Apple Herring Potato Salad

I am quite fond of Sill Potatissallader, and while I often make them in the Summer, there are no reason for not enjoying them warm, in the Autumn. I made this delicious Apple Herring Potato Salad with apples we collected in an orchard last weekend, and the crisp sweetness of the fruit pairs wonderfully with the saltiness of the herring and the tang of the dressing. Happy Thursday!
Ingredients (serves 1):
a large potato, thoroughly scrubbed
1 teaspoon coarse sea salt
1/2 small red onion
1/4 teaspoon dried dill
1 1/2 tablespoon apple cider vinegar
2 teaspoons caster sugar
1 heaped teaspoon Dijon Mustard
1/2 teaspoon whole-grain Dijon Mustard
1 ½ tablespoon olive oil
Half a large apple or a whole small one, rinsed
60 grams/2 ounces smoked herring
a small bunch Garden Chervil 
Cut large potato in four and add to a small pot. Add coarse sea salt, and cover with water. Bring to the boil over medium-high heat. Once boiling, reduce heat to medium, and cook potato until tender, 15 to 20 minutes.
Meanwhile, make the dressing. Thinly slice red onion and spoon into a medium bowl. Add dried dill, and drizzle with apple cider vinegar. Toss until the onion becomes bright pink.
Stir in caster sugar until dissolved. Add Dijon and whole-grain Mustards. Finally, whisk in olive oil, until perfectly blended.
Core and dice apple, and stir into the bowl, coating well in dressing.
Cut smoked herring into chunks, and add to the bowl. Toss gently to coat in dressing.
Once the potato is cooked, drain thoroughly. Allow to slightly cool, a couple of minutes, peel, and carefully cut into cubes. Add potato cubes, whilst they are still hot, and toss once more to combine and coat in dressing. 
Finely chop Chervil.
Serve Apple Herring Potato Salad warm, sprinkled with fresh Chervil, with a glass of chilled crisp white wine, like Pinot Grigio or Côtes de Gascogne.

Apple and Pear Blue Cheese Salad (Vegetarian)

A whole sunny (and warm enough) day, from morning to night, has been enough of a rarity lately, that I pounced on the occasion to make a salad for lunch! A beautiful and filling Apple and Pear Blue Cheese Salad, which tastes like a late Autumn harvest! Happy Wednesday!
Ingredients (serves 1):
1 tablespoon Quince Paste 
1 heaped teaspoon Dijon whole-grain mustard
3 tablespoons apple cider vinegar
1 1/2 tablespoon olive oil
1/2 teaspoon freshly cracked black pepper
1 cup lamb's lettuce
1 cup baby spinach
4 leaves Romaine lettuce
half an Ribston Pippin Apple, rinsed
half a Williams Pear
1 heaped tablespoon dried cranberries
30 grams/1 ounce good quality Roquefort, or other blue cheese
1/2 tablespoon pumpkin seeds
In a small frying pan over a low flame, heat Quince Paste, until softened. Remove from the heat and let cool slightly.
In a small bowl, combined softened Quince Paste, whole-grain mustard and apple cider vinegar. Whisk in olive oil until well-blended. Season with black pepper. Give a good stir.
Thoroughly rinse lamb's lettuce, baby Spinach and Romaine lettuce. Spin-dry well. Roughly chop Romaine lettuce.
Core and dice apple and pear.
In a medium bowl, combine lettuces, baby spinach, apple and pear. Add dried cranberries, and crumble in most of the Roquefort.
Drizzle generously with Quince Paste dressing, and gently toss, to mix and combine.
In a small frying pan, toast pumpkin seeds over a high flame until just fragrant.
Spoon Apple and Pear Blue Cheese Salad into serving plate, topped with remaining Roquefort and toasted pumpkin seeds. Enjoy!

Dear lord, never take this whole grain mustard from me. It adds so much to anything. Really, it's mustard in general. She's that girl or the condiment game. If you don't like mustard, grow up.
