Plant Based Carrot Cake Bites 🥕These are a new find and have become a family favorite!! 🥕 You are getting your veggies in but it doesn’t really seem like it, No Joke 🤝 They make for a great healthy snack on-the-go or a quick healthy dessert. These are GF, vegan, and overall so delicious 🤤 Ingredients: - 1 cup rolled oats - 1/2 cup walnuts - 12 medjool dates - 1/2 cup grated carrots - 1 tsp vanilla - 1 TBS maple syrup - 1 tsp cinnamon - shredded coconut for rolling Directions: - cut out pits of dates and soak in warm water for about 5 minutes - drain the water and place dates in a food processor or powerful blender along with the rest of the ingredients (except the coconut) and blend until it becomes a dough - form dough into tablespoon sized balls - add shredded coconut to a plate and roll each ball in the coconut shreds - enjoy and refrigerate the rest.
