Guiso Carrero (Argentinian Stew)

It's still all for play in Pool D with Argentina and Japan meeting tomorrow, and the winner of that match going through to the quarter finals! I have no particular favourites, but as the nights get much chillier, a warming Guiso Carrero makes a hearty and comforting dinner! Happy Saturday!
Ingredients (serves 4):
2 tablespoons olive oil
725 grams/ 1.60 pound good quality stewing meat (I used veal osso bucco)
1 onion
1 green Garden Bell Pepper, rinsed
1/3 red hot chili pepper
1/2 teaspoon dried oregano
1/2 teaspoon dried thyme
1/4 teaspoon Cayenne Pepper
1 large garlic clove, minced
6 tablespoons red wine vinegar
450 grams/1 pound Garden Red Kuri Squash
4 medium or 8 small Garden Potatoes 
4 Whole Peeled Tomatoes + 1/2 cup of their juice
1 teaspoon fleur de sel or sea salt flakes
1/2 teaspoon freshly cracked black pepper
1 1/2 cup Beef Broth, warmed
a dozen fresh Garden Green Beans 
1 cup egg noodles
Heat olive oil in a large pot over medium-high heat. Add veal osso bucco (or the meat you are using), and brown well, a couple of minutes on each side. Once browned, transfer the meat to a plate; set aside.
Peel and finely chop onion, and stir into the pot. Fry, a couple of minutes, until softening.
Halve and seed Bell Pepper, then chop it and add to the pot. Thinly slice chili pepper, and stir into the pot, as well.
Season with dried oregano and thyme and Cayenne Pepper. Stir in minced garlic, and deglaze with red wine vinegar. Reduce heat to medium.
Peel and seed Red Kuri Squash, and cut it into cubes.
Peel Potatoes and halve (or quarter) them, depending on size.
Add Red Kuri Squash cubes and Potatoes to the pot, stirring well to coat in onion and herbs. Increase heat back to medium-high.
Roughly chop Whole Peeled Tomatoes and stir them, along with their juice into the pot.
Return reserved osso bucco, along with its resting juices, to the pot. Season well with fleur de sel and black pepper. Cover with warmed Beef Broth, and bring to the boil.
Once boiling, reduce heat to medium, cover with a lid, and simmer 45 minutes to an hour.
Rinse Green Beans and top and tail them. Add to the pot and cover with the lid. Cook, about 10 minutes.
Finaly, stir in egg noodles, cover with the lid, and cook 5 minutes more.
Serve Guiso Carrero hot, with a robust red wine like an Argentinian Cabernet or a French Ventoux. Buen provecho!

we used "Foragers depicts the drama's wround the practice of foraging for wild edible plants in Palestine/Israel with wry humor and a meditative pace. Shot in the Golan Heights, the Galilee and Jerusalem, it employs fiction, documentary and archival footage to portray the impact of Israeli nature protection laws on these customs. The restrictions prohibit the collection of the artichoke-like 'akkoub and za'atar (thyme), and have resulted in fines and trials for hundreds caught collecting these native plants. For Palestinians, thespies. laws constitute an ecological veil for legislation that further alienates them from their land while Israeli state representatives insist on their scientific expertise and duty to protect. Following the plants from the wild to the kitchen, from the chases between the foragers and the nature patrol, to courtroom defenses, Foragers captures the joy and knowledge embodied in these traditions alongside their resilience to the prohibitive law. By reframing the terms and constraints of preservation, the film raises questions around the politics of extinction, namely who determines what is made extinct and what gets to live on."

Chicken Carbonara

Ingredients
12 oz fettuccine
4 slices bacon
3 garlic cloves, minced
1 boneless skinless chicken breasts, cut into strips
Kosher salt
4 large eggs, beaten
3/4 cup shredded Parmesan
3 tbsp dried parsley
1 1/2 tsp onion powder
1 tsp dried oregano
1/2 tsp dried basil
1/2 tsp dried thyme
Instructions
0. Cut your chicken breast into strips (across)
1. In a large pot of salted boiling water, cook pasta according to package directions until al dente. Drain, reserving 1/2 cup pasta water, and return to the pot.
2. Meanwhile, in a large skillet over medium heat, cook bacon until crispy. Transfer to a paper-towel lined plate.
3. Add chicken to the skillet and season with salt. Cook, flipping halfway through, until no longer pink, about 10 minutes.
4. Add minced garlic and cook until fragrant, about 1 minute. Turn heat to low.
5. Crush the bacon into pieces. Return bacon to the skillet. Add cooked pasta and toss until combined.
6. In a small mixing bowl, beat the eggs
7. To the eggs, add Parmesan, parsley, onion powder, oregano, basil, thyme, and a dash of salt. Stir until combined
8. Pour egg mixture over pasta and toss until coated. Add a couple tablespoons of the pasta water until creamy.
Add more pasta water by the tablespoonful as necessary.
9. Serve warm

Venison Stew

On this very chill Sunday, I am warming up in the kitchen, stirring and steaming my Christmas Pudding, and cooking this mouth-watering Venison Stew. I used to eat game often enough, when visiting my grandparents in Autumn and Winter, when I was a child. And I had missed the hearty, earthy flavour of venison. Thus, I was happy to find deer meat at the butcher's the other day. This comforting Venison Stew brought as much gastronomic pleasure as it did fond memories. Happy Sunday!
Ingredients (serves 3):
2 slices Speck ham
1 tablespoon olive oil
half a large onion
2 small garlic cloves
1 tablespoon olive oil
500 grams/1.10 pound venison (deer) stewing meat
2 tablespoons unsalted butter
2 small turnips, rinsed
4 medium carrots, rinsed
a few sprigs dried thyme
2 large bay leaves
1 teaspoon coarse sea salt
1/2 teaspoon freshly cracked black pepper
1 tablespoon plain flour
1/4 cup White Port
3/4 cup good, robust red wine (like a Southern France Fronton or a Barossa Valley Shiraz)
1 1/2 cup Beef Broth
1 heaped tablespoon whole-grain mustard
4 tablespoons
Preheat oven to 160°C/32°F.
Heat a large Dutch oven over a high flame.
Once hot, add Speck ham slices, and fry, about 2 minutes on each side until browned. Transfer to a plate. Set aside.
Add olive oil to the Dutch oven. Reduce heat to medium-high.
Thinly slice the onion, and stir into the Dutch oven. Fry, stirring often until softening and browning, about 4 minutes.
Peel garlic cloves, and stir them into the Dutch oven. Cook, 1 minute more. Transfer to a plate as well; set aside.
Heat olive oil in the Dutch oven.
Cut deer meat into large chunks. Add to the Dutch oven, in batches, to brown well, about 4 minutes on each side. Once all the deer chunks are well-browned, transfer them to a plate. Set aside.
Melt butter in the Dutch oven.
Peel and dice turnips. Cut carrots into thick slices. Once the butter is just foaming, stir in turnips and carrots. Add dried thyme sprigs and bay leaves. Cook, stirring often until golden brown. Transfer to the plate with the onions, leaving the fat in the Dutch oven.
Return deer chunks to the Dutch oven, along with their resting juices. Season with coarse sea salt and black pepper. Sprinkle with flour, and cook, stirring well, 1 minute.
Deglaze with White Port and red wine, stirring energetically until sauce thickens.
Roughly chop Speck ham.
Return Speck, along with reserved onion, garlic, turnips and carrots to the Dutch oven.
Stir in Beef Broth and whole-grain mustard. Bring to the boil.
Once boiling, cover with the lid, and place Dutch oven in the middle of the hot oven. Cook at 160°C/320°F, 2 hours. After a couple hours, stir in Quince Paste, and cook, a further 15 minutes, atr 160°C/320°F. (If the venison is not fork tender yet, you can add a bit of water, and cook a tad longer.)
Serve Venison Stew hot, onto Parmesan Polenta, Cheddar Parsnip Mash or Bay Leaf Kūmara Mash.

Savory Bread Pudding - Ham and Cheese Classic
Chef's Note: this is warm. And comforting. I think it'd make good brunch. It's maybe not too crunchy cause I used sandwich bread, but I don't mind.

Instructions
12 oz crusty bread (stale bread is best. I used wheat sandwich bread, the original used sourdough)
1 tbsp olive oil
4 to 6 small shallots
10 eggs
1/2 tsp salt
2 cup milk
2 cup heavy cream
1/4 tsp ground nutmeg
4 oz sliced cooked ham (~3/4 cup)
a few dashes dried thyme
3/4 cup + 1/2 cup shredded white cheddar cheese
Instructions
1. Cut the bread into 1 ½-inch cubes. Set aside in a large mixing bowl.
2. In a skillet, heat the olive oil over medium heat. Add the shallots and saute until softened, about 5 minutes. Remove from heat and set aside.
3. In a medium mixing bowl, beat the eggs.
4. Whisk in the salt, milk, cream, and nutmeg.
5. Pour the egg mixture over the bread. Add in the shallots, ham, thyme and ¾ cup of cheese and mix well.
6. Preheat the oven to 350°F degrees.
This gives the mixture time to sit (about 5-10 minutes) and for the bread to soak in the custard.
7. Lightly grease a 9x13-inch or 10x10-inch baking dish.
8. Carefully tip everything into the prepared pan. Sprinkle 1/2 cup of cheese on top.
The custard should come up to the top of the pan, but a few pieces of bread should be sticking out.
9. Bake in the center of the oven for about 1 hour. The bread pudding is done when the custard is set and no longer runny in the middle. Test it by sticking in a butter knife in the middle to check the texture. If the top of the bread pudding gets too dark before the custard is set, cover with a piece of foil and continue baking.
It will puff up big. But it decreases as it cools
10. Serve the bread pudding warm.
