Indulge in the flavors of fall with this creamy and nutritious Paleo-friendly pumpkin coconut milk pudding. It's dairy-free, gluten-free, and sweetened naturally with honey or maple syrup. The addition of chia seeds not only thickens the pudding but also adds a boost of fiber and omega-3 fatty acids. Top it off with some toasted coconut flakes and chopped nuts for a delightful treat!
Ingredients: 1 cup canned pumpkin puree. 1 can 14 oz full-fat coconut milk. 1/4 cup honey or maple syrup. 1 tsp ground cinnamon. 1/2 tsp ground nutmeg. 1/4 tsp ground ginger. 1/4 tsp salt. 2 tsp vanilla extract. 2 tbsp chia seeds. Toasted coconut flakes and chopped nuts for garnish optional.
Instructions: Pumpkin puree, coconut milk, honey, maple syrup, ground ginger, ground nutmeg, ground cinnamon, salt, and vanilla extract should all be combined in a mixing bowl. Blend until well-combined and smooth. To evenly distribute the chia seeds throughout the pudding mixture, stir them in and stir again. For the chia seeds to absorb the liquid and thicken the pudding, cover the bowl and refrigerate the mixture for at least 4 hours or overnight. Make sure the pudding is thoroughly combined by giving it a good stir before serving. Pour the pudding into glasses or serving bowls. Add some texture and taste to each serving by sprinkling chopped nuts and toasted coconut flakes on top. Enjoy your tasty and nutritious pumpkin coconut milk pudding chilled!

It's really simple to make these chocolate vegan donuts, and they're great for when you need something sweet. They are made with coconut flour, which makes them light and fluffy, and maple syrup is used to make them sweet. You can make them your own by adding your favorite toppings.
Ingredients: 1/2 cup coconut flour. 1/4 cup cocoa powder. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1/4 cup maple syrup. 1/4 cup coconut milk. 1/4 cup coconut oil, melted. 1 teaspoon vanilla extract. Vegan chocolate chips optional, for topping.
Instructions: Warm the oven up to 350F 175C and grease a donut pan. Mix the cocoa powder, baking soda, salt, and coconut flour in a large bowl with a whisk. The dry ingredients should be mixed with the maple syrup, coconut milk, coconut oil, and vanilla extract until everything is well mixed. Put enough batter into each donut mold to fill it about three quarters of the way to the top. Bake the donuts for 15 to 20 minutes, or until a toothpick stuck in the middle of one comes out clean. The donuts should cool in the pan for a few minutes before being moved to a wire rack to cool all the way down. You can melt the vegan chocolate chips in the microwave or on the stove if you want to, then drizzle the chocolate over the donuts once they are cool. Serve and have fun!

Producing maple syrup in New England is already a challenge thanks to unpredictable spring weather — and now, President Donald Trump's shifting tariff strategies are stirring even more uncertainty in an industry deeply tied to international trade.
Tumblr media
“Any disruption in our cross-border operations hits us hard,” said Jim Judd, a fourth-generation sugar maker and owner of Judd’s Wayeeses Farms in Morgan, Vermont. “Making maple syrup is uncertain enough as it is.”

Why You Should Choose Alternatives to White Sugar for a Healthier Lifestyle
In today's health-conscious world, many are turning away from traditional white sugar and seeking healthier alternatives. White sugar, often referred to as refined sugar, is known for its empty calories and its negative effects on our health, including weight gain, increased risk of diabetes, and poor dental health. The good news is, there are plenty of natural alternatives that provide sweetness without the harmful effects. At JacaSugar, we offer a range of healthy sweetening options that can be the perfect substitute for white sugar in your daily diet.
The Problem with White Sugar
White sugar is highly processed, stripped of its nutrients, and is absorbed rapidly into the bloodstream, causing spikes in blood sugar levels. This can lead to insulin resistance, cravings, and even chronic conditions like type 2 diabetes, obesity, and heart disease. While it might satisfy your sweet tooth, white sugar can contribute to long-term health issues when consumed in excess.
Tumblr media
Healthier Alternatives to White Sugar
Here at JacaSugar, we believe that you shouldn't have to sacrifice taste for health. Thankfully, nature has provided us with a variety of sweeteners that are not only delicious but also offer health benefits.
JacaSugar JacaSugar, made from the jackfruit tree, is a perfect alternative to white sugar. It's a natural, low-glycemic sweetener with a rich, caramel-like flavor that can be used in cooking, baking, and beverages. It has a much lower impact on blood sugar levels, making it an ideal choice for those managing their sugar intake or leading a diabetic-friendly lifestyle.
Stevia Stevia is a plant-derived sweetener that is much sweeter than sugar but contains zero calories. It's a popular choice for those looking to reduce their calorie intake while still enjoying sweetness. Stevia also has some potential health benefits, including lowering blood pressure and regulating blood sugar.
Coconut Sugar Coconut sugar, made from the sap of coconut palm trees, is another great option. It contains vitamins and minerals like potassium, iron, and zinc, which are missing from refined sugar. Coconut sugar has a lower glycemic index than white sugar, which helps prevent blood sugar spikes.
Honey A natural sweetener with countless health benefits, honey is packed with antioxidants and antimicrobial properties. It can be used in a variety of recipes, offering both sweetness and nutritional value. However, honey should still be consumed in moderation, as it is still a form of sugar.
Maple Syrup Maple syrup is another natural sweetener that contains antioxidants and minerals such as manganese and zinc. It’s a great alternative to white sugar and has a unique flavor that enhances many dishes, especially in baking or drizzling over pancakes.
Agave Syrup Derived from the agave plant, agave syrup is sweeter than sugar and has a much lower glycemic index. It’s perfect for people looking to sweeten their drinks or desserts without causing a rapid rise in blood sugar levels.

Why Switch to Natural Sweeteners?
Switching from white sugar to natural sweeteners can provide a wide range of benefits. Here are just a few reasons why making the change can improve your health:
Improved Blood Sugar Control: Many natural sweeteners have a lower glycemic index, meaning they won't cause sharp spikes in blood sugar levels.
More Nutrients: Unlike white sugar, which is devoid of nutrients, alternatives like coconut sugar and maple syrup contain beneficial vitamins and minerals.
Better for Your Teeth: Natural sweeteners are less likely to contribute to cavities and other dental problems.
Reduced Risk of Chronic Diseases: Regular consumption of white sugar is linked to various chronic conditions like diabetes, obesity, and heart disease. By replacing it with healthier options, you can reduce your risk.
