Truffle Purple Sweet Potato Tart Crust In a similar fashion to the Rosemary & Sage Tomato Tart, I am making another tart with a sweet potato crust. However, this time I switched out the regular sweet potatoes with a purple variation for a big splash of color and added a couple different truffle seasonings. If you do not have these seasonings or cannot find them at the store, you can definitely make the crust without them. Also, for those of us on a budget when we go to the grocery store, ain't nobody got the funds to go out and purchase actual foraged truffles. Depending on the variety, they can be as much as an entire grocery bill! That all being said, this crust will be used as part of a Truffle "Mac" n' Cheese Tart that I am conjuring up based off of the White Bean & Spinach "Mac" n' Cheese I made in the past. 2 large @friedasproduce Stokes Purple Sweet Potatoes, peeled & grated ½ tbsp truffle Italian seasoning ½ tbsp fresh rosemary, finely diced ½ tbsp fresh sage, finely diced ½ tsp black pepper 1 tsp @traderjoes Truffle Salt w/ Black Truffles ¼ tsp red pepper flakes, optional 1 large egg DIRECTIONS Set oven rack in the middle level. Preheat oven to 450°F. In small batches, place the grated sweet potato in the middle of a large piece of cheesecloth. Gather the four corners of the cheesecloth and squeeze as much of the moisture out of the sweet potatoes as possible. In a medium bowl, whisk together the egg, truffle seasoning, truffle salt, rosemary, sage, black pepper, and red pepper flakes. Add the sweet potatoes and mix until well combined. Press the sweet potato mixture into the bottom and up the sides of a 9-inch tart pan forming about a ¼-inch layer. Place the pan on a rimmed baking sheet and bake for about 20 minutes. Remove from oven and allow to cool in the tart pan. . . . From my Tuscan kitchen, I started making Truffle Potato Chips as an aperitivi for our Truffle Tailgate. And, it was actually a flavorful success. This is one of those too simple to be true recipe hacks that is big on elegant and gourmet truffle flavor on the simplicity of a potato chip. I have to tell you: It is addictingly delicious. Many of you Conti clients already have our white truffle oil and truffle salt in your cupboard. I have suggested storing our truffle oil in a stainless atomizer. It helps to keep the olive oil from discoloring, losing flavor and much easier to dispense. Since I am in Italy, I use an Italian made chip (almost kettle style in thickness). This certain brand is not as salty as some chips. Scatter chips on parchment paper. Spray a thin layer of Conti Truffle Oil. Add a sprinkle of Conti Truffle Salt. Gently toss the chips together to distribute truffle oil and truffle salt. Place in a bowl. Day 22...condiments are FUN!!
Going into the whole30 I was sure the most challenging aspect of this program would be the lack of “off the shelf” condiments. I am the queen BAE of ALL the condiments. I mean, I put ketchup on my ketchup. My friends understand I need a full bottle and send me ketchup meems regularly. So this no sugar added condiment life was a whole new chapter for me. I’m scaredddddd, I thought going into this.
With that fear, I took condiments head on. What can I make throughout this journey to keep my food exciting, tasting amazing, and get creative. I’ve utilized the whole30 recipes for some and went off the map for others. From ketchup, to roasted red pepper sauce,to BBQ sauce, to mayo, ranch, beet hummus, and cashew “cheese” my meals have been NOTHING but exciting!
A really proud moment in my whole30 journey was nailing the mayo followed by ranch (pictured above). My first attempt at the mayo, I thought I nailed it and just assumed that it was supposed to taste different than store bought mayo. It was very olive oily, but I ate it anyways. Ok round 2, I actually bought the lite olive oil – THIS IS KEY PEOPLE! Whipped and creamy and BETTER than store bought mayo. I will actually never purchase mayo in the store again.
Andddd what’s better, I can take that mayo and create Ranch, Oh OK! Now, whole30 has a ranch dressing but I made mine with a twist. Once again, I like some zing to my food so I added chili powder, red peppers, and a dash of cumin. Zesty ranch, amazing! I love the coconut milk base, the texture is perfect, and doesn’t feel too heavy (plus it’s guilt free). Even better, I have a mini mason jar of the spice combo leftover for later.
Now, an ultimate success was the cashew cheese! Let me start by saying I am not craving cheese at all so this is not a substitute, this is simply me trying to invent new ways to add some fat to my problem. So hence the creation of TRUFFLE CASHEW “cheese” cameto fruition.
This recipe takes some prep so if you are liking the sound of it, go buy your cashews now!
1. Soak 2 cups of raw cashews overnight 2. Drain cashews and place in a blender or food processor. I used my ninja blender and it worked great. 3. Add 2 tablespoons of lemon juice, 2-4 tablespoons of water (start with less and add more after blended if needed), 3 tablespoons of nutritional yeast, 1 tablespoon of truffle oil, ½ teaspoon of truffle salt (you can use Himalayan salt as well I just prefer things very truffley), teaspoon of pepper, and any fresh spices if you prefer (I added as wanted depending on the recipe) 4. Blend until smooth (the consistency will be similar to ricotta cheese) 5. Top with a little more truffle oil (yea I’m obsessed) 6.Chill and serve!
