Semana passada finalmente eu e a @teresemgluten conseguimos nos encontrar para almoçar! Fomos na Lilóri, para um almoço 100% livre de encanações. Dentre as opções de almoço, ela escolheu o prato "Samurai": salmão grelhado, ervilhas, arroz negro e salada de abacate, cenoura e repolho. Eu escolhi o prato "Kebab", composto de espetinhos de frango, arroz de couve flor e molho de tahini. Nós duas gostamos muito! Para finalizar tomamos um cafezinho. ☕ Foi muito bom variar um pouquinho, sair da marmita e celebrar essa amizade, que surgiu por causa de um dos nossos pontos em comum, a doença celíaca. Infelizmente, esquecemos de tirar uma foto nossa, mas fica a da comida, que essa a gente nunca esquece, hehe! ⠀⠀⠀⠀⠀⠀⠀⠀ 🇪🇸 Esta semana pude almorzar com una amiga que así como yo es celíaca. Fuimos a una panadería/restaurant en São Paulo totalmente libre de glúten y lácteos. Estuvo tudo muy bueno, pero lo mejor fue poder celebrar uma amistad que surgió a causa de uno de los untos que tenemos em común, la enfermedad celíaca. Outro dia, jantamos no @americaburger do Shopping Anália Franco. Logo que tive a doença celíaca diagnosticada, descobri que eles tinham o cardápio especial e fiquei muito feliz, pois eu costumava ir lá antes do diagnóstico. Infelizmente, a cozinha é a mesma para todas as preparações e, justamente por isso, no cardápio especial as informações sobre glúten são acompanhadas de um asterisco, pois pode haver contaminação. Dito isso, o fato é que eu já fui lá algumas vezes, desde que descobri que era celíaca. Como nunca passei mal, continuo indo. Só que tem uma coisa: eu sempre peço o mesmo prato, esse da foto - "Chicken Light". Eles tem outras opções de pratos sem glúten, mas como eu também não consumo lactose, não sobram muitas opções pra mim (mesmo o Chicken Light eu preciso pedir pra ser feito no azeite pois ele é feito normalmente na manteiga). ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Enfim, existe risco de comer lá... Mas talvez seja um risco manejável, principalmente com relação a este prato, que é feito na grelha. Dia 18 foi meu aniversário. Fez mais calor e caiu menos chuva que o normal. 😁 Lá no trabalho eu ganhei almoço e bolo sem glúten. O pessoal nunca deixa os aniversários passarem em branco e sempre tentam me incluir de alguma forma. Quando quando sou eu a aniversariante, se desdobram para encontrar um bolo que eu possa comer e alguma opção salgada. Muito legal da parte deles, não é? ☺️ Esse ano, compraram tudo no @emporiovilasalute , uma massa fresca (capeletti recheado de carne com molho de tomate) e o bolo, recheado de doce de leite e nozes. Estava tudo muito bom, com destaque para o bolo, um pão de ló maravilhoso, fofinho, leve e que não desmoronou, mesmo depois de ficar o fim de senana na geladeira. Eu já fiz algumas receitas de pão de ló sem glúten e elas não conservaram bem a umidade depois de um ou dois dias, ficando quebradiças. Dá pra ver que tem muita experimentação por trás dessa receita. 😀 O recheio estava muito bom, lotado de nozes pecãs 😋😋, que na minha opinião são muito mais saborosas que as comuns. Como sobremesa de Ano Novo, eu fiz meu primeiro "cheesecake" vegano. Fazia algum tempo que eu queria testar, mas nunca tinha todos os ingredientes em casa. A receita eu adaptei de várias que vi na internet. O principal ingrediente aqui é a castanha de caju, tem que deixar ela de molho de um dia pro outro e depois bater no processador até ela virar um creme. Fiz duas camadas, uma de coco e uma de abacaxi. 🥥🍍O legal é que ele não vai no forno, só no freezer e geladeira, por isso esse tipo de doce também é considerado cru. Pra melhorar, adocei muito pouco, porque não precisou. Decorei com chips de coco e coco ralado. A textura e o sabor ficaram maravilhosos! É uma sobremesa bem vistosa e também cara, pelo tanto de castanhas que vai. Não é algo para se fazer sempre, definitivamente. Mas fiquei feliz porque : ⠀⠀⠀⠀⠀⠀⠀⠀⠀ - deu certo⠀⠀⠀⠀⠀⠀⠀⠀⠀ - ficou bonito⠀⠀⠀⠀⠀⠀⠀⠀⠀ - é uma delícia⠀⠀⠀⠀⠀⠀⠀⠀⠀ - não vai no forno⠀⠀⠀⠀⠀⠀⠀⠀⠀ - não tem glúten⠀⠀⠀⠀⠀⠀⠀⠀⠀ - não tem leite⠀⠀⠀⠀⠀⠀⠀⠀⠀ - e dá pra dizer com certeza que é saudável! 😲 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Malandrinhos esses veganos, viu! Sobre os legumes do post anterior. Usei: ⠀⠀⠀⠀⠀⠀⠀⠀⠀ - 2 batatas (descascadas e picadas em 8 pedaços); - 2 cenouras (descascadas e cortadas e tiras); - 1 berinjela (com casca, em tiras largas); - 1 abobrinha (com casca, em tiras largas); - 1 pimentão em tiras finas; - 2 cebolas roxas (em fatias); - 2 cebolas brancas (em fatias); - 2 dentes de alho (inteiros, sem a casca); ⠀⠀⠀⠀⠀⠀⠀⠀⠀ (Mas dá para usar o legume que você quiser, brócolis, couve-flor, tomates, batata-doce, abóbora...) ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Piquei em pedaços médios e espalhei em 2 assadeiras antiaderentes, na primeira batata e cenoura, por serem nais duros. Na segunda os demais. Temperei com fios de azeite e alecrim seco para a batata e a cenoura e tomilho seco para os demais legumes. Polvilhei um pouquinho de sal. Pré-aqueci o forno a 250 graus e coloque primeiro a batata e a cenoura. Depois de uns 15 minutos coloquei a segunda assadeira. A cenoura ficou pronta antes porque eu cortei muito fina, então logo tirei. No fim, liguei a função gratinar do forno para dar aquela queimadinha de leve. Vá misturando de tempos em tempos para não queimar demais, nem grudar. E só! Ficou muito bom, não vejo a hora de fazer de novo! ⠀⠀⠀⠀⠀⠀⠀⠀⠀ 🇪🇸 Esos son los legumbres del post anterior. ~ A small broccoli head, cut into small florrets

1. First chop up the onion, garlic and celery. Heat a pot over medium heat and use a bit of water or non-stick spray to sauté the onions and the celery for about 1-2 minutes. Add the garlic and let it fry for one more minute.

2. Next add the broccoli and the broth and let it simmer for about 12 minutes. Pour it into a blender and blend until smooth, then pour it back into the pot and add the milk and seasoning. Let it cook for another minute before serving.

Tip: You can save a few broccoli florrets before pouring the mix into the blender to have some larger parts in the soup if you like, or add potatos if you want it to be more hearty! Depending on your taste, you might want to use less/more milk.

Vegan/gluten-free/refined sugar free sweet potato bars

1 ½ cups almonds (ground)

¼ cup cashews (ground)

2 tbsp buckwheat groats (ground)

½ cup of coconut flour

1 tsp baking soda

Dash of cinnamon and cardamom

2 bananas, mashed

1 sweet potato, mashed

¼ cup almond butter

1 tsp vanilla

2 flax eggs

½ cup of almond milk

1 tsp apple cider vinegar

1 bar of dark chocolate cut in to chunks.

Preheat oven to 325 degrees. Line 8x8 pan with parchment paper and set aside.

Combine dry ingredients and sift. Set aside.

Combine wet ingredients and mix until smooth.

Add dry ingredients to wet ingredients and mix. Let sit for 30 minutes to allow coconut flour to absorb liquid.

Mix in dark chocolate chunks.

Pour batter in to pan. Batter will be thick and sticky. Spread evenly and bake for 20 minutes or until top has set.

Allow to cool for as long as you can before digging in (which won’t be very long cuz they’re delicious!!!!)

O ano vai acabar e eu tentando pôr em dia as postagens do Natal... 😅 Essa foi a sobremesa que eu fiz, pavê de coco. Deveria ser algo simples, mas tive problemas com o leite condensado sem lactose. Eu tinha duas caixinhas em casa, uma da @italac_oficial e outra da @oficialpiracanjuba . Nos dois casos, quando eu abri, o leite condensado tinha cor, cheiro e densidade de doce de leite 🤔. Estavam os dois na validade, então resolvi usar mesmo assim. Comecei a fazer o creme com o da Italac, mas quando desliguei o fogo e transferi para uma travessa, percebi que estavam se formando bolhinhas, muito pequenas e bem lentamente. No fim achei que aquilo estava fermentando e joguei fora. O segundo leite condensado estava menos espesso que o primeiro, mas também achei que tinha bolhas. Joguei fora também. 😣 Eu sou meio impressionada, se eu cismo com algo, melhor nem comer. No fim, fiz o creme sem o leite condensado mesmo. Pro pavê, usei a bolacha champanhe da @matilde.vicenzi ,achei muito boa, ficou parecendo pão de ló, mas ela absorveu todo o creme e o pavê não ficou com muita estrutura. Então acho que ficaria melhor fazer em tacinhas individuais da próxima vez. Ainda sobre o Natal, teve outros pratos principais: uma massa que eu não podia comer, uma carne que eu podia mas acabei não comendo... Depois teve lasanha de berinjela, feita pelo meu pai. Com algum atraso, mostro um pouquinho do que teve na ceia da minha família.
