RUSTIC & UNFORGETTABLE

Last year September, I volunteered to the event “City Cider” of a local charity organization “Not Far From The Tree” which was held at Spadina Museum. Besides the sporty activities, as the name that the event was called, almost of booths sold ciders or related-cider beverages or foods. In this occasion, I got a chance to experience a strange but magical flavor that I had never tried in my life.

I so excited in promoting hamburgers in our booth so I forgot to wander around to try any foods until the fair was dismissing, one of old lady in my team stepped forward to me and asked whether I want to share with her a portion of pork or not – which named Cider-Braised Pork Shoulder. I skimmed the cup on her hand and saw a braised pork with rustic appearance without any eye-catchy color and I did not intend to taste. Why? In the Southern cuisine of Vietnam, color of foods is dignified. For instance, stewed fish must be caramelized by sugar or fresh coconut juice. Even its flavor is good but if no color emerges, nobody wants to stick their chopsticks.

However, I still spooned some meat to taste as a sense of decency. A charming smell was breathed into my nostril without original smell of meat, perhaps it had been blanched well in wine or some liquid before cooking, I think. Awesome! This word bloomed in my mind right away when first bite of meat melt on my tongue. First impression about the pork meat was its aromatic sour that came from the smoked crabapple – a kind of tiny apple that I used to picked in a tree registrant, I had not complimented it because it was too sour for fresh eating. Ironically, currently I was praising it and wondered why that kind of fruit could be extracted such wonderful taste of sour in cooking. Moreover, thanks to cider the meat was tender reasonably without pork smell, I bit and chewed elegantly with whisper sound.

Next taste was the gentle sweet taste from pork, I guessed the delicate combination between crabapple and pork itself had released a comfortable taste throughout my palate. It was a discrepancy of sweet between sugar and natural taste of juice. In my countryside, white sugar is often used to increase sweet in dishes as we rarely use juices in our recipes, except coconut.

The braised liquid was seasoned salt moderately in order to eaters could enjoy the authentic taste without bread or rice combination like Vietnamese usually do as we rarely eat braised meat solely. Nothing was remarkable without flavor contribution of crispy chick peas - natural nut fat smelt on the tongue, green, white and purple onion - sharp aroma release thorough the nostril, , some Italian parsley and several yellow petals (maybe marigold, I was not sure), these bitter couple liked catalysts to which enhance other tastes combine and balance in harmony. Perhaps this is the “legendary” taste umami that people often mention in the art of cooking, I supposed. Quickly finish my portion and wanted to order new dish but the stock pot was empty thanks to long line of people were queuing…

 The culture of cuisine from a tropical country (Vietnam) where plants and vegetables absorb sunlight daily so its flavor extremely strong and the gastronomy of a temperate land (Canada) whose ingredients are mainly grown on greenhouse or imported therefore their taste is less appealing (only my feeling and opinion). This somehow explains why I did not actually enjoy Western foods when I had arrived Toronto. Nevertheless, this dish and its unknown recipes changed totally my palate. It successfully evoked almost of five senses of perception inside of me, cleverly inspired how to feel the authentic taste of every ingredient but no need to season variety of spices but still made unforgettable experience to eaters.

Transparently I extremely love this “discovery”, it is the unique Western style dish that I have been keeping in mind and desire to eat it again to satisfy my picky stomach. I commit this dish is perfect without negative comment about its recipes and ingredients though its austere decoration. Also, I have checked the website of Her Father’s Cider Bar and Kitchen (the catered food court) and unfortunately could not find it in the menu.

This experience on this braised pork has changed my ideas about delicious foods. I always keep in mind that a dish is called “tasty or delicious” when it can meet requirements of fascinating appearance and strong tastes. However, sometimes a humble look accompanies a natural-oriented taste would be create a memorable impression to diners. I probably adjust my cooking style, not utilize too much spices into my meals because they may beat the nature of tastes from vegetables and meats (Japanese cuisine do this very excellent).

<Japanese luxurious foods> 

 In addition, I learnt that one taste like sour can be extracted from variety of sources, particularly apple cider vinegar and rice vinegar, the former sour is slighter and gentler than the latter. A good cook or chef will know how to manage his recipes if in case some ingredients are loss or unavailable, it can be defined liked an “substitute”. When my grandma forgot to make rice vinegar for her salad, she used lime juice instead and we still complimented hers as usual. Hence, memorize a recipe is essential but study to choose or find out new alternative is also vital in the role of an eligible chef.
