Why is it better to use a bar rather than a smith machine for squats? I seem to be able to squat deeper and heavier on a SM
That’s simply because you’re not used to balance your body with just a barbell.
Free weights will always be better than assisted/machines. But it doesn’t mean that assisted/machines are useless.
Why free weights are better? Because it forces you stabilize and control the movement through the range of motion. Since you need to balance your body during the movement, you will work on your stabilizer muscles, therefore use more muscle during the movement, which will help you burn more calories.
However, the smith machine is good for beginners who are trying to get a good form. But when you master the form, go to the squat rack. Keep in mind that you won’t be able the same amount of weight though.
