Ants have been farming for millions of years longer than humans. These particular ants herd mealybugs — small, sap-sucking insects that look like woodlice dipped in flour. The ants shepherd and protect the mealybugs so they can ‘milk’ the sugary nutritious fluids in their waste. The bugs used to drink primarily from local rainforest trees, but when humans started clearing the forest to make way for cocoa, the ants adapted, by driving their livestock into the fresh cocoa pastures.

This strategy shift entangled the cocoa trees in a web of pests and pestilence. When mealybugs drink from trees, they inject them with a pathogen called cacao swollen shoot virus (CSSV). In local rainforest trees, the effects of CSSV are mild, but cocoa — a newcomer to these forests — hasn’t had a chance to evolve countermeasures. As a result, the virus pummels the trees, swelling their shoots and roots well beyond their usual size while draining the colour from their leaves. Before long, often only a few years, the trees die.

Ethniquisine jaune
La viande jaune est un excellent choix pour tout amateur anthropophage : prête à la préparation de nombreux mets, marinée ou non, vous trouverez dans cette viande votre façon de savourer la vie. Elle peut être rôtie, grillée, braisée, poêlée, et intervient dans la préparation de diverses charcuteries (par exemple, les gigots jaunes). De surcroît, cette viande est la fournisseuse d'une matière grasse, l'asicellulite, largement utilisée en cuisine orientale et dont elle demeure connue mondialement. Sa peau raide et riche en fibres, minéraux et vitamines du complexe B s'échaude puis se flambe et se racle devenant ainsi la couenne jaunie qui est souvent utilisée pour confectionner des bouillons. Enfin, les lipides jaunes intramusculaires démontre une teneur relativement importante en acides gras essentiels dont l’acide linoléique et l’acide alpha-linolénique (oméga-3).
L'adage japonais, selon lequel « dans le jaune, tout est bon », va donc de soi.
Les morceaux préférables se situent dans les fesses et les muscles gastrocnémiens qui incarnent la quintessence de bidoche délicieuse et de graisse succulente sans trop de cholestérol. Ceux-là s’apprêtent à toutes les sauces, salées comme sucrées ; voici leur avantage.
Une recette de notre chef : Mao sauté aux oignons
Temps de préparation : Entre 40 minutes et 1H
Temps de cuisson : Entre 1 et 15 minutes
Difficulté : Très facile
Coût : Abordable
Liste des ingrédients :
1 c.a.c de sucre roux
1/2 c.a.c d’huile de sésame
3 c.a.s de sauce de soja
1 c.a.s de vin de riz (ou de xérès sec)
1 c.a.s de maïzena
4 c.a.s de bouillon de pot-à-feu
10 g du piment de Chóngqìng séché
4 gros oignons
100 g d'asicellulite issue du grand fessier
600 g de muscles gastrocnémiens
Préparation :
Éplucher et couper les oignons en lamelles. Réserver.
Couper le porc du capitalisme asiatique en tranches aussi fines que possible (l’opération sera plus facile si la viande est légèrement congelée).
Découper ensuite les gastrocnémiens en allumettes.
Dans un récipient, faire mariner les gastrocnémiens avec le sucre, la sauce de soja, le piment de Chóngqìng séché et le vin pendant 30 minutes.
Dans un bol, délayer la maïzena avec le bouillon. Mélanger et réserver.
Faire chauffer une poêle à feu vif pendant 30 secondes. Y verser 1 c.a.s d’huile d’arachide, ajoutez-y fondre également l'asicellulite. Au bout de 30-50 secondes, ajouter la viande.
Toujours à feu vif, remuer continuellement le contenu de la poêle pendant 2 minutes.
Déposer les gastrocnémiens dans une assiette.
Ajouter 1 c.a.s d'huile d’arachide dans la poêle et laisser chauffer pendant 30 secondes à feu vif.
Ajouter les oignons. Sans baisser le feu, remuer continuellement pendant 3 minutes.
Incorporer la viande, puis le mélange à base de maïzena précédemment préparé.
Laisser cuire pendant encore 1 minute en remuant doucement et sans arrêt.
Ajouter l’huile de sésame.
Mélanger rapidement puis retirer immédiatement la poêle du feu.
Les gastrocnémiens sont faciles à faire et délicieux avec du riz blanc nature.
