Gin Poached Salmon

A simple but rather elegant dinner, Gin Poached Salmon is deliciously soft and flavourful. Happy Tuesday!
Ingredients (serves 2):
1 litre/4 cups water
1/2 lemon
1 tablespoon juniper berries
1 teaspoon coarse sea salt
1/3 cup good quality Gin
2 (150-gram/5.30-ounce) salmon fillets
Pour water in a large, deep skillet. Squeeze in the juice of the lemon halve and add it to the skillet.
Stir in juniper berries and coarse sea salt. Bring to the boil over medium-high heat.
Once boiling, stir in Gin. Gently lower the salmon fillets into the skillet, and cook, 5 minutes. Then, reduce heat to medium, cover with a lid, and cook, about 10 minutes more.
Serve Gin Poached Salmon with Chives and Chervil Cream, and a side of Green Beans, New Potatoes and Cherry Tomatoes.

Now that I have discovered how easy (and not messy) it is to poach eggs, I'm doing it all the time. Today, I cooked an oven pizza. BAM. POACHED EGGS ON TOP. I got home from work at nearly 4am Friday night (Saturday morning). BAM. POACHED EGGS ON MUFFINS WITH HOLLANDAISE SAUCE AND SALAD AND CURED MEEEEATS. I am unstoppable. So far, I have poached 8 eggs and they have all been pretty perfect. THE ONLY THING THAT NEEDS CLEANING IS THE PAN AND THAT'S JUST BASICALLY RINSING OUT THE EGG TENDRILS THAT MAY HAVE FORMED!

Hollandaise Salmon Pasta

This beautiful Hollandaise Salmon Pasta, with its more-ish silky sauce, makes good use of leftovers and a hearty and tasty lunch. Happy Tuesday!
Ingredients (serves 3):
2 ½ cups short pasta (such as penne or rotini)
a small bunch fresh Garden Chervil 
3/4 cup Chervil Hollandaise Sauce
about 180 grams/6 ounces leftover Poached Salmon
1/4 teaspoon freshly cracked black pepper
In a pot of salted boiling water, cook penne according to package’s directions, about 9 minutes until al dente.
Finely chop Garden Chervil.
Once the penne are cooked, drain quickly, saving about 1/3 cup of the cooking water, and return pasta to its pot. Stir in Chervil Hollandaise Sauce, and return over a low flame, gradually adding starchy pasta water until a smooth sliky sauce coats the pasta beautifully.
Flake in Poached Salmon, and cook, over a gentle heat, until warmed, stirring often to prevent sauce from curdling. Fold in chopped Chervil, and season with black pepper.
Serve Hollandaise Salmon Pasta hot, with a glass of chilled dry white wine, like Sauvignon Blanc or Cheverny.
