「 コーヒーと料理・デザート」- Light - THE RAD x FLOWER COFFEE / BREW BAR にお越しいただいた皆さま、ご協力くださった方々ありがとうございました。
-
 今回は (夏の食材を使った ペアリングしてみたいメニュー案が急浮上し)瞬間的に開催を決めたので、いつもよりカジュアルなカタチで行うことにしましたが つい欲張ってやり過ぎてしまいました... やるからには一品では寂しいですしメニューの流れも大切で 笑
 結果、少し時間的に 焦らせてしまったり、待たせてしまったりした場面もありました。すみませんでした。この点は反省して、次回に繋げてまいります。
 内容(コーヒーと料理・デザート)に関しては、まだ実現出来ていなかったパスタ料理に自ら焙煎したコーヒーを合わせて表現できたこと、相変わらず前菜は繊細で苦労させられましたが シェフの柔軟さに助けられ 最終的にはばちっと決まったこと、定番となってきているティラミスには無限の可能性を感じ 今回も全く違う表情で終わりを飾ってくれたこと(コーヒーとの相性も○)から手応えを感じることが出来ました。急でしたが、頑張って良かった。
 次は秋の食材ですね... またふたりであーでもないこーでもないと頭を悩ませつつ、瞬間的な閃きを大切に取り組んでまいります。是非お付き合いください(新しいコーヒーの楽しみ方を体感ください)!

Kikunoi Honten, Restaurant(Kyoto, Japan) 菊乃井本店★★★★
I ate dinner at Kikunoi Honten.
To be honest, I was surprised to see dishes that used plenty of expensive ingredients such as braised shark fin with original shape, soft-shelled turtle, spiny lobster called Ise Lobster, and truffles etc.(^o^)
I felt the atmosphere of New Year, and had a wonderful time(^o^)
菊乃井本店に行ってきました(^o^)
フカヒレ姿煮、すっぽん、伊勢海老、トリュフ等高価な食材がふんだんに使われた料理が出てきて正直驚きでした(^o^)
時期的に正月らしい雰囲気も感じられ、とても素晴らしい時間を過ごすことができました(^o^)

↓The nearest one on the dish is Karasumi(dried mullet roe)which is wrapped in squid. It didn't have the strong feeling of Karasumi, and it was very delicious with a mild texture(^o^)
↓一番手前の唐墨は烏賊で巻かれたもので、唐墨特有のきつい感じがなく、やわらかな食感でとても美味しかったです(^o^)

↓Red rice steamed and tofu skin. There was sea urchin on top(^o^)
↓赤飯蒸し汲み上げ湯葉。ウニがのってます(^o^)

↓Raw fish meat of Akashi sea bream and Managatsuo. Managatsuo was served with Nikogori(jellied broth), and we could feel the quality and freshness of the ingredient because it had not distinct fish smell(^o^)
↓明石鯛、まな鰹の刺身。まな鰹は煮こごりと一緒にいただくのですが、臭みがまったく無く素材の良さと新鮮さが伝わってくる一品でした(^o^)

↓Raw meat of tuna was served with mustard and egg yolk soy sauce, and I couldn't predict raw meat of tuna and raw egg yolk would go so well together(^o^)
↓鮪は辛子と黄身醤油でいただくのですが、鮪と卵ってこんなにもマッチするとは思わなかったです(^o^)

↓Braised shark fin with original shape. Additionally, this dish contained big meat of soft-shelled turtle. What a luxurious dish!
