Bacon Crack • Benton's Bacon heavily coated with Whiskey Bent BBQ/Kendrick BBQ The Pecanerry Rub, ample sprinkle of cayenne pepper, and Crown Maple Applewood Smoked Maple Syrup. Super Smoked at 225° on my Traeger Grills Ironwood 885 using Apple Wood Pellets for about two hours, until bacon and coating became stiff. Small batch #wingwednesday • Whole chicken wings, seasoned with Whiskey Bent The Bird Dry Rub, smoked at 225° on the Traeger Grills Pro 22 for two hours with Pecan Wood Pellets, then bumped the grill temp up to 375° to get that crispy crispy. When you nail the brisket 🙌🏻 • I've been overcooking my briskets recently, leaving them dry and crumbly. Not this time. • 14 lb brisket, first applied a light coat of Allegro Brisket & Fajita Sauce for binder then a thin base sprinkle of Whiskey Bent The Grind Coffee Blend Dry Rub then an ample dusting of Whiskey Bent/Kendrick BBQ Ancho Americano Rub, topped with a coat of coarse Reload Magnum. Let that sweat for about an hour. • Set my Traeger Grills Ironwood 885 on Super Smoke at 200° using a mix of Traeger Meat Church Pellet Blend and Mesquite Wood Pellets. Inserted my Meater Plus Wireless Thermometer into the thickest part of the brisket and put it on the Traeger for an overnight smoke at 10:00 pm. Checked the smoke and IT early the next morning, raised the temp on my Ironwood 885 to 225° while maintaining Super Smoke. Wrapped the brisket in butcher paper when internal temperature reached 160° and pushed thru the stall. Hit goal of 195° at 3:00 pm, pulled the brisket, doubly rewrapped in butcher paper and then an old lint-free towel and set in my cooler to rest for a couple of hours. Started unwrap and slicing on my Rosewood Block Brisket Board as my family and friends arrived for dinner. Got some great shots and videos thanks to my brother-in-law @volgrad90 • The brisket turned out super juicy with a great bark, decent smoke ring, passing the finger droop test, but most importantly absolutely delicious. Beef short ribs for breakfast? You're darn tootin' • Long overdue cook for the hosts of The Starting Lineup, Will West and Tyler Ivens, on Sports Animal 99.1 FM in Knoxville, TN • All night smoke on these Tennessee Beef short ribs from Simpson's Meats in Knoxville. • Trimmed, sprayed with Duck Fat Spray, base rub of Traeger Blackened Saskatchewan, secondary rub of Whiskey Bent The Grind, and a generous top layer of Reload Magnum. Super Smoked at 225° on my Traeger Ironwood 885 until internal temperature reached 165° then double wrapped in butcher paper and bumped to smoker temp to 265° to finish at an IT of 204°. Rewrapped, coolered, and brought to the radio program remote site at Frazier's Carpet One on Oak Ridge Hwy in Knoxville. Sliced and served to my favorite morning radio show hosts. • These guys have kept me sane in my extensive work travels; listening to their podcast on the road keeps me in touch with home and satisfies my sports fix all while definitely making me laugh a lot. Oh that Snake River Farm Waygu Tritip... • Reverse seared this one • Sprayed lightly with Duck Fat Spray, base rub of Whiskey Bent The Grind topped with second coat of Reload Magnum, Super Smoked on my Traeger Ironwood 885 at 225° to an IT of 110° then seared on my Traeger Scout on the cat iron griddle until IT reached 135°. Piles of wings for #wingwednesday • Fun cook for my daughter and her friends • First sprayed all the wings with a coat of Duck Fat Spray then seasoned half with Whiskey Bent Sweet Mash and the other half with the last of my Traeger Leinenkugel's Summer Shandy Rub. Super Smoked them at 225° using a Hickory and Cherry Wood Pellet blend on my Traeger Grills Ironwood 885 for 1½ hours then raised the Traeger temp to 375° to crisp them up and finish. • Flavortown on both these: Sweet, smoky BBQ palette on Whiskey Bent Sweet Mash wings, slightly tangy, fantastic flavors. Gotta celebrate #nationalhamburgerday with Tennessee Butter Burgers • Local Tennessee ground beef from Simpson's Meats in Knoxville seasoned with Whiskey Bent The Rocks, a large pat of butter, and a little Duck Fat Spray. Salmon on the Traeger • Sprayed a cast iron skillet with Duck Fat Spray. Sprayed the salmon filet also with Duck Fat Spray then a coat of Whiskey Bent 100 Proof Everything Rub and a light sprinkle of Traeger Fin & Feather. Smoked at 225° for 30 minutes then raised the temp on my Traeger Grills Pro 22 to 325° to a flaky finish. So Very Cherry... • Ribs. My favorite BBQ cook. First an ample yellow mustard slather for a binder then a heavy application of Whiskey Bent/Kendrick BBQ The Pecanerry Pecan Cherry BBQ Rub. Let that sweat in about 30 minutes while my Traeger Grills Ironwood 885 reached 225° on Super Smoke using a blend of... Pecan and Cherry Wood Pellets of course. Super Smoked the ribs using my Meater Plus Wireless Smart Meat Thermometer to monitor the internal temperature until the ribs achieved 200°, then glazed the rack with PS Seasonings Cherry Bomb BBQ Sauce and let that set up firm until IT on ribs hit 203° on my Meater Plus. Removed promptly, rested the rack for a few minutes while all the photos were taken, then devoured that deliciousness. Turned out amazingly gorgeous and uber delicious with a deep mahogany color and rich sweet cherry and smoked pork palette.
