On tonight’s episode of the Coronavirus Cooking Diaries, I decided to use some of the ramps you saw a couple days ago. I blanched the leaves and bulbs and chopped them up. I decided to use them in a chicken thigh recipe I found in the NYTimes Cooking which I improved upon. Ramps, are a cross between garlic, a small leek and a spring onion. I thought they would be the perfect replacement for Kale which this recipe originally called for. I don’t particularly care for Kale but I do love Ramps! I slowly rendered the chicken thighs skin side down in a heavy bottom pan with some olive oil, butter salt and pepper. Once the fat started to render nicely I transferred a significant amount of the liquified fat to another pan where I sautéed smashed/chopped garlic. I tossed in the chopped/blanched ramps with some salt and pepper. As the ramps became tender I added a can of rinsed Butter beans, some left over boiled potatoes, thyme, oregano infused balsamic vinegar, the juice of half a lemon and a healthy dose of chicken stock (stock I made last week with the carcass of the roasted chicken we had for dinner. One meal can easily contribute to others.) While sautéing the ramp, garlic, bean potato mixture I flipped the chicken thighs and let them quickly brown bone side down. Once the ramp/beam mixture came to a quick boil, I added the whole thing to the chicken thighs and reduced the heat to allow to simmer and to finish cooking the chicken. Simple, quick, easy and delicious! The Oregano Balsamic was an excellent addition. What did you have for dinner? On tonight’s episode of the Coronavirus Cooking Diaries, I give you to the Northeastern delicacy called the Ramp. I like to describe ramps as a cross between garlic, a small leek and a spring onion. Ramps are smaller than scallions and leeks, taste stronger than a leek and are more garlicky than a scallion. I was able to score some when my friend @cheftomarket picked up some for me at the farmers market. I decided to pickle the bulb and stems, blanch the ramp tops yo make compound butter and pesto and make kimchi with the roots. There is nothing better than charred pickled ramps and they taste delicious! If you never had ramps give them a try you won’t be sorry. Ramps are only around for a few weeks in April and May and are found in the Apalachin Mountains.
