Making spaghetti tm tonight and have vegetables to use form the FM thoughts on my options here cuz in not sure what to so

Spinach: 1) cut small, boil, into the meatballs -cons, i have a tried and true meatball recipe i like and idk if this would make them too wet or some shit

2) cut small, throw into sauce - cons, ive done this before and it is extremely easy to add way too much, making the sauce full of gross spinach clumps

Zucchini 1) boil? and blend into sauce cons - idr how this works my roommate has pulled it off, pros - i dont like zuchhini really and this would be epic to hide it

2) char the fuck out of them and eat them as a side

Cons / i dont really like zucchini and would have to eat whole bites of it

my one successful (aka not dead) zucchini plant is finally growing zucchini! and the acorn squash I planted at the community garden already has one on it!!

I don't like zuchhini as summer squash so I'll grow them to matureity and then eat them like a pumpkin and see if they're better that way

if not then I'll just grow zucchini to give to other people

Zucchini sits somewhere between eggplant and calabash! -my cooking adventures... Zucchini has so much moisture, as soon as you cut it, you see water seeping out of it. I never understood why anyone would wring water/moisture out of it to cook. So after seeing what potential zucchini has, I went down to find some more ways I can cook it.

white rice with zuchhini and squash and broccoli seasoned with cracked pepper and onion and garlic and cayenne and a little paprika and soy sauce 👍👍 turned out better than i expected actually i like it quite a lot

carrots, onion, garlic, potatos, lentils, rosemary, bay leaves, cumin, sage, paprika, salt and pepper are in the pot with a mixture of plant based chicken and veggie stock. I decided against diced tomatos and I'm going to put butter beans in after the lentils have softened a bit and then some old mushroom that needs eating, home grown zuchhini and red cabbage

Lentil pasta

roasted head of garlic on 300 for an hour

fry shallots in pan with butter/olive oil, add mushrooms and zuchhini, add herbs and red pepper flakes whole head of garlic break up garlic so its distributed. lemon zest and half lemon juice. add lentil pasta sprinkle parmj and mozzerella and serve with garlic bread
