It’s looking like a warm week ahead so we’re making another batch of my strawberry and blueberry lollies ☀️🍦 Great for healthy snacks and teething babes 👶🏼 Recipe below! The sun's out, so it's time to fire up the BBQ ☀️ Try my Moroccan lamb burgers - perfect for the whole family 👨👩👦👦 Raffy had a chopped version with some harissa yogurt dip and salad sticks, we had ours in baps with some pan fried halloumi, harissa yogurt sauce and salad 🍔 ~ 1 onion, roughly chopped 1 inch ginger, roughly chopped 2 garlic cloves 2 tsp ground coriander + ground cumin 1 tsp ground cinnamon 80g dried apricots, chopped 500g lamb mince Handful fresh parsley, finely chopped ~ Add all ingredients, except the lamb and parsley, to a blender and blitz well to form a spice paste. Add the lamb and parsley to a large bowl, tip in the spice paste, and mix thoroughly using your hands. Shape the lamb mixture into patties and BBQ or grill for 5 minutes each side. Why not make a cheats pizza for your lunch or dinner today 🍕 I used Italian flatbreads for the bases and they came out like proper thin and crispy pizzas 🙌🏻 - I can highly recommend them, plus they're so easy! TyrannoTed’s dinosaur cookies 🦖🦕🍪 A genius idea by my eldest, Teddy, to stomp on the cookies instead of thumb-printing them! Why didn’t I think of that! Recipe below: ~ 170g buckwheat flour (wholemeal or plain should be fine too) 90g ground almonds / almond flour 80ml olive oil 125ml maple syrup Marmalade or jam (I used @stdalfourukofficial no added sugar orange and ginger) ~ Preheat oven to 190C/fan 170C and line a baking tray with baking paper. Add all ingredients into a large bowl and mix together to form a dough. Roll tablespoon sized balls with clean hands, place on the baking tray and flatten slightly. Repeat with the remaining dough. I made 18 from my mixture. Get a dinosaur toy (or another animal footprint), press the foot into the centre of each cookie and fill with half a teaspoon of marmalade or jam. Bake for 18-20 mins until golden brown. Chocolate banana nicecream 🍫🍦 Whenever a banana gets too ripe I either a) make banana bread, or b) slice them into coins and freeze them for smoothies or ice cream... So it's perfect timing to use them, given I have a super grumpy teething baby in need of something cold on his gums 👶🏼 All you need is: - 2 frozen sliced bananas (peel and slice them before freezing) - dash of milk, dairy or non dairy - 1 tbsp cacao powder ~ Add everything to a blender or food processor, blitz until you have a something resembling ice cream. Serve immediately as a soft scoop, or freeze again for an hour for a firmer ice cream. Veg and cheese quinoa cakes 🥦🥕🧅🧀 I made these with Teddy a couple of days ago and thought I’d share the recipe as they went down well with both toddler and baby! They’re super healthy and packed full of veggie goodness 🌈 ~ 1/2 onion, finely diced 2 carrots, grated 1/2 head of broccoli, finely chopped 2 eggs 150g cheddar, grated 1 large handful frozen peas 200g cooked quinoa ~ Preheat oven to 200C/fan 180C and line a baking sheet with non stick baking paper. Drizzle some olive oil in a pan and sauté the onion, carrot and broccoli for 5 mins. Season with black pepper. In a large bowl, whisk the eggs, then stir in the cheese, frozen peas, quinoa, and cooked veg. Using a 1/4 cup or small ramekin dish, scoop out some of the mixture, pack it down, then gently tip on to the baking tray. Repeat with all the mixture. Bake for 10 mins then gently turn and bake for another 5-10 mins. Hoisin beef with noodles 🥡💚 This dish is one of my wife's favourites, so she'll probably kill me for telling you the recipe. But it's too good not to share! So here it is! It's also ready in less than 10 mins so perfect for a quick evening family meal 💫 ~ 2 peppers, chopped 500g minced beef 200g broccoli florets 3 tbsp hoisin sauce 3 tbsp low salt soy 1 tbsp maple syrup 1 tsp sriracha 1 inch fresh ginger, grated 2 cloves garlic, grated Noodles (or rice) to serve, spring onions optional ~ Stir fry the peppers, beef and broccoli for 5 mins. Put the noodles on to cook. Make the sauce with the remaining ingredients. Once the beef is cooked, tip the sauce into the pan and let it bubble for a minute. Drain the noodles, add to the pan, and stir in to coat and mix. Smoked salmon egg muffins with cherry toms, shallot, spinach, fresh dill and a crumble of goats cheese for good measure 💕 Recipe below! Have a great day 🙌🏻 ~ Ingredients (makes 12): 8 eggs 1/2 cup milk (you can use any kind) 2 tbsp fresh dill, finely chopped 2 cups fresh spinach, roughly torn 1 small shallot, finely diced 12 cherry tomatoes, halved 100g smoked salmon, torn into small pieces 100g goats cheese ~ Method: 1. Preheat oven to 200C/fan180C. 2. Grease a nonstick muffin tin with olive oil, being sure to get every nook and cranny. 3. Break eggs into a medium bowl then add the milk and dill and whisk. 4. Evenly distribute the spinach, shallot, tomatoes and smoked salmon into each muffin hole. Fill each muffin hole 3/4 full with the egg mixture, then crumble small pieces of goats cheese evenly over each hole. 5. Bake in the oven for 18-20 mins until golden brown. Let's talk about last nights pasta... 🍝 This sauce was a random concoction of left-overs in the fridge - but it was SOOOO good! I love burrata melting away on top, but you could sub for parmesan or any other cheese you have. I saved a portion, cooked some veg and mixed it in to give Raffy his lunch just now. Minus a bit of mess (!) he loved it 🙌🏻 ~ 2 cloves garlic, crushed 5 anchovy fillets, finely chopped 50g sun dried tomatoes, finely chopped 200g cherry tomatoes, halved 500g passata Handful of fresh basil ~ Place a deep non stick pan (one with a lid) on a medium heat and add a drizzle of olive oil. Sauté the garlic, anchovies and sun dried tomatoes for a minute, then add the cherry tomatoes and cook for a few mins with the lid on. Carefully pour in the passata and stir in the fresh basil, then place the lid back on. Lower the heat and simmer for 10-15 mins, stirring occasionally. In the meantime, cook your pasta as per the packet instructions minus a minute. Once cooked, drain the pasta, add it to the sauce pan and stir through. Frozen yogurt bark 🥭🥝🥥 Time to make a refreshing and healthy treat for snack times! It’s really quick and simple to make and the perfect alternative to ice cream. We went for mango, kiwi, blueberries and coconut, but you can add any fruit you want 🥭🥝💙 ~ 500ml of plain Greek yoghurt 1 tbsp vanilla extract Fresh fruit of your choice, chopped Desiccated coconut ~ 1. Mix the yogurt and vanilla extract together in a bowl. 2. Line a shallow baking tray with parchment paper. Pour the yogurt into the tray and evenly spread it out so you have a 1cm layer. 3. Sprinkle the chopped fruit and desiccated coconut. 4. Freeze for a minimum of 2 hours. Kicking off the week with stacks of waffles, thick Greek yogurt, and my homemade blueberry chia jam 💙 If you haven’t made it before then you definitely should - it’s super easy and the kid’s will love it! #cham recipe below: ~ 4 soft Medjool dates, mashed with a fork 250g frozen blueberries 2 tbsp chia seeds ~ Place the mashed dates in a pan with a dash of water on a low heat. Stir to break them down a bit. Add the blueberries and simmer for 5 mins until the berries start to break down. Add a dash more water if needed. Tip in the chia seeds, stir well and simmer for another couple of mins. Crushing the berries with a wooden spoon whilst stirring helps to speed things up. Turn off the heat and allow to cool. You could eat straight away but it’s best to allow the chia seeds to soak up the juice for a few hours to make it more jammy! 🍋 Lemon and dill salmon pasta 🍋 This is a great recipe to introduce your baby to different tastes, textures and nutrients. Salmon is an excellent source of high-quality protein, vitamins, minerals and the all important omega-3 fatty acids - that all important brain food for our babies 🧠. It's also perfect finger food for #babyledweaning 👌🏻 ~ Ingredients (serves 4): 2 salmon fillets 200g dried pasta such as gemelli or penne 200g frozen garden peas half a cucumber 200g crème fraîche 2 lemons, zest and juice large handful of dill, finely chopped 1 garlic clove, mashed 1 tsp Dijon mustard 1 tsp runny honey (not suitable for babies under 1 year old) ~ Directions: 🌿 Preheat the oven to 200˚C/Fan 180˚C. Place the salmon fillets on a baking sheet and cook in the oven for around 15 minutes, until done. 🌿 Cook the pasta according to the pack instructions, adding the frozen peas 2 minutes before the end of cooking. Drain the pasta and peas then return to the pan along with the crème fraîche, juice and zest of 1 lemon juice, and 3/4 of the dill. 🌿 Add the mashed garlic, Dijon mustard, honey, remaining dill and juice from 1 lemon to a bowl and whisk together. Stir the sauce into the pasta. 🌿 Peel, deseed and chop the the cucumber, flake the salmon and gently stir both through the pasta. A proper old school lunch today with a classic coronation chicken salad 🥗 It always goes down a storm in our house! I made some extra for sandwiches tomorrow as well... Anyone with me when I say it's the best sandwich filling ever? 🤷🏼♂️ ~ Ingredients: 3 tbsp mayonnaise 2 tbsp plain yogurt 2 tsp medium curry powder 2 cooked chicken breasts, shredded 40g watercress 1/2 cucumber, sliced into half moons 50g cherry tomatoes, halved Juice 1 lemon 1 tbsp mango chutney 2 tbsp olive oil 2 naan breads, toasted and torn into chunks 2 tbsp toasted flaked almonds ~ Directions: 🌿 In a bowl, mix together the mayo, yogurt, curry powder and shredded chicken. 🌿 In another bowl, toss together the watercress, cucumber, and tomatoes. In a small bowl whisk together the lemon juice, mango chutney and olive oil. 🌿 Toss half the dressing in with the salad then plate up along with the chicken and naan. These PB filled dates are everything! I make them every single day as a little sweet snack to keep me going 💪🏻They're a great source of magnesium, iron, calcium, potassium, zinc, fibre, and vitamins!
