Turkey Dumplings :) These little pillows of dough really make a satisfying dinner! They are deviously savory/sweet and nut and dairy free! No need to worry about nuts with takeout. What more could you ask for?
Ingredients :
Dough-
1. 2 cups of flourย 
2. 1 1/2 tsp of salt
3. 1 cup of warm/ hot water
Filling-
1. 1 tsp of minced garlicย 
2. 1 tsp of onion powder
3. 1 tsp of ground ginger
4. 1 pound of ground turkey
5. 1/4 tsp salt
6. 1/4 tsp pepperย 
7. 2 tsp of sugar
8. 1 tsp of soy sauce (you could use more but I limit soy in my diet)
9. 2 tsp of rice vinegarย 
10. 1/3 cup of chicken brothย 
11. 2 medium sized carrots shredded.
12. Canola oil for fryingย 
Method:ย 
Dough-
1. In aย largeย mixingย bowl, combine flour, salt, and waterย until you form a dough.
2. Knead the dough on a floured surface until it becomes smooth.ย 
3.Cover the dough and let it sit while you prepare the filling.
Filling-ย 
1.In a large mixing bowl, combine the groundย turkey, garlic, onionย powder, ginger, salt, pepper, sugar, soy sauce, rice vinegar, chicken broth, shredded carrots.ย 
Forming the dumplings-
1. Divide the dough into around 24 round balls. Roll them until they are about 4 inches wide of late dough.
2. Measure 1 tablespoon of the meat mixture and put it in the center of the dough. Fold the dough in half and make a crescent. Seal the sides but pressing down and then sing a fork to make pleats along the edges. Repeat this for all 24 dough balls.
3.Bring a large pot to a boil. Heat a frying pan with a thin layer of canola oil.
4.Put about 5 at a time of the formed dumpling into the boiling pot of water and let them sit for about 4-5 minutes. They should be floating on top of the surface at 4 minutes.ย 
5. After the 4-5 minutes used a slotted spoon to fish the dumplings out of the water and place them carefully into the hot frying pan. Be careful not to get water onto the pan because it will start to spit oil at you! Let them fry until the bottoms are brown.ย 
6. Transfer the fried dumplings onto a plate with paper towels on it to absorb excess oil.ย 
7. Repeat the boiling of dumplings and frying until all 24 are finished.ย 
8. Serve them with a vegetable and a dipping sauce. ( I love sweet and sour sauce!)
9. Enjoy.ย

Eczema Relief
I am so beyond frustrated with my skin problems. Iโ€™ve been suffering from eczema my whole life, but lately it seems to be getting worse and worse. My allergy test isnโ€™t for another month and Iโ€™m just so unsure of what I can and canโ€™t eat, or if I have a food allergy at all. Iโ€™m using African Black soap, totally natural laundry detergent, natural moisturizer, I gave up the steroid cream because I donโ€™t want my body addicted to it. Iโ€™ve tried giving up gluten and soy. Iโ€™ve not been drinking alcohol during the week. I already am dairy, egg and meat free. I just donโ€™t know what to do or what to eat. My arms and legs and back and torso are so itchy I almost want to die. Iโ€™m taking probiotics and vitamin d supplements. My scalp is itchy all the time and I switched to Head & Shoulders shampoo out of desperation and Iโ€™m mad at myself about it because itโ€™s not a cruelty free brand but I couldnโ€™t find another option. Anyway, Iโ€™m going to try food journaling on here and see if I can pinpoint anything. I need relief. I am so uncomfortable all the time and I havenโ€™t been sleeping well. Iโ€™m short-tempered because of it and the itch is all I can focus on. It sucks. It really fucking sucks.

My daughter asked me to make cupcakes today. She said we are celebrating the worlds birthday with a new year. Chickpea Salad :)ย 
Perfect as a side dish for a summer meal. It is light and fresh!
Ingredients:
1. 2 tablespoons of olive oil
2. 1 bag of frozen spinachย 
3. Zest of 1 lemon
4. 1 tablespoon of fresh lemon juice.
5. 2 tsp of crushed garlic.
6. Dash of salt and pepper
7. 1 can of chickpeasย 
8. 1 teaspoon of chopped parsleyย 
Method:
1. Cook the frozen spinach following the directions on the package (you want it to be wilted).
2. Drain theย spinach and then put it in a large mixing bowl.
3. Add theย olive oil, garlic, chickpeas, lemon zest, andย parsley.ย 
4. Mix the salad together and then top with salt and pepper.
5. Enjoy !
