New release! 54% Brazil Nut Marañón, Peru This bronze award winner at the European @chocawards 2022 was a former Limited Edition bar, but due to its popularity and deliciousness has now earned its own box and is part of our range. We adore Brazil nuts and think they just have a bad rep or something? We’re just not sure why there is not a huge amount of chocolate+Brazil nuts available. This bar is an ode to the Brazil nut. We found that our Marañón cacao has just the right fruity tang and creaminess with its light chocolate notes it doesn’t fight with the Brazil nut, but allows to carry its flavours beautifully and fully. Posted @withregram • @eglazener The fabled Fortunato No. 4 cacao from the Marañon River Canyon in Peru is the starting point for the Solkiki Dark Milk Union House Blend Coffee 60% bar. The base chocolate here is Solkiki's award-winning vegan 60% Salted Caramel, Dark Milk, Marañón, Peru, made with coconut and a pinch of salt in place of dairy. Solkiki is one of the few makers I've seen pull this off (though many are trying) without having the coconut become the dominant flavor in the bar. The chocolate itself is redolent with caramel and light licorice flavors. So much so the chocolate was dubbed "salted caramel ." Notes of nutty banana bread are also part of that base. Solkiki adds a smooth, bright, and boldly intense coffee with a deep natural sweetness from the UK's Union Hand-Roasted Coffee. And we have that old saying in the USA, “As 🇺🇸 American as 🍎 apple 🥧 pie,” that dates back to the 1860s. So, what better way to kick off summer than with the Solkiki Dutch Apple Crumble 63% bar from the spawning land of 🇬🇧 England. It’s a vegan 63% milk chocolate bar made from Gran Nativo Blanco cacao from Peru, coconut, apple, oats, and spices. It’s like what we call a Dutch Apple Pie but in a bar and with chocolate. Yes, I get that a crumble is simpler than a pie, but this fantastic bar does remind me of Dutch Apple Pie. The apples, oats, and spices are in perfect balance with the chocolate. The coconut (it’s vegan milk, so no dairy) provides the requisite creaminess without overpowering in flavor. In fact, it provides a nice light background flavor note. The underlying fruity, floral, and slightly nutty notes of the Gran Nativo Blanco cacao from Peru pairs well with the fruit dessert concept (chocolate is a tropical fruit, after all) and spices. Solkiki is a relentless pursuer of flavor, and this bar is no exception. It’s a tribute to a classic Dutch treat from chocolate maker Iris’ childhood, and Bob (the spouse and chocolate-making partner) seems to enjoy it too. They say the bar is “Lush & Chompable” in the description on the package. I’d have to 100% agree! Highly recommended Iris Stork and Bob Spink founded Solkiki in 2007. No, they're not rolling it and lighting it up. Instead, they are adding smoke in the process of making the chocolate from the beans. The Solkiki Olive Wood Smoked Peru 62% is one such bar. Smoke flavor usually is a defect introduced when cacao is dried after fermentation by fire on farms in areas with high humidity or high rainfall. A few dwindling exceptions exist where the cacao can be gently enough processed to produce a good flavor. But, mostly, people don't like heavy smoke (from who knows what fuel) in their chocolate. This bar is not that. The olive wood smoke here is mild and pleasant. It adds a sweet (! yep, sweet!) note that makes this bar seem much sweeter than its 62% cacao content. It also brings a depth of flavor reminiscent of a distilled fine spirit added to the cacao (none is), with savory and earthy warm flavor notes akin to lightly smoked apple brandy. This juxtapositions well with the bright fruitiness of this excellent vegan milk chocolate made from Peruvian cacao and coconut milk (which adds just a wisp of coconut flavor). The two play off each other in ways that heighten, deepen, and expand the appealing flavors of the bar as a whole. It makes the whole more complex and delicious. The smoky and fruity notes persist in the finish and aftertaste, with the smoke becoming a bit more earthy and slightly more potent in the aftertaste. For some, this smoke in the aftertaste will be too much. However, I found it still very pleasant. It's almost as though you were eating this exquisite vegan milk chocolate with a glass of fine smoked apple brandy. It would be best to taste this bar to have this unique experience for yourself. For #tttt_emotions I want to shine a light on our 68% Dark and 60% Dark Milk Marañón, Peru. Unfortunately I missed out on #tttt_mylk last week, but hopefully I can make up for it with this post. All of our Marañón chocolate bars we hold especially dear because they were the first beans we bought from actual source. In those days it was much harder to find cacao and these beans were especially good. It took us a lot of headaches to figure out the right roast with a notoriously temperamental cacao and at times it drove us nuts not being able to get consistent results. We came close to throwing in the towel. When we finally did manage a good and stable end result we posted the bars to Dan Pearson of @maranonchocolate and he was just so lovely about our chocolate, it filled us with pride and confidence and new hope to carry on on this road.
