Let me tell ya about this not so pretty, pretty dang delicious dinner! Simple dinner, chicken and a side. But let me tell ya, the side of Rice and Broccoli Casserole from @mrsvitale is absolutely a must make dish! I wish I had enough ingredients for it to make it for Thanksgiving dinner, it’s that good! The chicken was seasoned simply with salt, cracked black better and paprika. The casserole was so perfectly seasoned, creamy, cheesy but not overly, and the broccoli was perfectly tender. I used Arborio rice for this which was a good call because texturally it was perfect. I’m gonna leave the recipe in the comments so you can go get it and make this soon! Broccoli Rice

Just another health food trend, or a great way to get more veggies?

This week I decided to give broccoli rice a go - I love curries, but often find them to be a very heavy meal with rice. So I tried making some broccoli rice as an alternative to soak up the curry and boost my veggie intake...and it was a success!

Ingredients:

1 head of broccoli (or cauliflower)

1-2 teaspoons olive oil

Seasoning of choice (I added turmeric and a masala spice)

Method:

Grate your broccoli - including as much of the stalk as you like, and then use a paper towel or cheesecloth to press out excess moisture.

Add oil to a frying pan on medium heat. Add grated broccoli and stir in spices.

Leave on the heat until some of the edges start to brown.

Serve with dish of choice - I had mine with a curry and it was a great substitute!
