I updated this with the recipe for people that are interested

This is some very easy vegan biscoff fudge I made. I can't be bothered baking that much in the heat and I had biscoff and vegan white chocolate left from the last cake I made so made this. It is great and you only need a piece or two to satisfy a sweet craving
If people want the recipe it is very easy:
400g biscoff
300g vegan white chocolate (or vegan dark)
100g vegan butter or coconut oil
1tsp vanilla (optional)
Pinch of salt
Melt everything in the microwave. Stir till combined. Transfer to an 8 x 8 Square tin
Put in the fridge to set (around 4-6 hours)
You can also modify this to make a pouring ganache to cover a cake as well

Been busy working on this cake for the last few days for a one year old birthday party. Parent was very happy with how it turned out. The bottom tier is a vegan vanilla sponge with vanilla buttercream and raspberry jam, the top tier is a vegan lemon sponge with a homemade vegan lemon curd and vegan buttercream. Both tiers are covered in a vegan biscoff ganache
