The photo on the left was taken in 2010, a few months before I travelled to Nicaragua for the first time. I was vegan at the time but my diet consisted mostly of processed and refined food stuffs just as long as the ingredients list on the package didn't contain any dairy or meat. My whole food consumption was seriously lacking. The photo on the right was taken in 2013, three years after living in Nicaragua. The first year of living in a tropical country was a definite struggle for me physically. I was always very, very hot.. and sweaty so much so that it made me terribly insecure. I understood my dosha and basic Ayurvedic principles so I decided to experiment with my diet. I began to incorporate more cooling raw foods into my daily diet and ditch the heat. The switch was monumental. My body began to adapt and adjust to my new climate effortlessly. Over the next three years I continued to gradually refine my lifestyle by eliminating foods that I felt were creating negative effects on my body and mind. I started with alcohol (this choice stemmed from a lot of different reasons in my case) and about a year later eliminated gluten and through that process discovered that grains were no longer serving me either. Three years in, I found myself in a place where I was getting all that I needed from large amounts of fruits, dark leafy greens, vegetables, nuts and seeds and this new lifestyle just took over. I craved the hydrating water content that fruits contained and felt so much lighter and energised, in mind and body. I'm describing my timeline because I think it's important to note that a healthy balanced lifestyle doesn't always happen over night. Throughout time, the process of mindful elimination makes us more aware and conscious of the subtle and maybe not so subtle effects that unfavourable foods have on our minds and bodies (outside as well as in). As we gain an understanding of what foods have negatives affects on our bodies, minds and the environment, we naturally begin to want those foods less and less and instead yearn for foods that will nourish and sustain us and the Earth. By comparing the two photos below you can see a pretty big contrast in the health of my hair and eyes. Living foods give us more life. Living foods are hydrating and nourish our skin, eyes, nails and hair so much more then any beauty product will ever do. This isn't to say that I have never eaten grains or gluten since. I was very, very strict for a long time but I've now come to understand the importance of flexibility. Sometimes we are in situations that are out of our control (like a limiting restaurant which Nicaragua has a lot of!) and through a lot of trial and error, I've personally found that it's better to allow yourself to enjoy a meal wholeheartedly rather than to restrict yourself, even if you would never ever normally eat something like that in your home. Restriction and negative thoughts can release toxins in the body which can be more harmful to you, compared to a little bit of processed food here and there, as long as it's sparing of course. I truly believe the answers to health and longevity lie in whole plant-based foods which come from the Earth and have not been processed or refined. I share my experience because I feel SO passionately about plants and their healing effects and also because they have truly changed my life. Nature is perfect and has provided us with all that we need to live and thrive on this Earth. It's just a matter of whether we make the honest effort to nourish ourselves with what we have been given.

Temporary vs. Daily Contentment
Staring out of my living room window I am looking at the gardens in my front yard popping up. I think there must be a jillion colors of green in Vermont this time of year! My husband has an incredible green thumb, and these gardens are part of my "daily contentment". A whole food plant based and raw way of life also provides me with daily contentment. It is really astonishing supercharging and revitalizing my "sick cells". I am being and feeling genuinely happy, relaxed and clear headed again. I don't remember ever feeling this way. My recent past of highly processed foods, binging on candy, and spending money "fill up" was always only temporary and fleeting. When it was over I felt like hell again. So what I'm going to do is nourish "daily contentment". Be aware and awake! Make it a great day! Xoxo
