Curd Rice has calcium content content.Here instead of Curd we are going to use milk as main ingredient. Seasonings are mustard,urad dal and red chilli Lets see the overview of curd rice preparations. Mash the cooked rice well. Add milk and butter to this mixture. Blend well and then add curd to this milk mixture. Finally add salt and seasoning to this rice. Now curd rice is ready to taste.

1 tbsp oil1 tbsp mustard seeds1 tbsp Urad dhal1 tbsp Ginger1 tbsp Curry leaves1 tbsp Hing1 tbsp salt5 tbsp Butter`5 tbsp Curd250 ml Milk2 `no red chilli In a pan add oil and then add mustard seeds,urad dhal,ginger and red chilli.Then add curry leaves to it and saute well.Now add hing and salt to it.Mash the cooked rice well and then add milk to it.Now add butter and mash well.Finally add curd and seasonings to it.Now it is ready to taste. You can also add carrot,pomogranate,grapes to this curd rice. This will be healthy and tasty too.

Puliyodharai rice is rich in vitamin C,iron.It is healthy when we consume it weekly once. Overview of puliyodharai preparations: In a pan dry fry,red chilli,coriander seeds,curry leaves,pepper along with hing. Grind it to powder after it is cool down. Now in  a pan add oil and then add seasonings to it. Next add red chilli,hing,ground nut,curry leaves and channa dhal to it. Saute for 3 mins and then add salt,tamarind extract to it Boil it for 2 minutes and then add the grinded mixture powder to it. Finally add jaggery to this mixture and allow it to reduce in quantity. After it reduces add rice and mix well. Finally puliyodharai is ready to serve.

5 TBSP oil1 tbsp coriander seeds1 tbsp pepper seeds2 no red chilli1 tbsp hing1/2 tbsp cumin seeds1 tbsp mustard seeds1 tbsp urad dhal1 tbsp channa dal1 tbsp ground nut1 tbsp curry leaves100 ml tamarind extract3 tbsp jaggery In a pan add coriander seeds,cumin,red chilli ,pepper seedsSaute well and grind to fine powder after cool down.In a pan add oil and then add seasonings to it.Now add channa dhal,ground nut and fry well.Finally add turmeric and hing to it.After that add tamarind extract to it.Boil well and then add jaggery and grinded powder mixture to it.Then boil well until the oil gets separated.Now add mashed rice to this.Finally it is ready to taste. Karkandu rice is sweet recipe.We are using white sugar instead of jaggery. Very simple sweet recipe. Overview of Karkandu rice recipe: Grind the karkandu to powder in  a mixer grinder. Now add water in a pan and then add this powder to it. Boil well to form a syrup consistency. After that add rice and mix well. Finally add ghee and ghee fried cashews,kismis to it. 250 grams Kalkandu150 ml Water75 grams Ghee1 tbsp Cashew1 tbsp Dry grapes In a pan add kalkandu and water to it.Boil well to form a syrup.Now add mashed rice to this syrup.Finally add ghee and ghee fried cashews and dry grapes to it.Atlast rice is ready to taste.

Sambhar is side dish in south Indian meals.So lets prepare this with rice in simple easy steps. Overview of sambhar rice preparations: In a pan add oil and seasonings to it. Add vegetables like carrot,small onion and tomato to it. If needed add more variety of vegetables to it. Now add salt,hing,turmeric powder,chilli powder and sambhar powder to it. 120 grams Rice360 ml water3 tbsp Gingely oil1 tbsp mustard1 tbsp Urad dhal1 tbsp Pepper2 tbsp Cumin/jeera1 tbsp curry leavesSalt( required) Take a pan and add 1 tbsp oil in it.First add pepper and then add cumin to it.Saute for 2 mins and then allow it to cool.Now take a pressure cooker and add water to it.Rinse the rice and then add it to cooker.Whistle for 4 times and then allow it to cool.Now grind the pepper and cumin in a mixer to powder.In the same pan,add 2 tbsp oil.Heat it and then add mustard seeds,urad dhal and curry leaves to it.Add hing to pan and then add powder mixture to it.Finally add rice to this pan and add salt.Mix well and at last add 1 tbsp of ghee if required.Now,pepper rice is ready to taste. For Spicy Kozhukattai500 grams Rice (Soaked)4 tbsp oil1 tbsp Mustard Seeds1 tbsp Urad Dhal1 tbsp Cumin Seeds1 tbsp Hing4 no Red Chilli2 tbsp Curry Leaves (Chopped)For Sweet Kozhukattai500 grams Rice (soaked)4 tbsp Ghee300 grams Jaggery1 tbsp Seasame (Optional)4 tbsp Grated Coconut For Spciy KozhukattaiFirst of all, grind the soaked rice into paste with salt.Take a pan and add oil to it.Add mustard seeds,urad dhal,hing,cumin seeds,red chilli and curry leaves to it.Fry this seasoning for 1 minutes.Now add this soaked rice paste and stir for 2 minutes.Make a small ball of this dough and steamed inside idli cooker.Finally, spicy kozhukatai is ready to taste.For Sweet KozhukattaiMake a jaggery syrup using jaggery and water.Filter the syrup to remove dirt form it.Soak the rice for 1 hour and then keep it for dry.After it is dried,grind it in mixi.Now sieve it and dry fry for 1 minute in a pan.Add this rice flour in to jaggery syrup and mix it until solid consistency.Now add ghee,grated coconut and seasame as per taste.Make a small ball of it and steamed in idli cooker.Finally,sweet kozhukattai is ready to taste. Grind the biscuits to powder in mixi. Add powdered sugar and milk powder to this biscuit powder. Now add ghee and milk to this mixture. Blend well until no lumps are formed. Add ghee to this halwa and add chopped nuts to this halwa. Finally,biscuit halwa is ready to taste.
