butter?
I still dunno, because I probably did not take ten minutes to prepare and fill the muffin pans. Not even with a deviation to put hot soapy water in the dish pan.
I maybe did take ten minutes to heat up the oven to three-seventy-five? But most of those minutes, the batter was already ladled into place.
The box says nineteen to twenty-two minutes for a dozen standard-ish muffins. I had six regular size and six large. I found that neither subset was done baking until 28 minutes.

Verdict:
Hunh.
The bottoms did not burn. Progress!
They have a very soft mouthfeel.
I am not sure if I taste the strawberry as much as I smell it.
Let's see if Wookieegunner and CBairdAsh have opinions, once they wake up.

Kim's Fluffy Pancakes ™ 🥞 made a show stopping appearance for breakfast.
1 cup of krusteaz light and fluffy buttermilk mix sifted to get rid of clumps
1 cup of Greek yogurt and 1 cup of milk liquid mix
1 tsp of extra virgin olive oil
1 egg
Mix until batter is ribbony not liquidy
Let batter rest for 15 to 20 minutes
Then cook pancakes on medium high, in a non stick pan, DON'T ADD BUTTER TO PAN, flipping when bubbles form on the surface and edges are set
That photo of me is just me letting myself be perceived. Clearly I'm not very camera friendly, very shy and awkward so I'm initiating exposure therapy.
Had some late dinner in and out which was another form of exposure therapy, the socializing kind. Having to eat in front of the masses sometimes tends to be overwhelming
Finally, last picture documents the deceiving Walmart PJS, the T-shirt section of the set said size medium so figure the pants was also that size. Turned out to be an XL instead. Very sad 😢. Such a cute set too.
