Do mimics talk to people? I remember being mentioned they pretend to be less intelligent than they are. How does that affect how much they speak?
Not typically, no. They gotta keep up appearances after all! But that's fine because usually they just speak their own language.
It's a bilingual sort of deal. They can speak English (and other languages depending on where they live), but they avoid doing so to keep up the guise of being beasts.
Some people are aware they're a lot smarter than they let on, however! It depends on the mimic's character whether they give off clues of their intellect.
Edward doesn't have the heart to lie to children, so when they read to him he will go out of his way to respond to them in kind just to help them with pronouncing words or feeling good about their reading skills.
Both Glynn and Spencer are completely fine with the Fat Controller and the Duke and Duchess knowing how intelligent they are because they trust them wholeheartedly (plus it's nice having free-reign of a household full of "luxurious" objects that satisfy their various needs).
Gordon has unintentionally given away that he's smart because he cares too much about the station cats to risk leaving them without food for a night... Etc.
To date only the Flying Scotsman's been confirmed to be so bold as to actually speak to one of his human handlers. The loneliness of his status forced his hand a little, but his fireman is more than trustworthy. It helps ease the burden of being a celebrity mimic that's on the move far too much to ever really make meaningful connections, if the person you can regularly talk to is also on the move with you...
That said, there could possibly be more mimics out there that tossed the disguise completely in the presence of people they consider worthy of knowing the truth about them!

Coffee Pot
SMG3: "So, who broke it? I'm not mad.. I just wanna know." Tari: "I did, I broke it-" SMG3: "No..no, you didn't, Mario?" Mario: "Don't look at Mario! (Me) Look at S-EMM-GEE-4!" SMG4: "What??? I didn't break it." Mario: "Huh, that's weird, how did S-EMM-GEE-4 even know it was broken?" SMG4: "Because it's sitting right in front of us,...and it's broken." Mario: "Suspicious." SMG4: "No it's not-" Meggy: "If it matters, probably not.., but Saiko was the last one to use it-" Saiko: "LIAR! I don't even drink that crap!" Meggy: "Oh really? Then what were you doing by the coffee cart earlier?" Saiko: "I use the wooden stirrers to push back my cuticles, EVERYONE KNOWS THAT MEGGY" Tari: "Ok- let's not fight- I broke it, let me pay for it 3-" SMG3: "No. Who broke it?" SMG4: "...Bob has been awfully quiet" Bob: "REALLY?" SMG4: "Yeah really-" Bickering, so much bickering SMG3: "I broke it, it burned my hand, so I punched it. I pray 10 minutes from now they'll be at each others throats with with war paint on their faces and a pig head on a stick. . . Good, it was getting a little chummy around here."

writing means googling words you definitely know just to make sure you know them
and drawing means googling objects you see everyday just to see what they look like
#this post is brought to you by a daily coffee drinker who had to google what a coffeepot looked like#just becasue it was not in the same room as me

i've ripped pages worse than this, i've ripped pages better than this. my anvil head is forging weapons for the insolent, to which i don't condone. but there are swear words in my bones, and lack of filter in the coffee pot.

Entering service in 1883, TK&ET No.2 Callan was the Tramway's first purpose built locomotive. A coffeepot designed by Bertram Hatt (father to Sir Topham Derek Hatt), No.2 helped finish the line's construction beyond the first tunnel. With the railway's official opening in 1885 and the arrival of No.3, No.2 was assigned the goods work.
The No.2 would serve faithfully for 60 years, but was in poor shape by the end of World War II. Place soley on maintence trains, it would struggle on until its purchase by the Ffarquhar Quarry Company in 1951. No.2 was overhauled and entered service as the quarry's shunter. It would happliy trundle along the quarry network until 1964, when the quarry purchased their first diesel shunter. The future seemed bleak for No.2, and scrapp seemed inevitable. However for over 70 years, those who lived along the line had worked alongside No.2 and a group of them came together to form the Tidmouth, Knapford, and Elsbridge Tramway Preservation Society with the purpose of purchasing and restoring No.2. The Quarry agreed to hold the locomotive untilthe funds could be raised. July saw No.4, the last coffepot in service with the NWT, arrives to collect Callan for restoration. Four Months later, a ceremony was held were No.2 was offically handed over to the Tidmouth Rail Musuem, joining the original No.1 Glynn.
