It was the last week of February, one that disrupted my notion of rewriting each year because there hadn’t been a February 29 in four years. The Twenty-Fourth dinner party was to fall on the 28th, the day in February that would usually signify an end, it did last year, for two reasons but the second I won’t go into. The aim of completing the Vegetarian Adventure Cookbook was becoming unclear. Most things were becoming unclear. I was once again unsure of the menu and the week that I was heading into. At the same time, I was experiencing delusions of grandeur, declaring to friends that I had “rid myself of my defeatist attitude”. I knew it was the end of February only because I could not, in good conscience, list it above January in my iPhone’s note of month rankings. The dinner tonight would be the first held in the new dining room.
Supermarket shopping was confusing this week as the list was long and did not include only ingredients from the cookbook, as it usually did. On Wednesday afternoon I noticed I had left broccoli off of the list. I walked across to the fruit and veggie store, in tiny shorts and birkenstocks. The weather was still hot because there were still two days of summer left. When I paid for the broccoli the shopkeepers closed up around me. The fruit and veggie store could not be the only stop I made that night, when I got home I believed that I was prepared to start until finding there was no plain yoghurt in the fridge. Admitting defeat, I drove to the supermarket in the same outfit. When I walked through the entrance I hit the sensor gates and set an alarm off but didn’t look back.

Lethal preparations
Finally home, I was motivated only by the fact that I had to begin. I had said that dinner would be 8 PM but now needed to push this back to the regular 8 30 PM. I chopped vegetables and got tear gassed by onions. I took a photo of my face on SnapChat and wrote across it “ong these onions” with a spelling mistake because my eyes stung and streamed a cloudy liquid. I collapsed, frail and defeated, on the floor of the new lounge. The largest pan handled the ingredients for the Fettuccine with Spinach and Walnut Sauce, while the Baccarat cooked the vegetables for the Tagliatelle. I boiled water and salt in two different pots for two types of pasta that to me looked exactly the same. Liquids were added to the respective pots, where they simmered simultaneously.

The guests came through, six of them. Four of them were privy to the information of the dining room change as two of them had partaken in the move, and three of them were in the group chat in which the change had been organised. I refuse to remove people from the chat when they move out. Two of them, had the group chat on mute, and therefore were not aware the change had taken place. The only guest who had no way of knowing was disappointed by the new lounge, as I had marketed it as a “suprise” and they thought it meant I had invited a shock guest.

When I served dinner in the new dining room, its faults came to light. It felt like a drag, shepherding the guests from the lounge into the room. Walking the dishes past the bathroom into the new dining room. I felt the walls that I abandoned watching me as my guests piled the pasta on their plates. It felt awkward, eating in the confined space I had once slept in. I was tired of pasta. 
Looking at February critically, to justify its placement on the month ranking list, the sameness between menus, took away any individuality to the menus. This was Menu Twenty-Nine, but it could have been any other number and I would not have noticed. The fettuccine and tagliatelle were indistinguishable on each plate. It’s difficult to learn anything, practical or otherwise, when you engage in the same thing over and over. Vicious circles. On Thursday morning, the extra day of the year, my MacBook Air was seemingly dead, it would not turn on.

I’ve never thought about my what last words would be. I had always assumed I would be 98, having aged better than brie, lying in bed surrounded by my family, my curls perfectly falling around my face, with a pristine pale pink lipstick and pearls on my neck and diamonds on my ears. I’d have outlived my husband, as I’ve always flocked towards older men, but I would see him reflected in my great-grandchildren, one of whom would have shared my philanthropic interests. I’d leave them all with some well-planned poetry, a single sentence that would change every one of their lives, resound in them and inspire them to change their actions for the better, but, as of now, due to my arrogant foolishness, my last words were to be “I’d rather stay here and keep losing.” And no one would remember them.
Thick arms wrap around mine, hiking me up by the armpits, and I am escorted out of the casino and through the hotel lobby, my high heels scrambling to make purchase on the ground below me. The few people scattered in the lobby pause to look at me, and then keep walking. The fun from the baccarat game has dwindled, the rosiness falling from my cheeks and panic settling in my chest. I couldn’t pull against them; there’s no way I could win in a fight even with some of Peggy’s training. I should have taken her up on her thigh holster offer.
The men stop briefly at the front desk. “What room is Ms. Carbonell staying in?”
“Obadiah won’t let you get away with this,” I grit, my arms pinned behind my back.
“Mr. Stane is currently preoccupied.” One of the men asks for a spare key, and the desk attendant fumbles in the cabinet to find the correct one.
A man in glasses walks past, tall but not intimidating, broad-shouldered but not bulky, nose buried in a pile of papers in his hands, and glances up, pausing to evaluate the scene. Our eyes make contact, and it takes him a second to evaluate my panic.
“Do you need any help, madam?”
“She’s fine,” one of the suited men replies. I’m too startled to scream, or speak, or even think at all. All I can hope is that someone in the lobby reads my face and intervenes. Grumbling, they forgo the key, and pull me out of the hotel lobby towards the parking lot.
This is how I’m going to die, I think, reminiscing what a waste finishing school was since I never learned to hold my tongue anyway, and it is my penchant for petty remarks sending me to an early grave. I can’t keep up with their pace, my high heels catching in almost every dent in the asphalt, and I almost lose my balance several times.
We approach a long, sleek black car with darkened windows, and I finally start calling out, “Obie! Obadiah!” to the empty parking lot, writhing against the arms around me.
“Ms. Carbonell! I think you dropped an earring.” The voice comes from behind. It’s the man in glasses, walking swiftly, with authority, except for the little cowlick of dark black hair on the right side of his head, twirling in the breeze as he stalks forward.
The men holding me turn to confront him as he takes off his glasses and slides them into his breast pocket. The men’s postures drop and their faces fall. Their grip on me lessens. He runs a hand through his hair and stares them down.
“Mr. Stark.”
“Release Ms. Carbonell at once.”
“We’re sorry, Mr. Stark, she-”
“You do know what at once means, don’t you, boys?”
They release me.
“I cannot apologize enough, Ms. Carbonell, for the behavior of these men. If they offend you again, I will personally write to their employers.” He looks at each one of them sternly, in turn.
One of the men stiffens defiantly. “We didn’t recognize you, Mr. Stark. In the betting room-”
“When you are the one who owns the casino, only then should you be concerned about its finances.” Stark’s stern face softens when he turns to me, offering me his elbow. He nods at each man with authority, and they shrink away. My heart is still racing, and I still must not be thinking straight, because I loop my arm through his, my life in the hands of yet another stranger.

The dinner at one of the restaurants inside Hellfire is delectable, but dining with the owner probably helps. There were too many options on the menu that I eventually pointing to something at random and ordered that. I had very little to say, besides non merci to the waiters who kept offering us champagne and thanking Mr. Stark for his kindness. The anxiety has set into my bones and I can’t help but fidget.
“I already told you, Maria, just call me Howard.” Up close, I can see that he’s older, probably in his forties. Creases line his eyes and mouth, probably from charming the pants off too many investors, and the investors’ wives.
“Okay, Howard, does wearing glasses actually work? To go unnoticed.” I peer at him over the top of my waterglass.
“It does. Works wonders. I had read about it in a comic and wanted to give it a try. People act different when their boss is lurking around the corner, and sometimes I just want to be a guest in my own hotel.”
A waitress clears Howard’s empty plate, leaving my full one, and she brings the dessert menu to him. Without looking at it, he hands it back to her, ordering two beignets. She asks if we need anything else, chest puffed high and smiling bright, and Howard responds in near-perfect French without looking away from me. The waiter walks away, dejected, her hopes of charming the billionaire dashed.
I pick at the dish, too rich for my current anxious appetite. My anxiety hadn’t run out of fuel yet. “What’s eating you, doll?”
“Why were those men watching me? And where were they going to take me? I wasn’t cheating.”
“I know you weren’t cheating.”
“You know? How?”
“There are cameras everywhere in the game rooms, tiny ones in lamps and plants and around every corner. They can tell when someone is cheating, and your moves seemed very intentional. And putting money in my pocket isn’t exactly cheating.” I don’t ask how the cameras would be able to tell, as I’ve been to two of his expos now and haven’t understood any of the gadgets presented. Any explanation would just go over my head. I wonder how many cameras litter the restaurant.
He doesn’t answer my question and instead asks one of his own. “Why were you spending your partner’s money like that?”
My partner. That’s right, I am technically in business with Obadiah; we’ve kept our short engagement to ourselves, and he’s always introduced me as his accountant. I slide my hands into my lap to hide the ring on my finger, and slide the ring off once it’s out of view. “My answer to your question might be the same as your answer to mine.”
Howard’s face lights up, and he leans forward on the table to get a better look at me. “So you’re clever, too, and not just pretty.” He doesn’t ask it like a question, but a statement, and I try with all my might not to blush like a child. The waitress returns and clears our plates, bringing the dessert he ordered. Howard leans back with a sigh. “I’ve kept my eye on Stane for the last few years. Not a bad man, but not a great one. Desperate. I was desperate, too, for a while, ‘til I realized the only thing that gets you anywhere is hard work. That’s how America does it.”
“He says while dining in France.”
“Hey, I paid for the meal in America dollars, doll.” His smile is wide, and honest, and youthful and endearing and… and it belongs to Howard Stark, notorious womanizer. Still, I find myself smiling in return, chin propped up in my hand, gazing at him. I can’t get caught up in his displays of wealth, but his confidence is something else. Obadiah isn’t confident like Howard. Howard has confidence to spare. He could bottle it and sell it, and convince everyone he met to buy it, that’s how confident he is. “How long are you in Monaco?”
“I leave November 22nd. Obadiah has had long meetings every day.”
“And because he leaves you alone in your room, you squander his earnings at the betting table in retaliation?” I look up at him, in surprise and defense, and he chuckles to himself.  “If I were him, I’d bring you to every meeting with me. You belong in the business room. What do you do at Stane International?”
“I keep the books. Accounting. I went to Columbia.” I want to impress him.
“And what do you do when you’re not working?”
“I work a lot with charities.”
“When you’re not working.”
“I suppose I dine with handsome strangers in foreign hotels.”
Howard takes one bite of the dessert delivered, then wipes his hands and rises to his feet. “Let’s go have some fun, Maria.”

“You’re only here for one more full day, is that right?” Howard asks me from the rooftop of the Hellfire Club. “Spend it with me. Obadiah won’t mind.”
He’s right; Obie wouldn’t even notice, and I don’t feel guilty for accepting. “What do you have in mind?”
We sit up there for hours, talking until sunset, the wind licking at his hair, teasing it from the gel. The soft colors of dusk make Howard look younger. I want to kiss him, I realize, and I’ve never wanted to kiss anyone before. At least, not like this. I push the feeling down deep. Every woman wants to kiss Howard Stark, with his deep brown eyes and his even deeper pockets. And if he wants to kiss me, he’ll have to work for it.
As if reading my mind, he whispers, “God, Maria, you’re the most beautiful woman I’ve ever laid eyes on. I’d give it all up just to kiss you.”
“Does that line usually work?” I turn away. I feel like a child in his gaze, naïve and eager.
“I don’t know. I’ve never used it before.” I don’t look at him, but I can feel his eyes on me. I fix my gaze hard on the horizon in front of me. After a moment, “Actually, I take it back. I don’t want to kiss you until I’ve earned it. I want to do right by you, Maria. I’ll become an honest man for you.”
I want to believe him, but I also believe the stories. I don’t know what makes me so special in Howard’s eyes, but I feel more seen with him than I ever did with Obadiah, and it’s the last sign I need to leave him.

Des Petits Trous...Toujours Des Petits Trous...
Sorry I have been absent from the blog. Blogging takes a lot of time, and Nic and I were trying to make the most of it before we had to fly away.
Okay, so last blog of France...
Epernay. We caught the late bus (3:00 PM) to arrive in Paris around 6 PM. I rented a place through Booking.com. What is the difference between Airbnb and Booking.com?
I’m going to go on a rant about Airbnb. 
I am writing this post at 10PM on Sunday, 9/29 in Paris. I’m going to jump around a bit in time, but I am need to address Airbnb upfront.
So, when Nic and I first arrived in France on 9/15, we stayed ONE night in Paris before driving to Saint-Malo and doing the road trip. Because we just needed ONE night to stay in Paris, I rented a ROOM via Airbnb. The photos of the apartment looked nice, and the apartment was in a really nice location.
Before we arrived, I received a BUNCH of messages from the host. Literally 4 messages. I’m going to post them here because I want a record of this (btw, homeboy needs to update his photo because he does NOT look like this, but that is besides the point):

Okay, looks innocuous enough, right? Then I received a SECOND message:

RED FLAG: #2: More than 30 minutes? #4, really? And then he says he looks forward to seeing us? 
Anyway, I was like, okay...I get it. He wants to make sure we can get in and etc. For the sake of completeness, here is message #3 (nice details, to be honest):

Message #4 (notice the timetable of letting him know about our arrival has become even more tight...it was 30 minutes earlier, and now it’s 20 minutes?):

Also, he said in the advertisement we could get into the apartment after 12:30, now it’s 12:45 PM. 
All that being said, we did our stay on September 15th. We left less than 24 hours later (see my blog post about our first stay in Paris) and moved on. The way Airbnb works is that you leave reviews for the host and they leave reviews about you as a guest. Let’s check my previous reviews:

Nic and I literally arrived at this guy’s apartment, didn’t cook, didn’t use the kitchen, drank 2 COFFEES using his Kurig machine/coffee pods, washed the 2 freaking cups we used,  and took 2 SHOWERS TOTAL. We arrived at 2PM and left before 10AM. 
Why did we arrive at 2PM? Because when I contacted homeboy when we arrived in Paris, he was out RUNNING, missed my call, and then was grocery shopping and said we couldn’t come to his place before 12:30. 
What review did he leave me?

Nope. I don’t play these games. Nic and I came to the apartment at 2 PM, I took a shower, and we took a nap. No lights were on. We LEFT, got dinner, and came back around 9 PM. We went to sleep, woke up at 8 AM, packed, drank 2 COFFEES, and LEFT. What lights? What electricity? And WHY AM I PAYING YOU?

Conclusion: FUCK. YOU. Sorry, that is harsh, but seriously? I am not sure if he can respond to my response, but if he can, good luck. I have said all I needed to say on this issue so that’s it. 
Nic had the issue with Airbnb in Arles (read that entry) so I will say: Booking.com your apartments/hotels if you can. It’s more professional, people purely rent their spaces to guests so understand what to expect, and don’t act like entitled assholes. Airbnb at your own risk. 
Okay, so I woke up to this bad review, so I just had to address it. But backtrack to Friday after we got off the train and entered our Paris apartment (which, btw is gorgeous; through Booking.com):

I have been in contact with the host the whole time. We have the whole apartment, and the host has been amazing in terms of being in contact with me. Our arrival time changed, and no issues. The kitchen is stocked with supplies, the sheets and bathrooms immaculate, and a complete 180 from asshole. 
Friday night, Nic and I just hit up a bar/art space and hung out:

We went walking through Paris, before returning to the apartment for some tapas dinner:

So, the plan was that we we were going to host a dinner party for Nic’s friends on Saturday. I planned a menu which went through some revisions due to the market availability, but I’ll address that. 
The original menu was:
Apertif: -Sausage (bought) -Sardine spread (homemade) -Nuts -Chips -Sparkling wine
Starter: -Red Cabbage and French Radish salad w/mustard vinagrette
Main: -Roast pork with an onion and grape sauce
Dessert: -Something bought
Cheese: -Up to Nic
Drinks: -Rouge
Saturday’s plan was to include antiquing (I wanted to buy some plates or glasses) and then to buy the food for the dinner party. Guests were to arrive at 6:30/7:00 (which meant 7:00 or 8:00 in French time). Guests were to include: Nic’s best friend (consultant), Nic’s brother (officer in French military) and Nic’s brother’s friend (historian). And me and Nic, of course.
So, now we are at Saturday.
We woke up and went antiquing! The oldest “flea” market in Paris is right outside the city. When you get off the train, you are greeted with a bunch of stalls selling fake Louis Vuitton and designer wares. Nic needed a belt, so he bought one:

Once you walk through the outdoor market, you walk through these antique, rich stalls that are selling really expensive items. Like, people literally have magnifying glasses examining signatures, construction, and the quality of the glass on items.

I wanted wine glasses, and bought 2 crystal Baccarat wine glasses for a good price (15 Euros each):

Plates and silverware were a wash since I couldn’t find matches or the plates weren’t hand painted. Anyway, when I have money I would love to come back and buy a complete set of glasses or silverware. 
Okay, after the day at the market it was time to get lunch and then go shopping for the dinner party. Nic used to live and go to university around the area, and knew of a really good vegetarian Indian restaurant (thank ____. I can’t wait to go back to being vegan!!!!)

Nic is probably literally gaining so much weight because of me. I eat half the food and he eats his portion and then finishes mine. On the menu was samosas (the triangles on the photo before) and then this meal was vegetarian biryani (rice), some yellow pea dal (to the left of rice), and then chickpea dish (far top left) and egglplant (far top right)  
After lunch, we went to a supermarket and bought all the food for the dinner party. Then I started cooking!
So, menu became revised because the store didn’t have any purple cabbage for the cabbage salad. Red cabbage salad became a Belgium endive, french radish, and fresh walnut salad (same dressing). Here is Nic cracking the walnuts for me:

I made a sardine spread a la David Lebovitz. We couldn’t find fresh sardines, so I had to buy canned sardines (just sardines, no oil). You have to remove the spines and bones, but that is fine. I just removed the spines and bones and baked them with a little bit of olive oil in the oven. Then follow the recipe. 
We served that with some Spanish chorizo (bought), pistachio nuts, mustard flavored potato chips, pretzels, and some baguette toasts along with sparking wine.

Belgium endive, sliced French radishes, some salad greens, fresh cracked walnuts, and a mustard vinaigrette.

Roast pork with a pearl onion/grape sauce with roasted fingerling potatoes. How I did the pork:
-Melt some butter in a dutch oven -Sear pork on all sides that has been coarse salted and peppered (I did 1kg for 5 people, and we had leftovers) -Remove pork, add a cup of white wine to the drippings -Add 2 cups of chicken broth, peeled pearl onions, garlic, and thyme -Add pork back in -Cook on low on the stove for an hour -Remove pork; cover with foil -Raise heat and reduce the onion sauce for 40 minutes -Another pan, add some butter -Add 1 cup grapes whole (French grapes) -Grapes will burst and become its own sauce -When ready to serve, add pork back into reduced onion sauce -Cook for 20 minutes to heat pork and finish cooking -Remove pork, slice -Top with onion sauce -Top with grape sauce -Sprinkle with chives
For the potatoes: -Clean and cut potatoes in half -Sprinkle with garlic and some olive oil -Roast for 1 hour -Serve

Dinner was a success! Dessert was an apple tart we bought. Nic’s brother is the forward right; he had to take the 6AM train to be back in the morning. The person I am talking to is the historian who went to school with Nic’s brother, and we were talking about politics (of course) and the differences in curriculum between France and America. Nic’s best friend Julien is a consultant, so we talked about our needy clients. After dinner, they all went out to meet other friends, but I stayed back to clean and just go to sleep. I was tired!
Next morning (SUNDAY):
I loaded the dishwasher from the night before, but we needed to do another load of dishes. Nic graciously said he would clean from the night before, so he unloaded and reloaded the dishwasher. The plan was to visit Musee d’Orsay, so we cleaned (he cleaned) and we left!

On our way to the museum, we passed by Serge Gainsbourg’s old house. Remember the small holes song from Saint-Malo? It has followed me here!

Nic’s mom loves the song, and I promised I would learn it in French.

After the museum, it was around 6:00PM. We went on a walk, and then went to the store to buy dinner and food for our flight tomorrow. We have to leave the apartment by 11:00 AM, and our flight is at 2:15 PM. 
Last dinner! Store bought pizza ($5) and leftover endive radish salad. And a quiche.

I can’t can’t can’t wait to be vegan again. Tomorrow, the meat and cheese will be gone.  
I have lots of trinkets I have bought along the way: mustards, salts, a St. James wool sweater, soaps from Marseille, art from Caylus, crystal glasses from Paris, candies, and of course all the memories. 
On our walk home, this rainbow greeted us. I’ll miss France, but it is time to come home.

At The Houston Design Center, Setting the Table Is a Work of Art
The 11th annual Deck the Tables competition gave us serious holiday hosting goals.

THE TABLES ARE SET, AND THE VOTES ARE IN. This year’s Deck the Tables, which saw 17 entries from 13 different showrooms, made for fierce, festive competition at The Houston Design Center. From antique stores to rug shops to flooring centers, showrooms across the interior design mecca on Old Katy Road rose to the annual challenge to set their most dazzling holiday-themed tables, and they delivered.
A panel of judges, including this writer, ranked the tables by awarding points for creativity, use of color and greenery, and more on a scale of 1 to 5—and we’ll be the first to tell you, dear reader, it was no easy task. As a first-year judge, I naively thought a quick after-work stop at each showroom would suffice and surely take no more than 30 minutes. Two hours and several glasses of wine later, I learned my lesson, having in some instances gone back twice to revisit certain tables (we’re looking at you, labyrinthian Memorial Antiques & Interiors) and assess earlier, hastier rankings.
As conversations with tabletop visionaries revealed, strategy varied widely from showroom to showroom. While some like interior designer Corbin Young sought a more approachable scheme actual holiday hosts could emulate in their own homes, others, like curators of dazzling chandelier-filled Charlotte Nail Antiques or Jim Shreve, CEO of Baccarat North America, were inspired by the grandiosity of their environment or the products at their disposal and instead opted for the tablescapes of your wildest dreams.
One common thread across the Design Center, though, was valiant effort. These people are professionals who take great pride in their art—which is what this is, really—and that’s to be applauded. It all becomes even more impressive when you consider that some of us—this “judge” included—have been known to take meals on paper plates in bed watching Netflix. Please let me know when we start giving awards for sheet crumbs.
In the end, there could only be seven—six who earned top scores from the judges’ collective reviews, and one who won the popular vote.

Most Creative: “It’s the Most Wonderful Time of the Year” by Kathie Flournoy and Oscar Zuniga at Memorial Antiques & Interiors
This year’s event benefited the Memorial Assistance Ministries Christmas Share Program, which provides toys and gift cards to hundreds of local children in need whose families struggle with securing food and basic necessities. MAM, a Houston-area non-profit, is dedicated to offering emergency financial assistance to individuals and families in temporary crisis who need help avoiding homelessness.

It worked, and conclusively proved the hypothesis that you can enjoy an exceptional and differentiated wellness break whilst at home in this frenetic city, emerging revived and fired up! We shot this astounding view from the terraces of The Corinthia Hotel London, which opened in mid-2011 after a c.£300m renovation to shed its former Ministry of Defense clothes. For the past 3 months, the hotel has hosted Dr. Tara Swart PhD (neuroscientist, medical doctor and Senior Lecturer at MIT) as director of its Neuroscientist in Residence program. In my intrepid travels, I’ve not encountered any hotel group enlisting such a specialist, but at once I understand why they’ve done it. It’s a brave, avant-garde step for the hospitality industry, and whilst the press releases speak of ‘boosting brain power’, I can attest to it having meaningfully enhanced my sense of wellbeing, my tranquility, my body’s energy and my mental focus after just a 2-night stay.
This is partly thanks to the program, but also the property itself. This hotel basically bisects Trafalgar Square and Embankment – both frantically stressful parts of the City – but you wouldn’t know that you’re within 500 miles of the nearest ‘Nelson’s Column’! The hotel is both low-key and high-end; familiar faces pepper the guest roster, as the hotel has become somewhat of an unofficial default for movie premiers and press junket interviews.
The clean lines of the décor throughout indicates an uncompromising approach to the finish, which is incredibly well invested, instilling the sense that you’re on solid, reassuringly opulent foundations. That sensation culminates in the centerpiece Crystal Moon Lounge; a spacious, triple-height atrium at the heart of the hotel, with a show-stopping chandelier composed of 1001 Baccarat crystal spheres, arranged in a sphere…
I was here to undertake a customized edit of the Brain Power Residential Package, which is a program is designed by Dr. Tara Swart PhD to promote optimal i) Sleep, ii) Nutrition, iii) Hydration and iv) Exercise; these are all the crucial pillars of a healthy lifestyle on which my blog majors, so it connected with me from the outset. The ‘extra mile’ is the way the hotel has neatly packaged up these components with their luxurious deft and created something which beautifully walks the line between lavish indulgence and health-retreat. To my mind, for £618, you’re investing in your well-being, benefitting from the academic depth of PhD-level research, and pressing the ‘restart’ button to emerge invigorated.
So let’s tackle these 4 elements (nutrition, hydration, sleep and exercise) one by one, to see how the Corinthia has paid homage to this credo.
1) NUTRITION
The theory is that since our brains make use of >25% of everything we eat, dietary input is linked to cerebral output.
It’s reassuring to see plenty of nuts, seeds, oily fish, avocado, quinoa, and grains, as this is essentially my favored diet (which features heavily in my book Fit In 3), which has been rubber-stamped by one of the leading scientific minds in her field.
The dedicated Brain Power Menu has been curated as a collaboration between Dr. Swart and the Corinthia’s Executive Chef Adriano Cavagnini to use ingredients which can help to optimize mental function. Here is the quinoa porridge dish from the breakfast menu (along with some delicious examples of the non-Brain Power offering)…
For the lunch/dinner menu, pictured below, I sampled every dish that my pescatarian credentials permitted, and was broadly struck by the excellence of execution. Often, where health-driven conceptual menus are involved, a dish might sound great on paper but seriously underwhelm on the plate – not at all the case here, with precision translation from the page, imaginatively brought to life. What’s on offer?
Starter: Beetroot & Kale Salad, Carrots, Quinoa, Parmesan Crisps and Raspberry dressing… delicious!
Starter: Organic Salmon with Green Mango Carpaccio, Blueberries, Toasted Almonds and Lemon Compote. This is a standout show-stopper. Exceptional depth of flavor.
Starter: Carrot with Turmeric Cream, Barley, Flax Seeds and Black Olives
Main: Green Tea Veal Fillet Paillard with Spinach, Puy Lentils, Cocoa and Black Pepper Sauce
Main: Roasted Squash with Wild Rice, Steamed Asparagus, and Red Pepper Oil
Dessert: Mango and Chia Seed Pudding with Yoghurt, Fresh Mango, and Raspberries
Dessert: Avocado Chiffon Cake with Manjari Chocolate Mousse and Cherries
Dessert: Coconut Tapioca with Papaya and Lemon Balm
2) HYDRATION
Optimal hydration is the single most underappreciated wellbeing tip I offer to personal training clients, and is something I’ve written about on my blog time and again. Water is the one and only liquid that fills you up, beautifies, can prove unexpectedly satisfying, and boasts a guilt-free 0 calories. Beyond the skin-deep though, it delivers oxygen to the muscles so that they can perform when you’re training, keeps the joints supple, restores energy levels, quashes hunger pangs, purifies the blood, helps the kidneys do their filtration job, and even takes the nutrients in your food on a journey through your digestive system! It is the very eau de vie, or aquavit (our Swedish equivalent!). I aim for 2 liters of bottled water a day, sipped at regular intervals, to stay topped up throughout!
Dr Swart’s work draws upon research into the body’s water balance, and the brain’s sensitivity to it. She concludes that even a minor 1-3% change in hydration levels can impair physical, motor and cognitive performance, so the program she’s designed focuses on optimal hydration.
For a little more fun, there are also Mocktails – non-alcoholic cocktails served up in their dramatic bar spaces by accredited mixologists: The Serotonin Sling (pictured below, with blackberry garnish) includes blackberries, blueberries, date syrup, coconut water and almond milk. Also, the Mox-ytocin includes Green Tea, Date Syrup, Mint Leaf, Lemon Juice and blackberries.
3) SLEEP
‘Survival of the most rested’ is how I like to think of it! Sleep is the ultimate repair workshop, where musculoskeletal renovation happens, immune health is replenished and mental alertness is restored. The ‘right amount’ of sleep will differ from person to person, but being stuck in the catch-22 of feeling perennially tired is not what I consider to be ‘wellbeing’. I’ve always believed 7 hours a night to be the minimum, and I like to give myself every chance for a quality night’s rest. Ensure the room isn’t too hot or cold, that there isn’t too much ambient light pollution, avoid screens for an hour before bed, resist caffeine after 13:00 that day, take a warm bath before sleep, and use lavender scent to lightly perfume the pillow.
Dr Swart’s view is that 7-9 hours of good quality sleep each night is essential to allow the brain’s waste-clearance system to go to work. A disruption in that process, she concludes, can impair IQ by 5-8% the following day, and an interrupted red-eye flight can devastate the IQ the following day!
To that end, the Corinthia rooms include excellent touches which I found perfect for the cause. Blackout blinds, snuggly bed socks, mattresses which regulate body temperature, a specially designed lavender pillow spray, as well as fluffy towels and heated floors in the bathrooms. These touches make a huge difference and enabled me to enjoy some seriously restorative sleep.
4) TRAINING AND SPA
Spending a day at a spa is not simply a hedonistic indulgence for the wanton pleasure-seeker; it has legitimate therapeutic effects which can make all the difference to a burned-out, run-down Londoner. The mood can be lifted by endorphin, dopamine and serotonin release, and it can promote regeneration and healing, muscular relaxation as well as invigorating & energizing, and expunging toxins in your body through the cycles of sweating and re-hydration. Plus it’s likely to make you sleep like a baby later that night!
Espa Life is the Corinthia’s in-house mega-spa set over 3,300 square meters and 4 floors. Cavernous, yet always intimate, it’s an impossibly relaxing experience, blending Chanel-inspired monochrome aesthetics with a suite of spa innovations, from hot-stone ‘anatomical loungers’ to effervescent ‘vitality pools’ and regenerative ‘sleep pods’, to a glass sauna with no perceptible walls, sleek lines and fibre-optics. This is the best spa I’ve visited in this country.
Scent is a big factor too; energizing citrus and tranquil lavender is piped throughout the various rooms via the air conditioning ducts.
I was fortunate enough to have enjoyed two exceptional treatments from Angel, the Spa Treatment manager. He is magical, and professionally accredited in a wide range of both scientific and holistic therapies. He administered the most exquisite sports massage I have ever received (and I am quite picky, being trained myself!), as well as leading me through a transportive, mindful session of Yoga Nidra, in which my mind achieved a transcendent state of conscious relaxation; I am somewhat of a cynic regarding many things ‘spiritual’ and prefer empirical evidence, but I was amazed at the effect from this fascinating practice on my body! I have never felt sensations like it, and implore you to try it for yourself, with an open mind or otherwise!
I also had a training session with the in-house PT team at the vast gym, which is bigger and better equipped than many commercial gyms in London. As it happens, there’s going to be a total refit of the gym, swapping out the current machines for an all-new lineup of Technogym’s top-end gear; that’s excellent news, as I can personally vouch for this kit, having visited their Italian factory & HQ a few years back, and been overwhelmed by the artistry involved in it! In the meantime, I made full use of the evaluative practices on-site to ascertain as much data as possible, and help work on my form with professional supervision – always a priority for me!
So two days later, after not really stepping foot outside of the hotel (other than onto the entrancing terrace of the Royal Suite during a little tour of the upper floors!), I exited the hotel with new vitality in my step. The hotel is world-class and has a unique aesthetic and feel, which in itself, will help you to revitalize. It’s difficult to say whether I “boosted my brain power” but during the stay, anecdotally, I had some extremely productive and clear thoughts about how I wanted to tackle the coming few months, and started mapping things out with clarity and lucidity. It’s not possible to say it was purely thanks to the Serotonin Sling, but I’m sure there was some causality there…

A WELLNESS RETREAT AT CORINTHIA LONDON…
London is arguably one of the world’s greatest cities, but living and working here, Londoners can become blind to its rare brilliance. Precious gems like Trafalgar Square, Parliament, The London Eye, The Mall (etc), are casually tarred with the ‘tourist’ brush, and avoided for fear of disrupting ‘the daily mission’. It’s a superfast-paced city in which to work and live… but it doesn’t have to be that way! In what is the first ever staycation Active Escape review to feature on FitnessOnToast.com, I recently spent 3 cosy days inside the walls of the palatial Corinthia Hotel London investigating something genuinely innovative; the Brain Power Experience. It’s been designed in conjunction with the hotel’s Neuroscientist in Residence, and was totally transformative for me! It worked, and conclusively proved the hypothesis that you can enjoy an exceptional and differentiated wellness break whilst at home in this frenetic city, emerging revived and fired up! We shot this astounding view from the terraces of The Corinthia Hotel London, which opened in mid-2011 after a c.£300m renovation to shed its former Ministry of Defense clothes. For the past 3 months, the hotel has hosted Dr. Tara Swart PhD (neuroscientist, medical doctor and Senior Lecturer at MIT) as director of its Neuroscientist in Residence program. In my intrepid travels, I’ve not encountered any hotel group enlisting such a specialist, but at once I understand why they’ve done it. It’s a brave, avant-garde step for the hospitality industry, and whilst the press releases speak of ‘boosting brain power’, I can attest to it having meaningfully enhanced my sense of wellbeing, my tranquility, my body’s energy and my mental focus after just a 2-night stay.
This is partly thanks to the program, but also the property itself. This hotel basically bisects Trafalgar Square and Embankment – both frantically stressful parts of the City – but you wouldn’t know that you’re within 500 miles of the nearest ‘Nelson’s Column’! This is the baccarat simulator program input mode. There are two viewer methods. There is a method that sees 2-6 sheets and a method that only sees 6 sheets. In the input mode, the print function is also supported. You can use the prediction function in input mode using the pattern you created in the simulation options. Paying attention to the arrow signals that the pattern you have specified has been found and bets.
How do I make a pattern and how do I set it up?

Inside the program are instructions on how to make all the educational material pictures and patterns. You can make the pattern you want, test it with simulation, and if it is a profitable pattern, you can test it in practice. Create different patterns, prove them through simulation and make it your own. That's the role of the simulator. And use it as a predictor by using the input mode with the created pattern.

If the combination of the pattern and system bet you made is not excellent, a downward graph will be made as shown in the picture on the left, and if the combination of pattern and system betting is both excellent, an upward graph will be created as in the picture on the right.

You can also set and test the system betting settings according to your standards. Of course, basic system betting combinations can be set automatically within the program. There is also a manual way to build your own system bet step by step.

You can get all probability data of baccarat. You can get infinite data from at least 100 shoes.

You can use the edited patterns and system bets as predictors in the input mode. This is because you made the pattern yourself, so you can bet with confidence. And this was verified safety through simulation. If you enter the online baccarat table in the input mode and input the same as the scoreboard, it will send a signal with a message that a pattern has been found. You can place your bets there. Of course, no prediction is made unless a pattern is found.
