Ingredientsâ
⢠1 lb large wild-caught raw shrimp, peeled and deveinedâ
⢠1 t ground cuminâ
⢠1 t paprikaâ
⢠½ t chili powderâ
⢠½ t dried oreganoâ
⢠½ t sea saltâ
⢠Ÿ t garlic powderâ
⢠1 T avocado oilâ
⢠â
cup mashed avocadoâ
⢠2 cups sliced cucumber rounds, Âź-inch thickâ
⢠â
cup minced red onionâ
⢠â
cup chopped cilantro
Instructionsâ
1. Blot the shrimp dry with a paper towel and place into a medium bowl. Add the dry seasonings and toss gently to coat.â
2. Heat the avocado oil over medium-high heat in a cast iron skillet for 3 minutes. Add the shrimp to the pan and cook for 8 minutes, stirring occasionally.â
3. When the shrimp are pink, transfer them to a bowl and refrigerate for 30 minutes to chill.â
4. When finished, spoon 1 tablespoon of mashed avocado onto each cucumber slice and top with a shrimp.â
5. Sprinkle red onion and cilantro on top and serve immediately.â

Sour - Plain Greek yogurt
Savory - Pesto @snuckfarm
Crunchy - Walnuts
Salty - @redmondrealsalt
Steamed Beets (to preserve nutrients):
1. Trim and scrub beets.
2. Cut in half if large.
3. Place in a steamer basket over simmering water.
4. Cover and steam for 30-40 minutes.
5. Optional: Peel once cooled.
Roasted Sweet Potato Rounds:
1. Preheat oven to 400°F.
2. Wash & peel (optional) the sweet potato.
3. Slice into 1/4-inch thick rounds.
4. Toss slices in a bowl with extra-virgin olive oil, salt, pepper, and herbs of choice.
5. Arrange in a single layer on parchment-lined baking sheet.
