Lebkuchen

Menge: 2-3 Bleche

Vorbereitungszeit:  20 Minuten

Gesamtzeit: 1 Stunde 20 Minuten

Zutaten

200 g    Honig

75 g      Butter

100 g    Zucker

1           Ei

1 TL     Lebkuchengewürz

1 Prise  Salz

400 g    Mehl

2 TL     Backpulver

10 g      Kakao

Zubereitung

In einem kleinen Topf Butter, Zucker Honig und die Prise Salz geben und bei niedriger Hitze und gelegentlichem rühren mit einem Ess oder Holzlöffel die Zutaten erhitzen bis der Zucker sich vollständig aufgelöst hat. Den Topf vom Herd nehmen und ca. 10 Minuten abkühlen lassen. In eine große Schüssel das Mehl sieben und Backpulver, Kakaopulver und das Lebkuchengewürz ebenfalls dazugeben. Mit einem Schneebesen die Trockenzutaten miteinander vermischen. Die etwas abgekühlte Honigmasse mit in die Schüssel zu dem Mehl geben. Das Ei dazugeben. Vorsichtig mit dem Ei, wenn die Honigmasse noch zu heiß ist kann das Ei womöglich klumpen. Alle Zutaten zuerst mit einem Löffel grob verrühren, anschließend mit der Hand die Masse zu einem stabilen Teig kneten. Frischhaltefolie über die Schüssel machen und den Teig für eine Stunde in den Kühlschrank damit der Teig sich festigen kann. Nach der Ruhezeit den Backofen auf 180°C vorheizen und eine Arbeitsfläche mit etwas Mehl bestäuben. Den Lebkuchenteig mit einem Nudelholz auf ca. 1 cm dicke ausrollen und Formen nach belieben ausstechen. Ein Backblech mit Backpapier auslegen und die ausgestochenen Lebkuchenformen darauf legen. Den Lebkuchen im Backofen für 10-15 Minuten bei 180°C Ober/Unterhitze ausbacken. Alles abkühlen lassen und nur noch nach belieben Dekorieren.

Made bread today! My loaves are finally getting good! The other pictures are of it before it was baked, after it was baked, and my sandwich. If your curious what recipe I use, I don’t! I start with 3 cups flour, a little salt about a teaspoon, roughly 2 tsp yeast that’s been activated in some warm water, about 1/2 cup plant milk and then 1 cup water. If you like sweet bread add some maple syrup or make a simple syrup with raw sugar and add that. To make the bread I mix my ingredients & stir adding flour until it’s a good doughy consistency. I let it rise, knead for 10-15 min adding flour as required to keep it from sticking. Then shape and rise again. I don’t have an oven in my basement apartment, I bake this in a toaster oven for 40 min at 450 f. I’m learning that bread takes practice. I have made some HORRIBLE loaves in my time. One was so bad I buried it in the wooded area next to my house. It was so heavy I couldn’t even convince myself to add it to the compost.
