Firstly, what exactly is alkaline water?
Water that has a pH close to 8 is considered alkaline. There are only two ways in which water can be alkaline.

When spring or aquifer water passes underground through layers of clay, alluvium and sand it absorbs natural minerals from the earth like calcium, magnesium, sodium, potassium etc. The presence of these minerals and depending on the composition, if the pH is close to 8 then the water is naturally alkaline. It is hard to find such water – it is a gift of nature.
Second, water can be made or manufactured to be alkaline. How? By putting regular or tap water through a machine called a water ionizer. An ionizer splits apart the water molecule into alkaline and acidic ions through electrolysis. What the machine does is give you the ability to choose the pH. So you can set the pH to 8, 9, and 10 whatever you desire. Such water is known as ionized alkaline water.

The Problem with Ionized Alkaline Water
What most consumers don't realize is that ionized alkaline water is actually just highly processed tap water and a massive marketing gimmick. Why? Firstly a water ionizer does not purify water, so one has to do RO (Reverse Osmosis) to purify the water and remove all contaminants and bacteria if any. For every litre of water that’s purified using RO, at least 2 or more litres of water is rejected.
RO removes impurities, but it also removes all the healthy minerals present in the water. Next, the ionizer doesn’t always re-add or remineralise the water. It simply gives you a high pH that too this artificial high pH is superficial and often reduces over a period of time. Some brands re-add minerals, but scientific studies go to show that none of the methods used for remineralisation can give you the same taste or benefits that naturally occurring minerals can.
Another problem with ionized alkaline water? It's expensive, especially for something you can make in your own home too. As a consumer buying ionized Alkaline Water in India you pay at least Rs 100 per bottle for water that is essentially highly purified and processed tap water. If you bought an ionizer at home you would be able to manufacture the exact same water.
Why Naturally Alkaline Water is a Healthy Choice

If you live in a city and buy mineral water, this water is worth your money because you will likely not find an untouched and protected natural source close to a densely populated environment.

We did a quick google search and found only three popular brands which were certified as natural mineral water and have stood the test of time, namely Himalayan, Aava and Vedica. When it comes to pH as per their websites and packaging Himalayan has a pH of of 7.7, Vedica claims to have a pH of 7.9 and Aava Natural Mineral Water has an average pH of 8 making Aava the most naturally alkaline. A robust self-healing polymer made from a common chemical
Material scientists at RIKEN have created a self-healing polymer by using an off-the-shelf compound for the first time. The strategy they used is promising for improving the durability and minimizing the environmental impact of various commercial polymers for a wide range of applications.
Polymers capable of healing themselves when damaged would last longer and thus reduce costs and the burden on the environment. Current strategies for producing self-healing polymers mainly employ reversible chemical reactions, but this usually entails complex synthesis processes. Furthermore, self-healing mechanisms based on chemical reactions may not work in certain environments such as in water and acidic and alkaline solutions.
Ideally, material scientists would like to produce polymers that self-heal under a wide range of conditions, from readily available materials, using simple synthesis processes.
Polyolefins, which include polyethylene and polypropylene, are the most ubiquitous synthetic polymer in the world. "Polyolefins are all around us; they are used for food packaging, clothing, automobiles and electronic and medical devices," says Zhaomin Hou of the RIKEN Center for Sustainable Resource Science. "Making self-healable polyolefins would enhance the lifetime, safety, and environmental impact of materials used in many applications."

Cryo is a gentle giant with a heart of gold and he can be shy and secluded when he's not with his friends or his team.
He spent his early functioning as a "farm hand" on an energon-rich planet (Ergevaud; my old Metroid wasteland of a planet repurposed into a TF underwater mining colony). Life was harsh and unforgiving but it was alright as long as the company was nice. Most of the workers there had a low life expectancy because Ergevaud's dusty, radioactive atmosphere and highly alkaline waters (not acidic) could mess with their systems, among other things.
Their job was to dive for the underwater energon caves and bring the precious crystals back to the surface where they would be packaged and sent to a refinery on Cybertron, making it a rare and highly sought after blend of energon.
When their old operations leader died, Cybertron sent them a new one (they were insane, unfortunately) and things started to get worse for them. Half of the workers were deemed as too costly to keep functioning and their processors were disconnected and they were put in storage... until the remaining ones heard of the revolution taking place on their home planet. That's when they reactivated their friends and left the planet.

Listening: Billy Joel. I like Billy Joel. His songs are often what I want from music, which is a guy singing about being in or witnessing a situation. Billy Joel has, as all singers seem to have, songs about being in love or having a good time at a party or whatever but they come across more as like. Advice packaged up as a song, obvious examples being Vienna and Tell Her About It. My car's music player is usually somewhere in Billy Joel.

Reading: Finished Fugitive Telemetry earlier in the week, a Murderbot Murder Mystery that finally spends enough time on Preservation to really get into it.
Preservation reminds me of a setting an old friend came up with, although hers was more. Authoritarian. In a weird way that managed to weave in a strong sense of individual freedom and liberty with an extremely powerful and controlling state.
Murderbot really does work best as short stories, for me at least, the heavy use of descriptions of interacting with computer resources gets taxing after a while but in short bursts is really good at painting a vibrant and multifaceted information landscape as interesting as the physical spaces the story takes place in.
Also reading a Rane Audio Note I somehow missed when I read most of these a while ago, this one on low voltage circuit designs for audio, mostly centred on the problem statement "You've got a 1.5V alkaline cell, how do you get good audio out of this" and then very neatly and helpfully breaking down your possible concerns, specs to care about, matters of reference voltage creation, etc. Love industry application notes, fantastically handy pieces of documentation.

the old cases there are mitered white oak, which is nice but I way overdid the sizes, and I wanted to try my original idea, which was to cut the whole thing out of a solid chunk of wood. Rhodesian teak, in this case, super hard, super tough, unbelievably annoying to work with wood. Looks great.
Tools and Equipment: my usual non-water cleaning solvent is isopropyl alcohol, but I recently picked up some acetone for the first time in ages and it's really compelling for stubborn goo. For one thing, you can get 100% acetone off the shelf, and it's a really effective non-polar solvent. It is of course hideously flammable and very very volatile, so pick your fights.

What Is Ramen, Exactly?
Although it is believed that ramen originated in China, it is not known exactly when it was introduced to Japan. Ramen, however, is a common ingredient in Asian and Japanese cooking. Ramen is better understood as a soup dish that contains noodles rather than just the noodles themselves, despite the fact that in the United States it is frequently linked with packed, dry noodles.
Based on the type of broth used to make the ramen soup, ramen may be categorized into four main categories. Shoyu, the most well-liked variety of ramen, is prepared with a base of chicken broth flavored with soy sauce. Shio ramen has saltier, thinner chicken broth. Miso ramen is heartier and thicker because it has a rich, dark broth flavored with miso, or fermented soybean paste. Additionally, the broth for tonkotsu ramen is rich, creamy, and fatty since it is made from boiling pork bones.
The next ingredient in every ramen meal is the noodles, which can be either thin and curly or thick and straight. Instructions for Cooking Ramen
Ramen can be made at home in a variety of ways. In a Japanese or Asian grocery store, you can get fresh Korean noodles and make your own broth. Use one of the many instant ramen items on the market; some of them come with their own container, so you don't need a bowl; all you need to do is add hot water. You can even create your own fresh ramen noodles if you're feeling very brave. 
When making new ramen, cook the noodles for one to two minutes, drain, and then stir them into the hot broth. To make instant ramen, just follow the directions on the package. However, it's simple enough to prepare a quick homemade shoyu broth for your instant noodles, which is a substantial improvement over the spice packet.

Soft pretzels are made from basic, familiar ingredients—flour, water, yeast, and salt—making them a relatively simple but delicious snack.
Soft pretzels have deep roots in German baking traditions and have been widely adopted in North American food culture. Many people associate them with positive memories of sporting events, amusement parks, or street vendors.

The cooking method for soft pretzels is twofold- first it is boiled in an alkaline solution and then it is baked. Traditionally lye is added to a pot of boiling water, but lye can be very challenging to procure and dangerous to handle in the home kitchen, so using baking soda is an easy swap.

Why use baking soda at all?
Boiling the pretzels in an alkaline solution changes the pH of the dough's surface, which promotes faster browning during baking. It helps give pretzels their distinctive deep brown color. The alkaline solution also modifies the surface of the dough, giving pretzels that classic chewy crust. Without this step, the pretzels would be more like regular bread rolls, with a softer exterior.

Soft Pretzels
Makes 8 traditional pretzels or about 20 pretzel bites
1 1/2 cups warm water
2 tablespoons light brown sugar
1 package active dry yeast (2 1/4 teaspoons)
3 ounces unsalted butter, melted
2 1/2 teaspoons kosher salt
4 1/2 to 5 cups all-purpose flour
Vegetable oil
3 quarts water
1/2 cup baking soda
1 whole egg, beaten with 1 tablespoon cold water
Coarse sea salt
Combine the 1 1/2 cups water, sugar, yeast, and butter in the bowl of a stand mixer and mix with the dough hook until combined. Let sit for 5 minutes.
Add the salt and flour and mix on low speed until combined. Increase the speed to medium and continue kneading until the dough is smooth and begins to pull away from the side of the bowl, about 3 to 4 minutes. If the dough appears too wet, add additional flour, 1 tablespoon at a time. Remove the dough from the bowl, place on a flat surface and knead into a ball with your hands.
Oil a bowl with vegetable oil, add the dough and turn to coat with the oil. Cover with a clean towel or plastic wrap and place in a warm spot until the dough doubles in size, about 1 hour.
Preheat the oven to 425 degrees F.
Bring the 3 quarts of water to a boil in a small roasting pan over high heat and add the baking soda.
Remove the dough from the bowl and place on a flat surface. Divide the dough into 8 equal pieces, about 4 1/4 to 4 1/2 ounces each.
Either: Roll each piece into a long rope measuring 22 inches and shape and shape into traditional pretzel shape -OR- cut the dough into 20 one-inch pieces to make the pretzel bites.
Boil the pretzels in the water solution in batches (4 pretzels or 10 bites at a time). Boil for pretzels for about 1 minute or 30 seconds for the bites. Remove with a large, slotted spoon. Place pretzels on a baking sheet that has been sprayed with cooking spray. Make sure they are not touching. Brush the tops with the egg wash and season liberally with the salt. Place into the oven and bake for 15 to 18 minutes until golden brown.
Remove to a baking rack and let rest 5 minutes before eating.
