Headcanon:

Rick/Adventure Core is the Rainbow Core, just corrupted. Each colour on the rainbow is meant to be a different aspect of his personality, and the reason he’s corrupted is due to his code’s focus on the “adventuring” aspect, represented by his eye going from multiple colours to only green.

In between the events of Portal Stories: Mel and Portal 2, he ended up getting corrupted.
