A vintage tin recipe box I found at an antique shop in Sandwich, MA this past summer. After looking up the etched seal on the bottom, I found that it was made by Ohio Art(a metal toy and lithography company that is still in business today) and this box seems to be from the 60s. Not surprising considering its style. It still has a recipe for Carottes à la Vichy cut out of a newspaper, filed behind the vegetables card. I like how they offer a way to use old carrots in place of optimal fresh ones; preventing waste seems to be a common theme in a lot of vintage 50s and 60s recipes, as well as using primarily non perishable ingredients — sometimes to the extreme, resulting in some pretty bizarre meals, but not in this case. In France, Easter classically calls for the “Gigot d’Agneau” (leg of lamb), accompanied by roasted potatoes and an assortment of seasonal vegetables (such as a Jardinière de légumes, Vichy Carrots or Haricots Verts).
But lesser known (even to most French people) is the traditional Easter Beef, a regional speciality served in the southern Massif Central of France.
In this mountain-and-plateau part of France, 80% of the land is devoted to cattle farming. So it’s no surprise that beef is at the centre of most of the region’s culinary specialties. And of all its locally raised bovines, the most renowned is probably the Fin Gras du Mézenc. Its beef is praised as a delicacy meat achieved by feeding the cows with top-quality natural hay from the local mountains. This beef is traditionally sold and enjoyed at Easter, known to be a great protein-packed feast to break the fasting period of the Lent (in French,“Le Carême”).
Once again, a little way of showing you another side of French culinary tradition… with regional individualities in the spotlight.
