Brioche Bread and Butter Pudding - Easy Dessert

People often confuse Bread and Butter pudding with bread pudding, so let me clarify:  Bread pudding is more cake like and a great way to use up stale bread. Bread and Butter pudding is made with fresh slices of buttered bread and baked in a custard, when done well it should be light and custardy not stodgy and heavy because there is too much bread.

Today's (Sunday) food heaven pics and video 📸

Home off the estate, cold and wet to the skin on this ghastly wet horrible winters day, knowing I was heading home to crack open a glass or 3 of warming fine port and having a wonderful West Country rib of beef in the truck, a fantastic gift from one of my clients for a job well done 💪🙏😋

Straight in and had the beef in the oven sharpish after warming the oven, drinking a glass of port, a shower and putting my PJs on, the aroma over the next few hours as it slow roasted to med pink gawjusness was quite simply enchanting I telle, Goose and I were drooling licking our lips 🐾🐶🤠

So here she is the n all her tender flavoursome beauty, served with all the trimmings and a wonderful beef gravy made with all the meat and vegetable juices, followed by a home made bread and butter pudding with cream 😋 not m.nom nom stick a fork in me I am done, glowing like the embers of the fire 🔥 too 💪🐾🐶🤠

Gâteau façon pain-perdu

We all know how delicious pain-perdu is. It can be prepared in many ways: salty and peppery served with a salad, savory topped with maple syrup or chocolate sauce, ... it is such a versatile dish.

Today I’m mixing the well known French pain-perdu and the Anglo bread and butter pudding together.

Once more I would suggest you to make this recipe your own. I made mine today with what’s left of the cherries I found last year in my orchard and froze for later use, but you can replace the cherries by any fresh or frozen fruit you like. Strawberry, raspberry, apricot, etc... I also added chocolate chips in my recipe but you don’t have to. You can add seeds, nuts or grated coconut if you want. Also, feel free to spice up the recipe with nutmeg, cinnamon, Tonka bean, etc... 

Basically, I’m giving you a very basic recipe that can be made with whatever you’ll find in your pantry. Isn’t it fantastic?

Ingredients (for 3 servings)

- 6 slices of white bread with no crust

- 4 eggs

- 3 tbsp natural yogurt 

- 100g cherrie 

- cherry jam

- 60g sugar

- 50g chocolate chips (optional)

- Icing sugar for presentation

Method

- Spread the jam on three of the slices of bread, cover with the other three slices to make sandwiches. 

- Cut the sandwiches in half to make triangles and place into the oven dish.

- In a bowl, whisk the sugar and the eggs together.

- Add the yogurt and mix well.

- Pour the batter on the sandwiches.

- Sprinkle with cherries and chocolate chips.

- Set aside for ten minutes so the bread absorbs most of the batter.

- Bake for 25 minutes.

- Take the dish out of the oven and let it cool down for 15 minutes.

- Sprinkle with icing sugar before serving.
