1tbs Olive Oil (I used butter)
1½bowl Basmati Rice (soaked for ½n hour)
3Medium size Tomato Puree
1bowl Kidney Beans (boiled)
¾bowl Capsicum (diced)
¾bowl corn kernels (boiled)
2tbs Mixed Herbs
2tbs Ginger garlic powder
1ts Paprika / 1ts Chilli flakes
1ts Red chilly powder
2tbs Garlic finely chopped
2ts Sugar
1ts Salt (as per taste)
2tbs Tomato Ketchup
This Mexican rice is so easy to make and quick in a single pot, which taste delicious. You can also add your favorite veggies but I used only onion, corn kernels, Kidney Beans & Capsicum. It's super tasty one pot meal is definitely you need to try.
