Ribs with a purpose 🙏🏻 • Special cook for my guys at The Starting Lineup on WNML The Sports Animal 99.1 FM in Knoxville celebrating @willwestwnml and his amazing career in the sports talk radio industry • Three racks of baby back ribs, mustard binder, heavily rubbed with Reload Rub Double Action, smoked for hours on my Traeger Grills Ironwood 885 using Apple Wood Pellets, two racks sauced with Bone Cleaner BBQ Peach Habanero Sauce at the end of the smoke • This was a cook of love and gratitude. Another quick dinner. @absteaks wagyu steak and tiger prawns. Seasoned them with @reloadrub, smoked over @greenmountaingrilles, and then reverse seared in cast iron with butter and fresh rosemary. Added some garlic bread and quick salad. Damn it was good@buffalowbbq #buffalowbbq

Crushing #wingwednesday • Smoked wings from my Traeger Ironwood 885 • Marinaded overnight in Traeger's Smoked Bloody Mary Mix and The Peach Truck Peach Hot Sauce, patted dry, Duck Fat Spray base, Reload Rub Packin' Heat Seasoning • Super Smoked at 225° for an hour then bumped grill temp up to 375° to crisp and finish. Tossed the wings in Bone Cleaner Peach Habanero BBQ Sauce and put back on my Traeger for 10 more minutes to set and firm up the sauce. These bad boys were SPICY and delicious. Happy Thanksgiving y'all 🙏🏻 • Smoked then roasted turkey breasts, two ways, both overnight brined with the Traeger Orange Brine Kit enhanced with additions of Crown Maple Applewood Smoked Syrup and Jack Daniels Tennessee Whiskey • 1. Light application of Duck Fat Spray, seasoned with Smokey Boys Smokey Dust Hen & Fin and Traeger Fin & Feather rubs • 2. Base coat of Duck Fat Spray, initial rub of K-Town Krack Hot Chicken Dust and a secondary coat of Whiskey Bent The Blazin' Bird Spicy Dry Rub. • Super Smoked both breasts on my Traeger Ironwood 885 at 225° until IT reached 125° then raised grill temp to 350° to finish the poultry at 165° IT on my Meater Plus Wireless Smart Meat Thermometer, then rested about 30 minutes. • Two little spiral cut double smoked hams • 1. Yellow mustard slather base, base rub of Traeger Pork & Poultry then a second coat of Kosmos Killer Honey Bee • 2. Yellow mustard base, heavy base rub of Reload Double Action and a light sprinkle of Reload Packin' Heat, then for coated with Southern Farms Stingin' Sweet Honey for a nice glaze coat in the last 10 minutes of the cook • Smoked both hams at 225° for two hours on my Traeger Pro 575 then raised temp to 325° to finish at an IT of 165° • Both turkey breasts turned out super juicy with tons of flavor from the brine and rubs. Happy belated birthday to me 👊🏻 • Reverse seared a 3+ lbs Snake River Farms Waygu Tomahawk Ribeye • Light sprayed with Duck Fat Spray then seasoned with Reload Rub Magnum Steak & Chop Blend, then inserted my Meater Plus Wireless Smart Meat Thermometer in the thickest part of the steak to precisely monitor the internal temperature. Super Smoked at 225° using Traeger Meat Church Pellet Blend on my Dolly, Traeger Ironwood 885, until IT reached 110°. Meanwhile had Lucille, my Traeger Pro 575, cranked up to 500° with my cast iron griddle inserted to heat up simultaneously. Pulled the Waygu Tomahawk at 110° and immediately starting searing on the cast iron, flipping once and making sure all edges where also seared, until IT hit 125° on my Meater+, then added a finishing touch of Bone Cleaner Steak Seasoning. Let the beast rest until IT reached 135°, sliced easily with Butcher's Blade Chef's Knife, devoured. Perfect way to celebrate the Atlanta Braves World Series victory ⚾🏆🙌🏻 • Buttery, juicy, delicious af. Beef short ribs for breakfast? You're darn tootin' • Long overdue cook for the hosts of The Starting Lineup, Will West and Tyler Ivens, on Sports Animal 99.1 FM in Knoxville, TN • All night smoke on these Tennessee Beef short ribs from Simpson's Meats in Knoxville. • Trimmed, sprayed with Duck Fat Spray, base rub of Traeger Blackened Saskatchewan, secondary rub of Whiskey Bent The Grind, and a generous top layer of Reload Magnum. Super Smoked at 225° on my Traeger Ironwood 885 until internal temperature reached 165° then double wrapped in butcher paper and bumped to smoker temp to 265° to finish at an IT of 204°. Rewrapped, coolered, and brought to the radio program remote site at Frazier's Carpet One on Oak Ridge Hwy in Knoxville. Sliced and served to my favorite morning radio show hosts. • These guys have kept me sane in my extensive work travels; listening to their podcast on the road keeps me in touch with home and satisfies my sports fix all while definitely making me laugh a lot. Bloomin' Spam 🔥 • Using Lane's BBQ recipe, Sliced the Spam into one inch cubes, lightly sprayed with Duck Fat Spray, added a base rub of Reload Rub High Caliber and a secondary sprinkle of Lane's BBQ SPF 53. Super Smoked on my Traeger Grills Ironwood 885 at 225° for 1½ hours using Apple Wood Pellets then raised temp to 325° for an additional 20 minutes. Pulled from my Traeger and used Bear Smoke BBQ Recipe No. 5 S.C. Mustard Sauce. • Waaaaaay better than I hoped it would be; 3 S's - smoky, savory, spicy - pretty damn delicious dipped in the mustard BBQ sauce. Luigi's Smoked Sweet Italian Sausage Fatty • Deconstructed my favorite pizza, minus the crust: Sweet Italian Sausage patted flat, lightly coated with Bone Cleaner Habanero Olive Oil, then ample pizza sauce, Italian seasoning, Reload Rub Ballistic Everything Bagel Blend, grated parmesan cheese, Hormel pepperonis, Murray's Smoked Mozzarella, and sun dried tomatoes. Carefully rolled the sausage together and pinched all sides and ends to secure the tube. Then added a hefty sprinkle of the new Kendrick BBQ AP Rub to the entire exterior. Placed on a parchment paper lined baking sheet and Super Smoked on my Traeger Grills Ironwood 885 for one hour using Hickory Wood Pellets. Then raised the grill temp to 325° for about 45 minutes and let finish. • Mama Mia! This was all my favorite pizza flavors in a stuffed sausage roll. Next time I will enhance this with some nice fresh Italian bread and go into a food coma.
