Time is always in short supply when you are a chef. But when I get an idea to make something special I find a way. These little beauties take a long time. I make the dough in the morning, weave in the afternoon, cook & serve in the evening. I missed making this post for #worldpastaday but here is one of my favorites! The white dough is seasoned with dehydrated stock. The green dough is raw spinach. I use raw spinach because once it is finally cooked the green pops through brighter than if you blanch the spinach before making the dough. The weaving process is a true labor of love. It’s fun with other colors too but I had spinach on hand. They are filled with lemon whipped ricotta/strained ricotta and nutmeg. Sometimes the unexpected brings a great discovery. Pecorino and pistachio is a new pairing for me. @shoresidesupport sent me a young pecorino studded with raw pistachio. I had served a nice unfiltered olive oil focaccia with lunch and had a few pieces remaining. And just like that, an amazing little snack was born! No one uses the word “fusion” anymore It’s too 90s trendy Or “intercontinental fine dining” as that is super 80s. So which words should I use to describe this? I’m open to suggestions. I made ‘glass’ potato chip tacos. Filled with dry aged shaved duck and scotch macerated plums Inspired by the #crystalbread of #albertadria I followed a similar track but increased the potato starch and added a bit of corn starch with the kudzu. They take a long time to make but came out great! They are delicate but firm enough to hold the filling and we’re very popular! Amazing crunch and lingering potato flavor! Want to see what I see? Galley windows are critical for chef sanity! I start well before sunrise and end long after dark. Sometimes on a busy charter I don’t step outside for a solid week. Those times it’s the creative freedom that keep me going. The freedom to play around with classics such as: Turning a crunchy tuna roll into a crunchy sesame rice pizza topped with sweet chili, Sambal aioli, fresh yellowtail and micro shiso Turning a classic pad Thai into a Smokey version with Alderwood smoked yellow bell peppers & carrots, tossed with crunchy smoked salt soaked cabbage, miso caramelized leeks, yellow chili paste, toasted sesame oil and micro opal basil And let’s not forget about dessert. What do I mean by flavor? Flavor isn’t a singular experience. It has to be a balanced, architectural experience. I haven’t posted in a long time. I have various excuses, but to those of you who have stuck it out I want to say Thank you! Sometimes I feel some guilt posting about indulgence during a pandemic. I know I have been very lucky to continue to work non stop during the last two years. I’m grateful. Immensely grateful. I’m grateful for fellow Instagram chefs and Yachties and my own ever shifting fellow crew who keep is moving forward in both practical and creative ways. I am also very grateful to other creators who are willing to collaborate despite distance and shipping! @ronisuechocolates and I did a fun dessert collaboration this summer. A nice sampler of the freshest fish, incredible shiso to serve as tacos shells, spicy tuna and more. Just in case you really want something hot, here is a tapioca and ground dehydrated mango flour battered langoustines with unpictured cucumber ponzu dressing And I can’t just end there. Let’s round out the whole meal with a sorbet duo of dragon fruit and lemongrass raspberry topped with an almond tuille. Now that’s a yacht lunch. From here you can float on a giant unicorn while someone tows you around the most beautiful waters in the world.
