I have my first born embarking on her first day of high school, and I can't promise I won't cry 😢. In a blink of an eye, our baby is all grown up. 👶🏽 👉🏽 👧🏽⁠ ⁠ That means I've been busy making some home-made treats for lunch boxes - yep it's that time of year again.⁠ ⁠ I'll start great - make lots of healthy snacks - then get tired 🥱 and buy packaged food 🤣 I'll give it a good go though! Anyone else with me on this>⁠ ⁠ These beauties are our super easy choc chip cookies - healthy, high in protein and no refined sugars. If you're school is nut free you can sub out the almond flour for regular flour.⁠ ⁠ RECIPE 👇🏽⁠ ⁠ 1 ½ cups almond meal⁠ 1 cup plain flour⁠ ½ cup coconut sugar⁠ 1/3 cup melted coconut oil⁠ 2 tablespoons almond butter or seed butter⁠ ½ teaspoon baking soda⁠ 1 tablespoon maple syrup⁠ Pinch salt⁠ ½ cup chocolate chips⁠ ⁠ Mix all together to form a dough, roll out into small balls and flatten them a bit, bake in oven at 180 degrees for about 12 minutes.⁠ ⁠ THAT'S IT!! ⁠ ⁠ Sending all my ❣️ love to those that like me, have a child embarking on something new and exciting tomorrow. Egg and Cheese Sandwich memories. Found this photo from a longtime ago, as I was searching for another and remembered my mother making these for my dad and my lunches. She would use Mayo, sharp cheddar cheese from the dairy near our country farm, bread from the store, not homemade, but then add a huge thermos is iced tea, pringles chips (to mine) and Chip Ahoy Cookies. At lunchtime these were cold sandwiches and by the time school let out, I had leftover chips and sweet tea for the ride home.
