Egg Roll in a Bowl
Ingredients
1 pound ground pork
1 head cabbage thinly sliced (or package of Asian salad mix)
½ onion medium, thinly sliced (or onion salt)
1 tablespoon sesame oil
¼ cup soy sauce or liquid aminos
1 clove garlic minced
1 teaspoon ground ginger
2 tablespoons chicken broth
Salt and pepper to taste
2 stalks of green onion
Instructions
Brown ground pork in a large pan or wok over medium heat.
Ensure cabbage and onion is thinly sliced into long strands. Use a spiralizer to cut the vegetables for quickest results.
Add sesame oil and onion to pan with browned ground pork. Mix together and continue cooking over medium heat.
Mix soy sauce, garlic, and ground ginger together in a small bowl. Once onions have browned, add the sauce mixture to the pan.
Immediately add the cabbage mixture to the pan and toss to coat the vegetable and evenly distribute ingredients. Add chicken broth to the pan and mix. Continue cooking over medium heat for three minutes, stirring frequently.
Garnish with salt, pepper, and green onion

Cheesy Cauliflower Breadstcks 
INGREDIENTS
1 medium head cauliflower
1 egg, beaten
1 cup mozzarella cheese, shredded, divided in half
½ cup shredded parmesan cheese
4-6 fresh basil leaves, finely chopped (or 1.5 tsp dried basil)
2 cloves of garlic, minced (or ½ tsp garlic powder)
1 teaspoon dried oregano
INSTRUCTIONS
Preheat oven to 425 degrees F.
Rinse and chop cauliflower into florets.
In a blender or food processor, pulse cauliflower until it has a “rice” consistency.
Heat about 1 inch of water in a large saucepan until it boils.
Add the cauliflower and cover with a lid. Steam for about 5 minutes and remove from heat.
Drain the cauliflower in a fine mesh strainer, pressing against edges with a spatula. Let it cool for a few minutes.
Place cauliflower in a clean dish towel and wring out as much excess water as possible.
In a large bowl, add cauliflower, ½ cup mozzarella cheese, 1 egg, garlic, chopped basil, and oregano. Stir well.
On baking sheet lined with parchment paper, use your hands to form the cauliflower mixture into a rectangle covering just about the whole pan.
Bake for 30 minutes, until crust is golden brown. Remove from heat.
Top crust with the rest of your mozzarella and parmesan cheese, and bake for another 7-10 minutes. (Once cheese is melted.)
Remove from heat, and cut into “breadsticks” with a pizza cutter.
Serve warm with marinara sauce and enjoy!

For the cookies:
2 cups superfine almond flour* ½ cup salted butter, softened pinch of kosher salt ¾ cup erythritol granulated sweetener* ½ tsp baking soda
For the coating:
2 Tbsp erythritol granulated sweetener* 1 tsp ground cinnamon
Preheat oven to 350 degrees (F) Mix all of the cookie ingredients in a medium sized bowl until a stiff dough forms. Roll the dough into 16 balls of equal size. (approx. 1.5 inches in diameter) Combine the cinnamon and sweetener in a small dish. Roll the balls in the mixture until well coated. Place on a parchment-lined cookie sheet and flatten slightly with the bottom of a glass. Bake at 350 degrees (F) for 15 minutes. Remove and cool slightly before serving.
