My pill container and pill cutter. I actually only have one daily prescription pill, but I found that I would sometimes forget whether I had taken it or not! So the pill container eliminates doubt. But I also use it for vitamins that I want to remember to take.
Nori (dried seaweed). For making sushi rolls. My daughter loves them but I haven't made them in a long time. I should make them for her again soon.
Salt. Use this almost daily for cooking. Would be nice to have a nicer container for it one day.

I put the marjoram into the bag of Italian seasoning. I refilled jars of curry and chili that I have sitting on the stove. I put what little was left in an almost empty jar of cayenne pepper into the chili powder, then filled the empty cayenne pepper jar with black pepper and re-labelled it. I emptied the packet of salt into the salt container. Here's what's left!

Mrs Dash "original blend" (onion, spices [black pepper, parsley, celery seed, basil, bay, marjoram, oregano, savoury, thyme, cayenne pepper, coriander, cumin, mustard, rosemary], garlic, carrot, orange peel, tomato, lemon juice powder, citric acid, oil of lemon).
Montreal Steak Spice (salt, spices, dehydrated onion and garlic, hydrogenated vegetable oil, red pepper). Now, it doesn't specify what spices, but Montreal steak spice will generally contain: garlic, coriander/cumin, dill seed, red pepper flakes/cayenne pepper, black pepper, salt, and maybe also paprika and onion powder. So we can assume there's something like those spices in here. I can definitely smell the black pepper and cumin.
Tikka masala spice mix. Again, it doesn't specify what spices, but tikka masala could contain: coriander seed, cumin seed, black pepper, red chili, cardamom, cinnamon, cloves, turmeric and/or nutmeg.
Whole red chili peppers (dried).
Himalayan pink salt
A packet of something Japanese I received as part of a gift. I know that the writing says "kobucha" but I have no idea what that is!

The chocolate crumbs and opened soup mix are in the garbage. The onion powder and sesame seeds fit into the container of bagged spices that I just finished purging. Progress!

Chestnuts are in the garbage. I filled the jar of curry powder on the stove-top right to the top. Still some left in the bag. One bag of thyme leaves I added to the "Italian spice"/Mrs Dash "original blend" mix. The garlic, onion and red pepper mix has unspecified spices in them, but it smelled like Mrs Dash, so I added it to that mix as well. Consolidate all these dribs and drabs of spices. It smells like what you might put on chicken or fish. So I'm going to call it my "fish and poultry seasoning".
The chocolate I will put where I can find it so it doesn't get lost again!

You seem like a good sort of person to ask; how does one go about building up a good spice rack? Not only just having the spices, but knowing what they are and how to use them, when and in what quantities, and developing a wider spice palette in general? I grew up in white suburbia and my mother has no idea how to use anything other than salt and ground black pepper, and I want to start making my foods more flavorful. I am tired of utterly flavorless dry roast pork! But I have no idea where to begin lol.
I'd say to start by trying a lot of foods that use a lot of different spice profiles and seeing what you like. If you like Thai food, look into Thai spices and try cooking a few recipes. If you like Indian food, try Indian recipes. If you don't know if you like a particular kind of food, go out and try it and see if you do.
I think the best way to build up your spice rack is to do so slowly over time as you familiarize yourself with different flavors. Don't go out and buy a ton of stuff, go out and buy cumin and make a rice recipe that calls for cumin and see if you like it, then next time maybe add another spice like cayenne pepper to the recipe and see if you like it.
Spices can be really expensive, but they can also be really cheap if you're looking in the right places. Try to avoid the shiny organic spice jars, and see if there are packets of spices in the various "ethnic" food sections of your grocery store (in California it's pretty common to have a Mexican food section and an Asian food section in the store and you'll often find stuff like a packet of cumin for 70 cents that's got the same amount of spice as the organic jar that costs five bucks in the spice aisle).
Once you've got some basics down, start branching out and seeing if you've got any good markets nearby that have more unusual spices. Large Bastard and I get most of our bulk spices from a Middle Eastern market around the corner from our house or at an Indian market a few miles away because it's WAY cheaper to get allspice or turmeric or garam masala from those stores than it would be from the grocery store.
And if you're starting at the basic-basics, like how to season a simple pork roast, check recipe blogs. Find different bloggers and test their recipes until you find someone you trust, then follow their recipes. One good place to start is with Chef John and Food Wishes - he has a wide variety of cuisines that use a lot of different spices and has recipes that range from very simple to very complex.

Large Bastard really likes Food Wishes and trying recipes from Chef John - he cooks less than I do and has less of a sense of what to add to a pot to get something to taste the way he wants it to, but he's gotten very good at taking Food Wishes recipes and tweaking them or adjusting them and figuring out how to mix and match flavors.
Just cooking - finding a recipe that looks interesting and following it - is a really good way to get better at this kind of thing.
That's actually one of the reasons that I think meal kit boxes like blue apron can be worth it for people who want to learn how to cook - they give you recipes you wouldn't have thought to look for and provide small amounts of the required ingredients so you can sample them and figure out if you like them. My dad and sister got blue apron for like two years and it has significantly improved their cooking skills and ability to mix and match flavors.
It just takes time and money and trial and error. Easy, right? (It isn't, but there's also no way to make it faster other than doing more experiments. Thankfully there are ways to make it cheaper, and yeah looking at local specialty markets is a good way to save on spices)

“Severus!”
Severus would never get sick of this sight. Lily's broad smile and bright green eyes, as she ran toward him, her hair streaming out behind her in a brilliant red wave. His stomach was fluttering wildly, and he spread his arms wide as she leapt into them. The detritus of the day melted away leaving him feeling warm and loved.
“Lily,” he breathed into her hair, half a prayer, half a vow. He would keep her safe. He would do anything and everything just to keep her here in his arms.
She let go and looked up at him, her eyes sparkling. “I made your favourite.”
He smiled and let her lead him into the house.
Spinner's end was different now. What had once been a dingy shack, falling apart with time, was now clean, tidy and covered in bright wallpaper. The chairs had been reupholstered in bright colours with homely-looking throws and pillows draped all over them. It was amazing how such small things could turn a place that he loathed into the one he never wanted to leave.
The entire house was filled with the smell of something cooking. The scent of chicken, tomato, turmeric and garam masala filled the air. His stomach dropped. Of course, it was butter chicken.
He plastered a smile on his face. “It smells amazing.”
She whirled around with another giant smile and placed two plates down on the table. “How was your day?”
Severus summoned two glasses and a bottle of wine, and began to pour some for the both of them. He thought back over the contents of his day. His mind filled with images tinted in blood and the sound of screaming. He took in a shuddering breath and gave her a weak smile.
“It’s a lot better, now that I’m here with you.”
She reached out a hand to cover his own and tilted her head, a small smile playing across her face. “You always say the sweetest things.”
“Only for you,” he replied as he brought her hand up to his lips, his fingers brushing against her knuckles.
“Severus,” she scolded, “eat up before it gets cold.” She wiggled her eyebrows suggestively. “We can pick that back up after dinner.”
She lifted a forkful to her mouth and moaned at the flavours. Severus brought his up to his mouth and chewed on the spicy meat. He kept his expression blank as he quickly swallowed down the burning flesh, trying not to let the pain bother him. Sweat started to bead against his forehead and he slowly sipped on his wine.
When the plate was empty, and his throat felt like it was on fire she stood and collected the plates.
He grasped her wrist, gently stopping her. “It’s ok. I’ll wash up. You cooked after all.”
She held his face between her hands and kissed him sweetly. Her cool lips were a balm against the flames burning him from the inside.
“How did I get so lucky,” she murmured before moving off into the lounge.
Severus watched her go before sighing and filling himself a glass of water that he drank like a man dying of thirst.

NaClYoHo Wrap-ups
Another project that was on my NaClYoHo list that I never quite got to was reorganizing my kitchen cabinets, specifically my spice/baking/tea cabinet. I recently had a frustrating cooking experience (being out of spices I thought I had), so I decided to go ahead and order some organizers to help me get things under control and dove in today.

I bought two organizers to help get things put away in a manner that would hopefully leave them easily accessible/viewable so I don't keep accidentally buying multiple of the same spice (I have multiple things of Cream of Tartar, Cardamom, Garam Masala, and Mustard Seed currently, Please send recipes.). I also specifically needed something for my hot sauce collection (a friend got me an advent calendar).
For the spice cabinet, I got a 3-step, expandable acrylic organizer. At first, I thought it was going to be waaaay too big. but it actually works out reallywell.

It's on the second shelf from the bottom. On the left side are misc. short spices in the front and all my "whole seed" spices in the back. On the right are duplicate/replacement spices in the back and misc. tall spices in the front.
I tossed some things that had expired about 2 years ago, and I'm hoping the brown sugar will soften up some and become more scoopable.
I also bought a set of really cool magnetic spice racks! For storing my hot sauces.

They stick to the side of my fridge, so I had zero installation difficulty. And I tried to roughly group them by type so it'll be easier to find whatever I'm in the mood to try. Not sure what I'll use this for once I use up those sauces. But clearly that's not gonna happen for a while. (This is not, by any means, all the hot sauce I own. I've got....7 or so full-size bottles of stuff elsewhere. Really need to start using these up!)
There were 4 racks in the set, and I didn't have room to stick the 4th one to the fridge b/c of how the cabinets open. So I used it to store my daily seasonings instead:

On the left is a Whiskey Habanero hot sauce I've been enjoying. On the right is a packet of hot toddy mix I kinda-sort forgot I had. Gonna try to use it up this winter! Tucked just behind it is a little journal where I can keep notes about the different hot sauces I try.
The Glassware cabinet didn't get much reorganization. I mostly just found some vases and other things to donate that I don't use.

That rectangular jar on the left in the second shelf holds dried chili peppers, btw. Can you tell I like spicy food?
I've also clearly reached a certain phase of adulthood that has a lot in common with early childhood and pet-hood. Being stupidly happy about cardboard boxes!

I was almost happier about the fact that my new things came in a cardboard box that is perfect for collecting my donation items than I was about the organizers themselves, lol.
I'm hoping that reorganizing these cabinets and making my various sauces/spices more accessible will encourage me to cook more often. I really enjoy it, but it's one of those things my depression has really impacted.
I currently have a roast in the crock pot (good vehicle for hot sauce) and plan to saute some spinach and zucchini to go with it (good time to use a spice blend). We'll see how that goes.

Spicy Walnut and Rice Patties: walnuts, brown rice, eggs, wholemeal flour, turmeric, garam masala, cumin seeds, carrot, onion, tasty cheddar cheese, salt and pepper, ginger.

This week, tainted by menstruation, all traces of hope were gone like August. Every week is a promise but when the month changes it never feels that way. Distance across space can stretch and contract but distance in time only grows. I read a piece by Mark Fisher early this week, about how people talk about hope when they don’t have anything else, that to be hopeful you are passive. After taking that in I wondered what it was I had a flourishing hope for after completing menu one. I’m very impressionable. I meant for each menu to stand alone, to not think about the previous week after it was done, but when there are dots I will connect them.

The journey toward menu two began on the Monday, the fourth day of September. I was excited by the Cheeky Plum Sauce, the way I am excited by all things cheeky. They’re mischievous, they’re riveting, they’re crazy, they’re confusing and they’re illusive. But most of all, they are always unattainable. I realised that after visiting seven different supermarkets in two days looking for the 850 gram tin of Black Doris Plums in Juice. Driven crazy, I was prepared to spend $22.99 on a 580 gram jar of Black Doris in Pinot Noir Syrup. I walked to the organic grocery store close to my house in high wind, crouching in front of the baking essentials shelf, I remembered all my past mistakes and realised I had to stop. The next day, a salesman came to my work to ask why we had stopped using him as a supplier. I thought about how we were similar in the sense that we both had issues giving up.

I spent Tuesday assembling salads. Around 10PM my flatmate and usual dinner guest came through to the kitchen and remarked man, this is a full time job. The comment stirred inner thoughts and questions regarding the fact that I already have a full time job. I became stressed and tired. The headlining dish of menu two was the Spicy Walnut and Rice Patties. But because of what happened, and I think I intuited this, this week became about something so much bigger than cooking the menu itself. The rice patties fell apart, no longer patties, they were served as fried rice. The dinner party was a success, two salads, fried rice, and a store bought plum sauce were taken to the table. Everyone cleared their plates, seconds were dished up. But I felt so empty. There were three quarters too much onion in potato salad, Bishop and Carruthers had clearly stated one quarter of an onion, and I accidentally threw in the whole thing.I had always intended to do half, but never whole. This menu became a symbol of reinvention. The rice patties were reinvented as fried rice and on Thursday, I got a haircut hoping that it would change everything about myself.
