Have there been any adaptations where Sanzsnvg and Bajie (and other Pilgrims) keep the babies that they have from the Mother-Child River?
I don't think there has ever been, no.
In most cases, when a series has the Women's Kingdom ar,c they are usually a Retelling/Addition that follows the story. And as such,h they end the arc in a similar way as well.
The closest things I can think of are that 1996, they THINK that they gave birth after a demon kidnaps four babies and tricks them into thinking they gave birth. Bajie was pretty excited about being a dad and took to fatherhood quite well, and Sanzang was worried but took fatherhood in stride.... until they found out their kids are kidnapped babies and returned them to their families.
I was recently told that in the 2006 Saiyuki series that Bajie DID have a son, but I don't think the Mother-Child River was involved.
Again, Bajie takes to fatherhood quite well, and he seems to adore his pig-son.
It might just be that maybe movies/television isn't ready for an mpreg birth for the screen, but who knows! Maybe we shall finally get one now that there is live-action omegaverse shows and mpreg is coming into mainstream XD

Are there any characters that you think have untapped potential?
Hmm that is kinda hard to say.
I've seen a lot of adaptions where they give characters a lot of attention that I would have never thought possible.
Tapped potential (I have seen shows that have shown the potential of the character)
Untapped potential (I personally see potential and would like to see it)
Little potential (I don't really care to see but I can understand the vision)
No potential (I personally don't see it)
The White Dragon Horse - There are actually a lot of movies about Bailong Ma, mostly inspired by the 1987 tv series were he lost his fiancee to the Nine Headed Demon. I think that there could be more exploration with him in different circumstances like maybe his relationship with his family but I haven't see a lot of optional outside of that.
Zhu Bajie - Bajie is never lacking for a good tragic romance movie. I love how Bajie gets all the good romance movies and shows his fall from heaven for the sake of love to be more of an issue of how society disapproves of unions rather than him committing a crime. I think it adds a lot to Bajie's character both exploring good and bad how he lets his heart speak for his actions and makes him more retable to the audiences.
Jinchi Elder and Black Wind King - I'll be honest I don't think I've seen these characters done so well until Black Myth Wukong the game. Gave them a lot of depth in how they bonded over their greed and the regrets they have after the fire. I feel like there could be a lot more explored with yaoguai and human friendships and how this could be common enough in-universe but also the risk it takes when trusting someone so powerful.
Yellow Wind Demon - Similar in that I don't think I've seen a piece of media that explores Yellow Wind Demon as much as Black Myth Wukong. He is still a more power-hungry individual like in the book but we see an entire kingdom being brought down with him in the process. It makes his actions have far more lasting consequences and a greater impact around him that gave him far more importance than in the book.
White Bone Demon - No shortage of White Bone Demon movies, but I think my favorite version of her was in the Monkey King 2 2016 movie that made her just the right amount of sympathic but still villianious or the 1996 tv series that really made her fleshed out.
Red Boy - No shortage of Red Boy movies either, but I will say that I think that the 1996 made him the most tragic in being taken away of from his family.
Ruler of Women's Country and Scorpion demoness - Have to say that I wish more movies had it that it show the Queen of Women's Country as a villain like they did in the 1996 tv series, cause she kidnaps Sanzang and tries to force herself on him unwilling. The only reason they didn't kill her is cause she was human despite Scorpion Demon doing the same thing. I do think that there needs to be more fleshed out for the Scorpion demon though.
Six Eared Macaque - Honestly I really enjoy that they give this character so much attention in LMK even if I would have done it differently. I will say a favorite is also the 2009 series or the 2020 True and False Monkey King movie.
Princess Iron Fan and Bull Demon King - Similar to Red Boy,
Wansheng Dragon King, Wansheng Princess, Nine-Headed Insect - I only ever get to really see these guys explode because of the extension of Bailong Ma. Giving them that kinda of angle, they want more power by only marrying Bailong for his status, and then Nine Heads coming in and usurping that plan with his own power. Also, the Demon Bull King comes to visit the Wansheng Dragon King, also showing that this family is teaming up with more corrupt demons in this case.
Yellow Brows Great King - I actually NEVER thought about how deep this character could be until the game Black Myth Wukong, making him an egotistical manic that is so desperate to be right to prove a point, he sabotages his own bets to fall artificially in his favor. He doesn't care that his own involvement in his bets only makes his points null as the results don't come out of anything natural. I really really love this.
Spider demons and Hundred-Eyed Demon Lord / Daoist - these guys are explored a lot in media, but not in ways that I would go with it. Like I enjoy the spider demons being more human but I would rather have moreso how the Spider demons feel betrayed by the Hundred Eyed Lord. I feel like we got some of that in Black Myth Wukong honestly.
Lui, Ma, Ba, Beng - I feel like we could have a lot with the Generals and Marshalls of Flower Fruit Mountain. I'm sad we don't see them nearly at all. The only time I really seen them even giving screen time was in the 2009 tv series.
7 Sage Kings - I would LOVE it if we got more of Wukong's sworn brothers and how he met them all. There are actually a few movies out there with them but that is more of a rarity. I have seen some with the Lion Demon King or Demon Bull King but to have a small prequel movie with how Wukong met them all would be lovely to see.
Sha Wujing - There needs to be more Wujing movies, there are a few out there but I don't think enough has explored his potential. I think the 1996 is the best one I've seen of him and his struggle with being a cannibal but I feel like there is a lot that could be done that hasn't yet.
Tang Sanzang / Golden Cicada - Despite there being a lot of movies about Xuanzang I do wish that we have more about the Golden Cicada. I have heard that a tv show Young Journey to the West does explore this well but I haven't seen it myself. Also would love a movie/show that has Sanzang focused on finding his mother and trying to save her from her abusers. I do wish we would get more of that but that is also glossed over even in tv shows.
Great Zhenyuan Immortal - I feel like we could have a lot more down with the Zhenyuan immortal. Maybe moreso with how he had a relationship with the Golden Cicada, or how he chooses to be Wukong's sworn brother in the arc. We have the Monkey King Reborn Movie with him in it, but he never plays a huge character which is a shame.
Yellow Robe Demon - I honestly would love to see if we get more series exploring how this man came down from heaven to find his lost-love. We see this explored actually in the 2012 series which the wife does beg to spare Yellow Robe rather than it be a straight kidnapping. I want the idea of a complex forbidden love that the Wife understands she is married to a bad man but still wants him safe and fighting herself with that.
Golden Horned King, Silver Horned King, and Nine-Tailed Vixen - I feel like these guys are used a lot, but at the same point, I would like if ONE movie explained their connection with the Nine-Tailed Vixen. Did Golden and Silver Horn come to heaven from earth? Is the Nine Tails their birth mother or adopted? Do they ever mourn her when they go back to heaven? Did they used to be fox demons themselves? I feel like there is so much there but nothing I really want to be exploded is.
Tuolong Black River God - I WISH we get one TV series that lets Bailong have a time to shine right here. This is his cousin, and we never get to see this explored. AND that Wukong goes to get Bailong's own older brother to help, and there is NEVER an interaction with Bailong and his estranged family. I would love Bailong to be forced to face his family.
Jade-Faced Princess - I know she is usually seen as the 'jealous woman' archetype, and while I think she does play this role well in the story, I would love to see her explored more than 'the other woman'. Rather, I think seeing how maybe this Princess with a large fortune has to find someone strong enough to protect her own fortune, and how she slowly does take Bull Demon King away from his wife. I might be in it for the angst, but I would love to see her as a more explored bad guy.
Azure Lion, Yellow-Toothed Elephant, Golden Winged Great Peng - We do not get a lot of these guys, honestly, but they are the best poster children of runaway heavenly pets. I would love to see more of the whys and hows they ran away and how they came to work together. I actually enjoy how LMK made them Wukong's sworn brothers, even if I feel more could have been down with their respective owners.
White Deer Spirit and White-Faced Vixen Spirit - This one, I feel like there could be a lot done, cause White Deer Spirit was one of the few demons I think I saw in the novel CRY over another demon, that being his adopted daughter, White Faced Fox. I think that seeing how this father-daughter duo is trying to take over a kingdom would be fascinating, and how this could be explored, how White Deer, a runaway from heaven, came to adopt and love his new daughter. And then how his plan led to her own death, how he continues to live in heaven, forever knowing he is the one who led his daughter to die.
Prefect of Phoenix-Immortal - This is what I WISH more movies could explore this unjust treatment heaven gives humans. Like this is what edgy fans that enjoy the Journey to the West Conspiracy Theory love, with Heaven abusing their power, and I think that this chapter really shows that when it punishes a whole prefect for the actions of one man. I think that only 1987 really explores this with Wukong giving a great speech about how this is ridiculous.
Yellow Lion Spirit and Grand Saint of Nine Spirits - I think that there can be far more explored here, cause this is a unique chapter where the Nine Spirits does NOT want to kidnap Sanzang, but he is roped in cause he wants to protect his family. He is forced into this cause of his younger and foolish grandsons and has to watch them die as he goes back to heaven and live with the guilt.
King of the Southern Hill - I would like to see how this demon knows that he out of his element and trying to use tactics to trick Wukong and gang that Sanzang was dead. I always love an underdog story, but I know that they are going to lose. Still, it could be amazing to see how these demons are clearly over their heads and trying to salvage this situation against impossible odds.
Lion-Lynx Demon - Not the most interested but I would love to see how this is just Azure Lion getting his first taste of freedom and some reference to how he knows what Wukong is capable of.
Tiger Strength Great Immortal, Elk Strength Great Immortal, Antelope Strength Great Immortal - I know I usually see that these are just a comedic trio, but there could be something more here. Maybe see where they trained, and maybe they even knew Wukong and looked up to him before he got trapped under the mountain.
Single Horned Rhinoceros King - I think that this demon's idea of fighting Wukong at full force could be interesting. Again, maybe he wanted to challenge the Great Sage at his full power to show his own strength, but I would love to see this explored, even if he is just a meathead.
8 Tree Immortals - Very sad that in the end they tried to make Sanzang marry one of them, but I feel like this is one of the few times that we get to see Yaoguai that want to live peacefully. I think that Wukong is coming to terms that while yes he is used to killing demons, not all of them are out for power like he was.
Lady Earth Flow - I see a lot of talk of maybe she is one of the only demons that could have loved Sanzang genuinely. I never thought about that possibility, reading the story as she did kill/eat several other monks with the promise of sex and thought Sanzang was just another meal to her but would love to see this explored like who it was in the 2012 series.
Jade Rabbit Spirit - I find it fascinating that she didn't kidnap Sanzang cause she really wanted him, but rather he was more of a stepping stone for her to get revenge on the princess she hates. I really love to see her more explored as a vengeful demon and while Sanzang was a part of that, her really target was the princess she kidnapped.
King of Spiritual Touch - Being Guanyin's pet fish from her own personal story is something I think could be explored more. Esp maybe how the demon sees Guanyin as either a mother-figure or a teacher.
Squire Kou - This guy is interesting to me Cause he died for being a good guy and Wukong had to go to the afterlife to get his soul. I think there could be more explored there.
Demon King of Confusion - Again, I feel like never given a lot of screen time or thought. Only in the 2009 do we see him being a continuous villain even before Wukong left for his training.
Python demon - This one could be interesting as a younger demon trying to gain human form.
Great King Jupiter's Rival - I don't really see much being explored with him. More of just another villain with a powerful weapon.
Ruler of the Kingdom of Miefa - I think it just funny Wukong made an entire kingdom bald to prove a point and want a movie about it.
King of Cold Protection, King of Heat Protection, and King of Dust Protection - These guys are villains near the end of the story and would love to see Sanzang in real time explaining to these poor yaoguai that he has been through this shit for 14 years and that they should just let him go else Wukong gets to them first. Just sassy Sanzang.
Great White Turtle - I don't see a lot with him but would love to see if they could give more reason why he would want to be human so much. This guy ruined the scriptures so that could offer more ideas.

Summary:
Pokémon: Diamond and Pearl is the tenth season of the Pokémon anime series, and the first and titular season of Pokémon the Series: Diamond and Pearl, known in Japan as Pocket Monsters Diamond & Pearl (ポケットモンスター ダイヤモンド&パール, Poketto Monsutā Daiyamondo & Pāru). rotating shadowpeach dynamics and angst in my brain and wound up drawing a Peter Pan-ish AU, ft. Sun Wukong as Pan and Macaque as Captain Hook
this was mostly inspired by what I've heard about the original Peter Pan being a little darker in some areas than expected - basically take the shadowpeach backstory of 'events outside our monkey bros control force distance between the two besties, SWK basically rolls with the punches and SEM does NOT leading to one ugly blowout of a fight that permanently fucks up the bromance' and apply Peter Pan lore:
Mac becomes Wukong's tagalong/lost boy/BFF when Smol, but as time goes on, he grows up and SWK does NOT, losing interest in the friendship and sending Mac into a panic. He desperately tries to hold onto their friendship and chase after SWK, but that just backfires when Wukong lashes out. Down a hand and an eye, Macaque becomes obsessed with vengeance and continues trying to catch/kill SWK, growing up into a ruthless pirate captain
something that was just tugging on me with this idea is that in this AU, SWK's character growth basically gets surgically removed on account of the 'permanently an immature child' thing, and WOW yeah that part of the Peter Pan lore is kinda underused for angst wtf
