Hey hey. I love you, it’s gonna be alright. Dice potatoes into medium sized pieces and boil them in generously salted water until decently soft. You’ll cook them again later, so don’t overdo it. In a (preferably cast iron) skillet, sauté chopped onion and garlic in plenty of oil until tender, and then add sliced peppers.
Cut cherry tomatoes in half, or thickly slice a regular tomato, and lay the pieces in a small clearing in the middle of the skillet with garlic salt and lemon pepper sprinkled on top (I drizzled lemon juice on too), and cook until tender and flip. Once roasted on both sides, add your potatoes to the skillet, sprinkle with salt and paprika, leave ‘em, flip ‘em, and then sprinkle shredded cheese and crack an egg and sprinkle salt and pepper onto the whole shebang. Cook covered until the egg is cooked through.
Keep your heat on the lowest setting the whole time if you’re using a good skillet
