I am not a fan of turkey so its a red wine roast with smoked hungarian paprika, smoked salt, sage, garlic & pink peppercorn rub, carrots, celery, multi colored potatoes, mushrooms & fresh rosemary at the end in my slow cooker. Another gorgeous slow cooker meal. Healthy Orange Chicken with mushrooms, shredded carrots, red pepper flakes, sugar snap peas & butternut squash over jasmine rice. The orange sauce is just from a bottle and added chicken stock to thin it out some. I added the sugar snap peas & squash at the end so they retain their sharp bite. I absolutely recommend to travel on the #highwayoflegends in colorado. The drive has incredible views and the air is so clear and crisp, its nothing like anything I have experienced before. It was sunny and 67 pretty much the entire drive to West Spanish Peak.
