My hubs and I had the best date at a sushi 🍱 making class today! We wore sesame oil covered gloves the whole time so this is the only photo I got. 😞 My Sunrise Roll looked so pretty before I destroyed it with the “student” knives they gave us. I wanted to take a second to share something that I came across this week that afterwards I realized I saw a true to form example of entrepreneurship. On Monday I attended a 2 hour Sushi class taught by a Sushi Chef named Kelly. As the class went on I started to realize what I was actually seeing was someone who had a passion for their craft, who saw a gap in the market, and decided to venture off on their own and make their dream a reality.She had a great but small and manageable set up. She ran the class in a corner of the bar area of a brewery. (We are in Charlotte NC and there are other people but the area was fairly private.) The first part of the class was a lot of information. She covered exactly how to make the perfect sushi rice (no easy task), down to where to buy it, how to wash it, what kind of rice cooker, etc. She covered where to get the best fish, how much to spend, what types of meat to use, how to be safe, and the risks you take and how to best avoid them. She went over all the types of sauces and how to make them yourself, as well as the ones she recommends you buy pre-made. She told us all about Nori (sushi seaweed wrap) and where to buy it, store it, etc. She had a batch of rice that was finishing right as we showed up and she began to prepare it while she was explaining how to cook and season it. We were at a brewery and were encouraged to have a few drinks if we pleased and enjoy ourselves (so long as we didn't become obnoxious). There would be a cheat sheet emailed to us when the class was completed with all the information she was going over. When we sat down there was a pre-made sushi roll (with raw fish, I assume tuna) so we weren't waiting the whole class to eat. It was really a great set up.Above all, she was passionate and personable. She obviously knew what she was doing because she was fielding questions, joking with us, and preparing everything all at the same time. We talked about everything from catching fresh tuna, to importing real wasabi. The entire class flowed very well and about an hour in, the rice was ready and it was time for us to roll our own sushi. She portioned out the rice she had just finished cooking and seasoning and set out some imitation crab and cucumber (while we were on a 15 minute break and socializing with classmates) so we could really do it on our own. She walked us through the entire process and best ways to handle the rice so we don't squish it and ruin it. We added our crab and cucumber and she showed us how to roll it. She went over a couple options and landed on squared sushi. When we finished she was efficient about cutting and plating everyones rolls and we could grab any sauces we wanted and enjoy it with the class. It was quick, it was clean, it was personable, and we met and chatted with a few fun people.Now for the part that excited me, the entrepreneurial side.We were at a brewery, which at first I assumed she likely had to pay to be at, but the more I thought about it, she brought us there on a Monday night and most of us paid $5-7 a beer for the two hours we were there. I assume the brewery let her use the otherwise unoccupied space for free, or maybe even paid her a small amount to host it there.The class was $40 a ticket. I did not count, but there were approximately 20 of us there. We each got two rolls, one tuna and one crab, used some of her sauce, and had a pair of plastic gloves to handle the rice so we didn't get it stuck to our hands. She had a bamboo mat for each of us to use, and was inside a gallon ziploc bag for her setup ease and to keep them clean. (normally they're wrapped in plastic wrap) Based on my calculations there is a small material cost here but I'd say most of it is time.We found out about it from an instagram page @eatdrinkclt, who apparently took the class themselves and promoted it there. Could be free advertising, I don't know for sure. We signed up on her website ( http://www.birminghamsushiclasses.com/ ) which could definitely use some work but obviously is doing the job its designed to do (our class was sold out).At the end she promoted herself. Asked that if we took and posted any pictures that we tag her @sushiclasses and I'm pretty sure just about everyone did.In terms of entrepreneurial activities, I don't think shes putting 6 figures in the bank anytime soon, but for me at least thats not what this its about. She was a sushi chef before doing the classes and she now gets to meet and socialize with different people in different cities and show the world what she loves to do. She mentioned that because of all of us, she didn't have to have a real job.As impressed as I was, when I left I was thinking about the things that I would do differently. In terms of the class and the flow and the venue and promotion (aside from the website) I wouldn't change a thing. I do think if her site was updated she would have an easier time filling these classes. Ours was sold out and the next one coming to Charlotte is already sold out so she's not exactly struggling here either, but I think theres always some room to grow. I am not a cook, nor do I particularly enjoy trying to pretend so I had no intention of doing this on my own, but thats how the class was framed. Others in the class did seem to intend to do this on their own however. To get all the necessary items at the best price, we would need to go to the Asian market, a regular grocery store, and Walmart. I think there may be an opportunity at the end of the class to offer some sort of prebuilt package. The right knife, a set of bamboo rollers, sushi rice, precut Nori (this easily goes bad, I would think this is pulled from her class supply on the day the kit is sold), etc. I don't know exactly how feasible this is but something that crossed my mind. I know she wouldn't want to turn the class into a sales pitch, but if it had been mentioned at the end as an after thought I think some people would have been interested in the ease of buying all the recommended materials at once. Maybe its a way she offers a little value and makes just a little extra at the same time. She travels from city to city so I'd say selling them online is likely out unless she could set up some sort of dropship situation, but the entire idea is its her recommended products so it couldn't be AliExpress or anything like that. One topic we did spend some time on was the rice cooker. She had very specific reasons for buying certain types of rice cookers. I imagine she could do the same spiel and at the end say I have a list of my recommended cookers on my site, and have an affiliate link to Amazon. Same with knives and anything else. I don't think either of these ideas are going to drive a significant amount of extra revenue, but I also don't think it could hurt. I think its likely the content is already written/she could write it herself considering she talks about it every class, and set up an additional small revenue stream once that continues to pay out. It would still all be dependent upon her teaching the classes but she's doing that anyways. The last and likely most promising I see would probably be starting an advanced class. She appears to be circulating the same areas, she has email addresses of those that wanted her cheat sheet; I think a class where theres an emphasis on raw fish, cutting it and preparing it, how to pair ingredients etc (I know nothing about this but I'm sure she has more knowledge than imitation crab and cucumber sushi) would go over pretty well.Just wanted to take a few minutes to share that with the community here. A venture a little different than what is normally seen here. I also felt as though it wouldn't exactly be easy to copy considering in order to do this you'd already need these rice cooking skills (among so many others) which I was assured by others in the class, is not easy.I listed her site and her instagram page so if anyone wanted to check it out the info is below as well.
