El dulce que todos quieren.

Hace unos meses, viajé para ver a Natalie Merchant en concierto. Disfruto mucho los conciertos —el primero que vi fue a Depeche Mode en 1986, a los 17 años, y conservo la experiencia como uno de los recuerdos más bonitos de mi adolescencia—, y me encanta en particular Natalie Merchant: desde que estaba en 10,000 Maniacs y después, como solista, siento que canta para mí. Estaba emocionado de ir a verla. El concierto fue intimo, en un teatro mucho más pequeño de lo que acostumbra, y yo tenía boletos muy cerca de ella, en la tercera fila. 

Todo fue verla, que empezara a cantar, y que yo me pusiera a llorar. Pero a mares. Es raro, no me pasa casi nunca, no me pasa ni cuando pruebo un platillo que me conmueve y emociona, pero esta vez, aunque la escuchaba, no podía verla, me cegaban las lágrimas. 

Al terminar, me acerqué a los roadies que estaban recogiendo el escenario y les pedí que me regalaran las hojas que, tiradas a los pies de los músicos, anunciaban la lista de canciones, el set list. Amablemente accedió, las despego del piso y me las entrego. Fue tanta la emoción que era muy importante poder llevarme algo tangible de esa noche de regreso a casa. 

En estos días, he reproducido la lista, tratando de entender la lógica, los eslabones secretos que unen a una canción con la siguiente, y con la siguiente. No la encuentro. Hay un código que se me escapa.

Y me cuesta, porque como cocinero, acostumbrado a armar menús, a preparar degustaciones, a combinar ingredientes y técnicas, estoy convencido de que los elementos de una selección llevan un orden, una secuencia, una narrativa. Al igual que Juan Gabriel no arrancaba sus conciertos con Querida, uno no empieza una comida con sus greatest hits: al contrario, va poco a poco, llevando al comensal de los bocados más frescos, más sutiles, tal vez con mayor acidez, los que se maridan con un vino espumoso, a los más fuertes, más complejos, los de tinto robusto. Un concierto, como una comida, es una especie de viaje, y quien marca el rumbo es el creador, el artista, quien pone frente a ti una propuesta y te invita a que te dejes llevar. 

Construir un menú, como supongo que construir una lista de canciones, es una experiencia a partes iguales emocionante y desgarradora, porque tan definitivo y definitorio es lo que incluyes como lo que dejas fuera. No sabes cuántas personas acuden a tu lugar en busca de un platillo específico —ese que ya cumplió su ciclo y sacaste del menú, o el que lleva ingredientes que no están en temporada—, y se van a sentir decepcionados al no encontrarlo, de la misma forma en que la conversación a la salida del teatro no se centra en lo que se acaba de escuchar, sino en “las que no cantó”. Si bien los cocineros, como los cantantes, estamos esencialmente ligados al público, somos también seres humanos con inquietudes, con ganas de innovar, de explorar ideas distintas, de no repetirnos; armar una oferta gastronómica o musical se vuelve, pues, un equilibrio, una lucha de fuerzas constante, entre complacer y proponer, entre recorrer los caminos ya conocidos, y darle gusto a quienes vienen a escuchar las que ya se saben, o aventurarse por sendas nuevas, animarse a tocar los nuevos sencillos y afrontar la incertidumbre.

Para mí, no hay acto de amor más grande que compartir la pasión, el oficio: cantar, cocinar para otros son actos de entrega, de la misma forma en que recibir lo que el otro ofrece, aceptar su invitación al viaje que ha planeado, es un acto de infinita confianza, y por lo mismo, la experiencia nos hace más ricos y mejores seres humanos. Quizá nunca logre saber qué factores llevaron a Natalie Merchant a armar esa lista de canciones, pero llevo conmigo la experiencia y la emoción. Y la esperanza de volver a viajar juntos y escucharla cantar para mi.

Look what I received today - yes, #womeninrock #routledge #2022 A new study bringing together #rockmusic with #romanticism, but this time focused on #women artists. I’ll be spending more time talking about this collection in late October to early November as contributors become available.
