Asparagus and Pea Pesto Pasta is a vibrant and flavorful dish that celebrates the fresh produce of spring. The homemade pesto sauce adds a burst of green goodness to every bite.
Ingredients: 8 oz pasta. 1 bunch asparagus, trimmed and cut into bite-sized pieces. 1 cup fresh or frozen peas. 2 cloves garlic. 1/4 cup pine nuts, toasted. 1/4 cup grated parmesan cheese. 1/4 cup olive oil. Salt and pepper to taste.
Instructions: Follow the directions on the package to cook the pasta until it is al dente. Just before the food is done cooking, add the peas and asparagus to the boiling water. Put garlic, toasted pine nuts, Parmesan cheese, and olive oil in a food processor and blend them together. To make the pesto sauce, blend the ingredients together until they are smooth. Add pepper and salt to taste. Keep 1/2 cup of the pasta water and drain the pasta, asparagus, and peas. Put cooked pasta, asparagus, and peas in a large skillet over medium-low heat. Add the pesto sauce and toss everything together. To thin out the sauce if it's too thick, add the pasta water that you saved. Add two to three more minutes of cooking and mix everything well until it's all hot. If you want, you can serve it hot with extra grated Parmesan cheese and freshly ground black pepper on top.

Enjoy this tasty dish of roast chicken with spring vegetables. The chicken is soft, and the vegetables taste fresh and in season. The infusion of garlic and thyme gives the dish more depth of flavor, and the lemon slices give it a bit of brightness. It's a great meal for any event because it's simple to make but looks and tastes great.
Ingredients: 1 whole chicken, 3-4 lbs. 2 cups baby potatoes, halved. 1 cup baby carrots. 1 cup asparagus, trimmed. 1 lemon, sliced. 4 cloves garlic, minced. 2 tablespoons olive oil. 1 teaspoon dried thyme. Salt and pepper to taste.
Instructions: Preheat oven to 400F 200C. In a small bowl, mix minced garlic, olive oil, dried thyme, salt, and pepper. Place the chicken in a roasting pan. Rub the garlic mixture all over the chicken, including under the skin. Arrange the baby potatoes, carrots, asparagus, and lemon slices around the chicken in the roasting pan. Roast in the preheated oven for 60-75 minutes or until the chicken reaches an internal temperature of 165F 75C and the vegetables are tender. Once cooked, remove from the oven and let it rest for 10 minutes before slicing. Serve the roast chicken with spring vegetables hot, garnished with fresh herbs if desired.

Rainy Spring Pasta is a tasty and comforting dish that is great for cold nights. Fresh spring vegetables like cherry tomatoes, asparagus, and peas are mixed with the rich flavors of garlic and Parmesan cheese in this recipe. On a cold spring day, this quick and easy meal will keep you warm.
Ingredients: 8 oz pasta of your choice. 2 tbsp olive oil. 2 cloves garlic, minced. 1 cup cherry tomatoes, halved. 1 cup asparagus, trimmed and cut into 1-inch pieces. 1/2 cup peas. 1/4 cup grated Parmesan cheese. Salt and pepper to taste. Fresh basil leaves for garnish.
Instructions: Follow the directions on the package to cook the pasta until it is al dente. Remove the water and set it aside. Warm up the olive oil in a big pan over medium-low heat. Add the minced garlic and cook for about one minute, until the garlic smells good. Put asparagus, peas, and cherry tomatoes in the pan. For about 5 to 7 minutes, or until the vegetables are soft, cook. Toss the cooked pasta and vegetables together in the pan after adding them. Put grated Parmesan cheese on top of the vegetables and pasta. Add pepper and salt to taste. Toss everything around until it's all covered. Before serving, sprinkle with fresh basil leaves. Enjoy while hot!

Last weekend I went birdwatching for the first time in Matsunoyama, about an hour from #joetsu in the city of #tokamachi. Cold rain was unexpected but our group of nine didn’t let it bother us. More than bird 🦅 watching, it was bird *listening* as many species were heard and not seen. These birders can hear a fragment of a chirp and tell you exactly what creature made it. Where I see a grey blob darting across the sky, they say, “red headed finch!” Great to see the beginnings is spring when it is further along down where we live.
