Pizza lovers have always been spoilt for choices here in Metro Manila. We are mostly familiar with the big chains like Pizza Hut, Shakey’s, and the homegrown Greenwich. There’s also the popular New York-style pizzas from Yellow Cab and S&R with their thin crusts and big slices. But I just recently discovered another unique way of preparing and serving pizza that I had not seen before. This time, I’m having a luxurious Detroit-style Pizza from a restaurant with a name that sounds just as interesting - Easy as Pie, Piece of Cake.

“Easy as Pie, Piece of Cake” is a mindset that is carried by the owners of this quirky pizza restaurant. Chef Aaron Lau, who once worked at db Bistro Moderne by Daniel Boulud in New York, and wife Nikki Oropesa-Lau have always had this idea of taking simple food and transforming it to the next level using unpretentious methods. This modern-luxe pizzeria has reimagined the unique Detroit-style pizza. EAPPOC was actually born during this global pandemic, having started operations late last year by looking at the current situation with a silver lining.

So what exactly is a Detroit-style pizza? The first thing I noticed is the thick rectangular shape of the pizza. I’m a little bit familiar with Chicago-style pizza and its deep-dish pans, but it seems that Detroit is also known for its unique way of servings pizzas. With the automobile industry as the main export and highlight of the city, the industrial blue square steel pans that were used for holding auto parts somehow ended up in the kitchens. Buddy's has the distinction of being the originator of the Detroit-style pizza back in 1946, with the square pans giving these pizzas its unique shape and structure.

There are some people who always leave the crust when they eat a pizza, but for Detroit-style pizzas, these crusts are actually the prime perimeter properties. The lightly burnt walls and corners formed by the square pans and the caramelized cheese crust called “frico” gives the Detroit-style pizzas its unique “edge.” The crust gives way to a light and fluffy inner bread topped by your choice of meat and seafood options.

It was a lucky day for me because Easy as Pie, Piece of Cake was introducing its newest and most luxurious pizza variant, The Russian (P2400). This exquisite seafood pizza comes topped with house-cured smoked salmon (lox), lumpfish caviar, salmon roe, EAPPOC cheese blend 2.0, lemon-vodka cream, house-ranch, onion spring and onion dill. This is definitely not your typical pizza.

I’ve eaten other seafood pizzas before, but this is undoubtedly the best one I have ever had. The Russian was jam packed with salmon, caviar, roe, and other delightful toppings. You can really taste the freshness and quality of its ingredients. The pizza may be a bit pricey, but if you are planning a special occasion or looking for a special gift delivery, then this is the best option you can find.

Easy as Pie, Piece of Cake also has some other delicious items on the menu. The Y2K Lasagna (P480) is a creamy and cheesy lasagna that comes with savory meatballs enveloped in their signature EAPPOC cheese blend. You can never have too much cheese so this should be great to have as merienda or to pair with their pizzas.

They also have some tempting desserts to finish off your decadent meals. The Chocolate Chip Cookie (P180) and the PB & J Cookies (P180) are huge cookies that will delight kids and adults alike.

Yall I love these books. They're so much fun and full of joy. The Bromance Series is right up themmre with Talia Hibbert's Brown Sister books as my favorite romance series. Isn't It Bromantic focuses on a perennial fan favorite #TheRussian aka Vlad. Mostly relegated to comic relief in the first 3 books now we get a glimpse into Vlad his sweetness and tender heart bruised from a "marriage of convenience" with his childhood best friend can he convince Elena to take a chance on the real thing. This book was amazing. I read it in basically a day. I couldn't put it down. The bathroom scene and the bros talking about Vlad's "magnificent ass" will honestly be one of my favorite scenes for a long time. Also can I please get more Malcolm?
