Chicken Kofta meat balls, with potatoes
Ingredients:
For the kufta:
Minced chicken
3 medium tomatoes
Parsley
½ medium green pepper
1 large onion
Handful of oats
Spices, around a ½ teaspoon of the following ground spices: black pepper, cinnamon, cardamom, turmeric, cumin, garam masala, paprika, red chilli, salt
2 medium potatoes
For the curry:
1 large onion
2 medium potatoes
Spices: turmeric and salt
2 tablespoons of oats
1 garlic clove
olives
Place the minced chicken in a large bowl
In a mini chopper, chop the following separately: onions , parsley, green pepper and tomatoes until they are fine (If you do not have a mini chopper, just cut the vegetables very very very finely).
Place on the minced chicken and add the salt, spices, handful of oats and mix together well.
Cover with a clear film, and leave for a couple of hours.
In a tefal (non stick) pan, put some vegetable oil in the pan and leave on low to medium heat.
Shape the minced chicken into balls, and add into the tefal pan.
Let it go golden on each side, then place the chicken in a plate.
Meanwhile, finely chop the onion. Peel the potatoes and cube into medium pieces.
In the same non stick tefal pan, add some more oil if needed. Then add the onions, chopped garlic and potatoes, and stir on medium heat. This will take roughly 5 to 10 minutes, until slightly brown. Add the turmeric and some salt, then add water to cover and add 2 tablepsoons of oats (this will give it some thickeness). Put the lid on and leave to cook on low heat for around 12 minutes.
Then add the chicken kufta, and leave to cook further for another 10 to 15 minutes, until the kufta and potoates are cooked.
You may need to add more water throughout, depending on how much curry/stew you want.
Place it all in a pyrex/oven tray, add some olives, and put in the grill for around 5 to 10 minutes.

Olive chilli swirls
Ingredients
500grams of plain flour
1 1/2 teaspoon of salt
1 1/2 teaspoons of dried yeast
350ml of lukewarm water
2 tablespoon of olive oil
crushed dried chilli
grated cheese (mozzarella)
oli mix: finely cut green/black olives, 1 crushed garlic, 1 finely grated carrot, lemon juice from 1/2 lemon, sprinkle of olive oil
INstructions
Sift the flour into the bowl, and stir in the salt + yeast
Make a well in the centre, and add the water and oil
Mix on low speed to form a soft dough, until smooth for around 10 to 15minutes (or knead).
Cover and leave to rest for around an hour
Whilst it rests, make the olive mix, by finely cutting the olives, mixing it with a finely grated carrot, 1 crushed garlic clove, lemon juice, sprinkle of olive oil, and some salt.
Also, prepare the baking tray, by covering with baking paper.
On a floured surface, roll out the dough into a rectangle. spread the olive mix.
Roll up the dough from one side to make a swiss roll.
Using a knife cut into ten thick slices. leave on the baking tray, cover and leave in warm place to rise for an hour.
Preheat the oven to 220degrees.
Sprinkle with cheese, and dried chilli, and place in the oven for 20-25 minutes, until well risen and golden brown

Grilled chicken kebabs indoors
Ingredients
Minced chicken
Handful of parsley
1large onion
2 Tomatoes
spices: salt, black pepper, turmeric, gram masala, cumin, (smoked) paprika
1 1/2 large tablespoons of tomatoe paste.
Olive oil
Instructions
finely chop the parsely, tomatoes and onion.
Add to the minced chicken, and add the spices and tomatoe paste. mix well.
Shape onto bamboo bbq skewers.
Cook the kebabs on a grill and griddle machine like on medium to high heat, or on a griddle pan like this , sprinkle with olive oil ontop as they cook. Turn them on all sides to cook well.

Aubergine and Lamb Stew
Ingredients
1 Aubergine
1 onion
Lamb pieces
Slice of green pepper
Slice of red pepper
1 red chilli
2 to 3 tablespoons of tomato paste
Turmeric
Instructions
Slice the onions.
In a stew pot add a bit of vegetable oil, the lamb pieces and slices of onion, and let the onions soften and meat brown slightly, by stirring on high heat.
After around 5 minutes, add some turmeric, around 2 tablespoons of tomato paste.
Add the red chilli, some salt and the water then leave on low heat, and add the lid on the stew pot and leave to cook until the lamb is ready. Takes around 45 minutes to an hour.
Meanwhile, slice the aubergines into thin-medium thickness. Deep fry the aubergine and red and green pepper. Put on a plate with tissue at the bottom, to absorb the oil.
Once the lamb is ready, add the aubergine and pepper slices into the pot, and leave to cook for around 5 to 10 minutes.
Serve hot with rice and sprinkle some parsley on top

My banoffee pie replica
Ingredients
Digestive biscuit
Butter
Dream whip
Caramel
Extra thick/double cream
Banana
Instructions
Break the digestive biscuits until fine by either placing in a freezer bag and bashing with a rolling pin, or placing in a food processor until fine.
Melt some butter, and mix with the fine digestive biscuits. Add more butter if needed.
Then place this mix in the bottom of the cups, or serving plates.
To make the caramel mix, mix some cream with caramel (around 1 tablespoon of caramel for 1/2 tablespoon of cream. you can change the quantity depending on how sweet you want it).
Then add a layer of the caramel mix on the digestive biscuits.
Slice the banana into thin/medium slices. And place on top of the caramel.
Mix the dream whip according to the instructions on the back ( i mix one sachet with 100ml of milk instead of 150ml of milk, for a thicker consistency).
Add one scoop of dream whip ontop of the caramel and banana.
Place in the fridge until served.

Chickpeas and lentil soup
Ingredients
1/2 cup of red lentils
1 can of chickpeas
1 tomato
1 onion
1 tablespoon of tomato paste
a few small chicken pieces
spices: 3 cinnamon sticks, black pepper and cumin
1/2 cup of finely chopped parsley
1 round vermicelli
Instructions
Finely cut the onions. In the pot, add some oil (around two tablespoons) and then add the onions, and leave on low heat, until becomes slightly golden.
Then add the spices, cinnamon, black pepper and cumin (around 1/2 teaspoon of black pepper and 3/4 of a teaspoon of cumin).
Then add the chicken pieces, and leave on low heat for around 3minutes.
Finely chop the onions, and then add to the chicken. Mix it in and leave it until it softens. Once softened add the tomatoe paste, and stir for a minute, the add the lentils and chickpeas.
Leave on the heat for a few minutes, before adding the water. Put the lid on and leave to cook for around an hour, before then adding the finely cut parsley and the vermicelli. Leave to cook for another 15minutes or so.
Sprinkle with finely cut parsley or corrainder

Fresh lemonade
Ingredients
For one cup:
Lemon juice from 1/2 a lemon
sugar to taste - around 2-3 teaspoons
Cold water
Mint leaves
Slice of lemon
Instruction
Mix the lemon juice, cold water and sugar, and taste. Add more water/sugar if needed.
Put some mint leaves and a slice of lemon in the cup.
Put in the fridge until cool - for a few hours preferably
