Sautéing food is method of cooking that was invented in France. Sautéing is when you lightly fry food in a pan on high heat. This method makes the food crispy on the outside and soft on the inside and was invented in the 1800s. There are many different methods to sautéing food, some are healthy and some are not as healthy but they all taste just as good. The method below is a steam and sauté method which using less oil in the frying process, different degrees of heat, and can be used on different types of potatoes. Stressed? We’ve had some medical issues, workmen in the house for days and the world is going nuts. So, for me, that means I have to have a potato or two. Potatoes are my top comfort food, I crave them like other people crave chocolate. Is that crazy? Anyway, here’s one of my go-to preparations. Simple, easy. Rosemary Potatoes 16-18 small “new” or red bliss potatoes 2 tablespoons butter (or use vegetable or olive oil or margarine) 2 tablespoons vegetable or olive oil Salt and freshly ground black pepper to taste 1-1/2 tablespoons chopped fresh Rosemary (or 1-1/2 teaspoons crushed dried Rosemary) Cook the potatoes in lightly salted simmering water for about 15-20 minutes or until tender. Drain, let cool slightly and peel. Heat the butter and vegetable oil in a sauté pan over medium heat. When the butter has melted and looks foamy, add the potatoes. Sprinkle with salt and pepper and cook, turning the potatoes occasionally for about 10-12 minutes. Sprinkle with the Rosemary and cook, turning the potatoes occasionally, for another 8-10 minutes or until the potatoes are crispy and browned.
