Mathias decided to turn himself into a vampire to spite God and his "cree of limited life", because Elisabetha died before her time was due, and he took it as being unfair. And yet, Lisa stayed human. Dracula could have turned her at any point after Alucard was born, to make sure that the love of his unlife would be on his side, young and nigh invulnerable for eternity... but he never did.
Being turned into a vampire doesn't seem to be pleasant. We know this by Sara's experience in LoI, when she describes it like this: "My heartbeat is weakening and my blood is growing cold… I can feel myself changing into something inhuman…". It's a slow, scary, potentially painful process, and it's possible that Dracula simply didn't have the heart to do this to Lisa, especially if quite simply she didn't want to. Dracula has always been highly self-centered, but perhaps, before Lisa's death, not to the point of disrespecting her wishes.
It's also possible that the reason he never turned her is because vampire Lisa wouldn't have been the same person as human Lisa. She would have grown colder, more selfish... the opposite of her human nature that Dracula fell in love with. Remember: before Lisa's death, Dracula did not hate humanity, he only hated God.
And I personally like to imagine that Dracula was also trying to get over his apparent distaste for death. That he was ready to accept to see his wife grow old, die and leave him alone for eternity: he may have rejected mortality, but that did not make it inherently something to be shied from. And then we know what happens next :)

“I am still surprised,” Lisa muttered, as she bit down on the meat. The taste was perfect. Gamy, the amount of spice just right. It was what she supposed the food served at the courts of Europe would taste like – nothing that someone like her was ever supposed to taste.
Vlad smiled at her. “How so?”
“You said you barely have eaten normal food in decades. So I am surprised you handle the cooking well.”
“I just don't forget things,” he replied.
It was so strange. The way he looked at her. The expression in his red eyes so incredibly soft. His smile was warm. It all did feel almost unreal. But it was not, was it? There was a silver band on her finger. Her wedding band. At times she was still wondering, whether she had gone insane. She knew the man for barely more than half a year and yet was married to him – was bearing his child.
Yet, he was a thoughtful husband. He was cooking for her, looking after her, still teaching her the sciences of course. It was all she could ever have dreamed of. Even more. Which was, why it felt so unreal.
“You should eat it, while it is still warm,” he said.
“Of course.” She smiled, shaking her head as she realized she had been lost in her thoughts. “Though I am fairly certain this would still be good served cold.”
“I would be,” he said. “But you need a warm meal.”
It made her chuckle. He really was thoughtful - and a bit nervous. It seemed that this, having a child, was as new to him as it was to her. Even if she could not yet be past the tenth week, he was at times acting as if she could be due any minute.
She took his hand now over the table. “Relax, dear. I am still feeling fine.”
He nodded, smiled. “Of course.” For a moment his long fingers interweaved his hers, as he was looking at their hands.
Vlad really was a strange man. Maybe the strangest man she had ever met. But he was a good man. People probably would not believe her, if she told them, but she was most certain, that he was good – even though she knew him to be a murderer.
And he was a good cook, always knowing how to get it just right. The meat, that would be just red enough, the noodles he would make by hand, the vegetables he served with it. She supposed all of that was knowledge as well. Knowledge she could learn from him, too.
“You don't need to help me,” he said, when he was washing the dishes, making her sigh. She tapped against his shoulder and tucked his collar. A simple little sign that he understood quite well by now. He bowed down, allowing for her to kiss him.
“My dear.” With a smile she cupped his face in her hands. “I am pregnant, not dying.”
“I know.” He sighed, chuckling awkwardly. “I know that.”
At least he did not protest any longer, when she dried of the dishes, putting them into the right cupboards again.
“What do you want to do for the evening?” he asked. After all the evening was the time they got to share the most – even if he rarely ever slept. As such she just leaned against him. “I think for once, I might enjoy just reading a book.” She took his hand, that was so big compared to her own. “Will you join me?”
He smiled, now bowing to kiss her all on his own. “Of course,” he whispered, the fingers of his free hand weaving through her hair. Then he kissed her forehead, as he would do so often.
He was good. Soft. Caring. For her it was almost hard to imagine him killing. She knew he had done so in the past. She never allowed herself to forget it. But as he was right now she could barely imagine it.
Soon she found herself leaning against him on the sofa in the sitting room. There was a nice fire burning, as by now the nights were chilly, even though the castle with its big walls quite well isolated. But sitting here in front of the fire, with him by her side was always nice.
He was reading as well, making her wonder if he was reading maybe the same book for the tenth time. Her book was new, of course. It was in Latin, a language she had only started to learn as she got here. It was not on medicine, but on the movement of the stars. It was another thing she had learned since she had gotten here. The earth was revolving around the sun - not the other way around. It was fascinating, really. So much knowledge found in this castle. So much knowledge he was holding himself.
Once more his fingers ran through her hair, before he softly kissed the top of her head. “I love you,” he whispered, making her look up from her book.
“Where is this coming from all of the sudden?”
“I…” He took her right hand, the one bearing the ring. “It is still quite hard to believe, really.” Guiding the hand to his lips, he kissed it, before pausing, pulling in her smell.
I am afraid it gets adulty after this, so off to Ao3 you go.

"There is more proof of Dracula being a nicer person in the games before Lisa's death"
Where? No really, where?
Because he kind of adopted a bunch of orphans? Yeah sure, on the pact that they'd swear alliegence to him and learn a cursed magic, essentially just using them as yet another tool to tell God to get bent
Because we don't see him bathing in the blood of innocents like we see N!Dracula do in that one flashback? Just because we don't see it doesn't mean that we can't infer a similar behavior by virtue of him being a vampire who needs human blood to live. The dude ruined the life of his best friend by having him kill his own girlfriend just to further his own plan and felt no remorse about it, even kind of gloated about it. Do you really think he'd be above doing the kind of crap N!Dracula used to do? He was already calling himself the King of the Night and was welcoming demons of various kinds into his castle, including a succubus who, like you mentioned in another post,was about to get down and dirty with one of his supposed proteges who was 15 years of age
And while you are technically right about the issues between him and Lisa I'd argue that the biggest issue is the lack of actual scenes detailing the relationship. I'm pretty sure the implication is not that Lisa is scared of her husband, but rather that she knows what he used to be and fears he will slip back once hit with such a massive blow. Had the show given us actual chemistry between the two it could've been nice, rather than making it look like Lisa just saw Dracula as some sort of patient to cure rather than a person to love, since, as it stands, the only thing the two seemed to have bonded over was their mutual love for science which, when coupled with Lisa's lack of care for Dracula's actions in the ending, makes her look like a borderline psychopath who cares more about knowledge than people even though the very reason she sought Dracula's knowledge in the first place was to help those in need
And I cannot in good faith criticize the show for going the whole "bad boy/good girl" route because, like it or not, it's one of the few instances of the show being relatively faithful to the games, where Lisa wasn't even a character, just the archetypical angelical woman who's basically a saint and almost managed to rescue Dracula's soul were it not for her death. The main issue there is that we never actually truly see Lisa, so her thought processes about Dracula are unknown to us, but no matter what we cannot avoid the implications that she knew her husband was a monster, it's practically impossible for her to not have known. Hell, the fact that she had to tell Alucard not to harm humans in and of itself implies that she feared the possibility that he might do so in a fit of rage due to his half-vampire nature. Now where do you suppose that fear might stem from?
For all intents and purposes the show's depiction of the relationship should've been better as Lisa was given some actual screentime, it's just that the show's shoddy writing turned that positive into a negative, but some of the fundemental issues that you mention are baked into the very idea that was already present in the games, they were just far less visible due to said lack of screentime
My bad, I meant to say "nicer" than N!Dracula. I know he's still a dick :P
The issue is pretty much what you said. We sadly have very few details of Dracula and Lisa before she was killed. What we do know paint him in a generally gray light - most obviously the idea that he sheltered rejected humans for the sake of teaching them dark arts, a sort of "selfish kindness" if you will. The show had the chance to give us more to really convince us of the idea that Dracula had good in him, especially since the entire angle chosen for him was "tragic complex villain you can't really blame". And they made things even worse.
We don't know if Dracula went on violent killing sprees for trivial reasons. Maybe he did, or maybe he didn't and found other ways to feed (the games, admittedly, gloss over the very concept of vampires needing humans to feed on). We know that N!Dracula did, and even better we learn this in a scene where we're supposed to feel sorry for his depression: that is the thing I take issue with.
(btw, in that scene N!Dracula didn't kill people for the sole purpose of eating, which would be understandable for a vampire. He took great pleasure in dismembering some merchants for "disrespecting" him. It was a show of power. Again, we don't know if Dracula did the same power flexes, but the implication is that he stayed in his own castle 24/7 and he was merely a legend. IGA confirmed that before Lisa's death, Dracula had no issue with mankind in general, only with God, and he lived a peaceful life: N!Dracula was already a misanthrope before he met N!Lisa.)
We don't see the details of Dracula being a kind, loving family man to Lisa and Alucard. The only line we can go with is the arguably-canon Grimoire of Souls where Alucard says that Dracula regained his humanity with Lisa. Same goes with the show because god forbid a flashback gets in the way of N!Alucard being a dick, but N!Lisa's behavior really suggests the worst. Maybe he didn't beat her or yell at her, but I still think that kind of fear should be unwarranted: N!Lisa has been with N!Dracula for nearly 20 years, she made him travel all by himself, she trusted him with a son, but she thinks (and correctly guesses) that one blow would make him regress to the savage impaling beast he used to be? Why did you stay with him, then?
As for Lisa's final words, I don't read them as clear-cut as it is in the show:
ENG: "Do not hate humans. If you cannot live with them, then at least do them no harm. For theirs is already a hard lot."
JP: Do not blame humans. She said that those unable to forgive mankind will walk the path of their own destruction. Those who do not belong to that world shouldn't do anything...
They're very different, even if the core message is the same. In the English version, yes it can be read as Lisa fearing that Alucard might harm people, but she is mainly urging him to find forgiveness and compassion in his heart (yes it's very Jesus of her, I know). In the Japanese version, that's where she acknowledges that her son isn't fully human, but notice that what she's concerned about is not that they'll kill, but that they'll destroy themselves.
But fair enough about Draculisa fitting the archetype in general. Undeniably the series has an issue with the portrayal of women :P I think that what mitigates it is, again, precisely the lack of details, which makes us come up with our own interpretations on what happened between the two.
I could have explained myself better, but I see a difference between "bad boy/good girl" on its own, which can be cliché but inoffensive, and the idea that a good girl's job is to actively try to fix a bad (read: toxic) boy, like the responsibility is only on her shoulders. We don't know if Lisa saw Dracula as a beast to be tamed: maybe she did, or maybe she simply saw his best traits. We know N!Lisa offered herself to teach N!Dracula "some manners". It's explicit that she wanted to fix him, and clearly she didn't do a very good job at it.

Baby Adrian's birthday
Hi I'm sorry for not writing, hadn't inspiration these months. But, now I'm inspired to write a cute baby Adrian story, so Lets go!
Mommy Dracula and Daddy Lisa, and Dracula in a dress ( go and fight me, but trust me he has a model body so he looks pretty in a dress.)

5 years had passed since Adrian has been born, and under his mama and father's love and care, the little baby had turned into a beautiful and adorable little boy. Today was his fifth h birthday, so he wore the pretty blue dress his mother had made for his birthday and had his hair tied by a middle ponytail with a blue matching ribbon, some hairs falling over his rounded, blushed cheeks, making him look like a pretty porcelain doll.
The little boy was helping his mom to make his birthday cake, it was a chocolate cake, and his favorite.
" My little baby, can you please pass me the flour?" Vlad asked as he arranged all the ingredients for the cake batter.
" Yes, mama!" Exclaimed little Adrian, he reached for the flour bag on the other side of the table and give it to his "mom".
" Thank you, baby." Vlad thanked and started to prepare the batter, Adrian looked at him amazed.
" Mama, do you think papa will arrive from her travel tonight?" Asked Adrian, his yellowish eyes looking at his mother with illusion.
" Of course my baby, she wrote that she would be here tonight to celebrate your birthday, so don't worry," Vlad assures him with a smile.
Adrian just nods and proceeds to help his mama in the cake making, Adrian can't wait for his dad to try this cake and hoped she liked it.
The night had fallen, and mother and son were quietly waiting for the father to arrive. The little boy was waiting by the door, tightly hugging a little rag doll, which was another of his mother's gift. The little boy was so scared that his "father" wouldn't make it today, his daddy was always traveling, taking care of the sick. Bcause of this, Adrian hadn't share so much with her, but because this day was so special to him, she assured him to be on time.
Disillusion started to take him over, but suddenly he heard the front door open, the little boy looked up and saw a tall, blonde woman enter the house. Happily, the little boy got up from the floor and hugged the woman, who gladly accepted his hug.
" Aww my little princess, I'm home now." The older woman lift up the little boy, he had grown up since she last saw him, but he was still so small and light.
" My love..." Lisa heard her husband calling her, she turned and saw the love of her life clad in a simple white dress, which framed perfectly his curves. His shoulder-length was loose and perfectly framed his sharp face which a mustache and a goatee decorated it, giving him a regal and elegant. He looked like a beautiful queen, she went with Adrian in her arms and hugged him. Vlad hugged his wife small body, he was so content to see he and being able to hold her, he was so tired of the long nights absent of her embrace, but now she was with him and his little boy.
Little Adrian was so joyful to be in his parents’ arms and that his “father” was able to fulfill her promise and be for fifth birthday. The gifts weren’t the reason he waited for his birthdays, but the opportunity to share it with his parents and being dotted with all of their love.

Finally, I had this short story in my drafts for months, it was supposed to be posted during December, but many things happened that delayed this story. But the most important thing is that it’s finished. Also, thank you for everyone who reads my story and enjoy my blog, I appreciate a lot!
