Smooshed carrots with cilantro-pistachio pesto and pickled onions

I imagine Ottolenghi said something like “ok guys, what are really calling this.”

Easy? Sure. Should I have waited until 5:00PM to start? No.

Tasty? Yes. Will it blow you over? Probably not. But it is different enough to be real interesting. And pleasant to eat.

Would I make it again? You know, I’d think about it!

Confit Tandoori Chickpeas from Ottolenghi Test Kitchen. Also no-knead focaccia because when I’m making something outside the family’s comfort zone, I make sure there’s a tasty carb to go with it. This was super delicious and actually really easy. Canned chickpeas, so no soaking overnight. You just kind of throw everything together, stir, and bake. For the yogurt sauce, again, you just throw it all in a food processor and process. And actually, the focaccia was delicious dipped in the yogurt sauce.
